Heat together Chilli and Cheese in a saucepan on low heat until cheese melts. Serve with Corn Chips.

½ cup chopped mixed dried fruits¼ cup mixed glace fruits2 Tbsp. Port2 (250g.) packets cream cheese½ cup grated cheddar cheese1 Tsp. Grated orange rind¾ cup poppy seeds
Combine fruits in bowl. Add Port and cover. Stand 1 to 2 hours. Beat softened cream cheese and cheddar cheese in electric mixer. Refrigerate and cover for 1 hour. Roll mixture into log. Shape about 20 cm in length. Roll in poppy seeds, cover and refrigerate for 24 hours.

Add to creamy mixture, spread on wraps. Roll up and slice into bite size.

Combine all ingredients except tortillas, mix well. Divide and spread evenly among tortillas. Roll up tightly, wrap in plastic and refrigerate several hours, this can be prepared a day ahead & refrigerated. To serve, cut each tortilla into 12 equal slices. Makes 48 appetizers.

Bruschetta Jalapeno-Cheese Dip With Chorizo Sausage1 baguette
1 can black olives, sliced1 onion, chopped fine3 garlic gloves, crushed1 large tomato, diced1 cup shredded mozza cheese1 cup mayonnaise½ cup sour cream or yogurtsalt & pepper & oregano
Slice baguette and spread on cookie sheet. Mix rest of ingredients and place 1 tablespoon on each slice. Bake at 350 degrees for 12 minutes until bubbly.

Tolerable Brussels Sprouts
Savory Potato Puffs
4 cups fresh brussels sprouts½ cup chopped onion2 Tbsp. butter1 Tbsp. flour1 Tbsp. brown sugar½ Tsp. Salt½ Tsp. Dry mustard½ cup milk1 cup sour cream1 Tbsp. Parsley
Wash, trim and cook sprouts until tender. Saute onion in butter until clear but not brown. Stir in flour, sugar, salt & mustard. Add milk and cook slowly until thickened. Blend in sour cream. Add sprouts and heat through. Sprinkle with parsley before serving.

Pour water into large saucepan until 1” deep, add potatoes, cover and bring to a boil, reduce heat to medium. Boil gently for 12-15 minutes until tender and then drain. Mash. Add egg and soup. Beat until light and smooth. Add cheese, stir. Transfer to 9x9 pan, spread evenly. Bake at 350 degrees for 45 minutes until edges are golden.

Turkey Stuffed Portabello Mushrooms8 large Portabello Mushrooms2 Tbsp. Olive Oil1 large onion, chopped2-3 garlic cloves, minced1 Tsp. Paprikapepper and salt1 Lb. Extra lean minced turkey with seasoning1 cup finely chopped dried tomatoes, divided½ cup grated Parmesan cheese4 oz. Swiss cheese slices
Remove stems from mushroom caps and finely chop the stems. Place the caps in single layer on foil lined pans, grill side up. Cook the mushrooms on hot grill
for 10-15 minutes until soft. Meanwhile, heat the oil in large skillet. Saute the onions until soft (5 min.) add the chopped stems, cook for 2 min., add garlic and paprika and cook for 1 min. Add the turkey and cook 3 minutes until no longer pink. Remove from heat. Stir in ¾ cup chopped dried tomatoes. Add the Parmesan, bit of pepper and mix until well blended. Add some salt if needed. Stuff the mushroom caps generously with filling and top with a thin slice of cheese. Return to the grill, close cover and cook 10-15 minutes until cheese has melted and mushrooms are tender. Sprinkle with remaining dried tomatoes.

Holiday Cranberry Chicken
Salmon Baked in Champagne
6 boneless skinless chicken breasts2 Tbsp. Olive Oil1 can (398ml.) whole berry Cranberry sauce½ cup Catalina salad dressing1 pkg. Onion soup mix
In large frypan or in 2 batches, brown chicken in oil until juices run clear. In bowl, mix cranberry sauce, salad dressing and onion soup mix. Arrange chicken in a large casserole dish. Pour sauce evenly over chicken to cover. Bake at 350 degrees for 30-40 minutes or until bubbly.

6 fresh Salmon steaks, 1” thicksalt and freshly ground pepper¼ cup butter, cut into small pieces1 ½ cups dry champagne½ cup whipping cream
Place steaks in a buttered, shallow baking dish. Sprinkle with salt and pepper. Dot with butter. Pour champagne over fish. Cook in pre-heated oven (350 degrees) for 20 minutes. Baste the fish frequently with pan juices. Keep a serving dish warm on the stove. When the fish is just tender, remove it carefully to the serving dish. Cover and keep hot. Pour pan juices into a small saucepan. Bring to boiling point and cook until reduced to about one half. Reduce the heat and stir in cream. Simmer until the cream is just heated through. Do not boil! Pour sauce over fish and serve immediately. Great with new potatoes and fresh green peas.

Cappuccino Shortbread
3 apples, peeled & sliced2 Tbsp. brown sugar¼ Tsp. Rosemary2 Tbsp. butter14-16 bread slices8 oz. Brie Cheese, thinly sliced2 Tbsp. melted butter3 Tbsp. sugar1 Tsp. Cinnamon2 ½ cups milk3 eggs1 Tbsp. vanilla¼ Tsp. Salt
Grease a 9x12” baking dish. Cook apples and brown sugar and Rosemary in 2 Tbsp. butter 4-5 minutes. Arrange half of the bread slices in a single layer in baking dish. Spoon apple mixture over bread. Arrange sliced Brie cheese over top. Top with remaining bread slices. Brush with melted butter. Combine sugar and cinnamon and sprinkle on top. Whisk milk and eggs, vanilla and salt and pour over bread. Cover and chill 24 hours (overnight). Bake uncovered in 375 degree oven for 45 minutes. Let stand 10 minutes before serving.

¼ cup cornstarch
Beat butter and sugar until fluffy. Add vanilla and beat. Add instant coffee.
Add flour and cornstarch beating after each addition then knead. Flatten cookies with glass bottom before baking. Bake at 325 degrees
for 15 minutes. Cool then dip into 1 cup melting chocolate.

DessertsCappuccino Glazed Java Cookies2 Tsp. Instant coffee granules (can use espresso granules)1 Tbsp. vanilla¼ Tsp. Cinnamonpinch of salt1 cup butter¾ cup packed brown sugar2 ½ cups all-purpose flour2 oz. White melted chocolate45 chocolate coffee beans
Dissolve coffee granules in vanilla, stir in cinnamon and salt. In large bowl, beat butter with sugar until fluffy. Beat in coffee mixture. Stir flour into batter in 2 additions, blending with hands if necessary. Divide in half, press into discs and wrap. Chill
for 4 hours. Let come to room temperature. Line a baking sheet with parchment paper. Between sheets of plastic wrap or wax paper, roll discs one at a time to about ¼ inch thickness. Cut into 2” shapes and place on pan. Bake in center of oven for about 12 minutes. Let cool on pans on a rack for 2 minutes. Cool. With small spoon, dab each cookie with the melted white chocolate and press the coffee bean on top.
Variation: stir ¾ tsp. Instant coffee granules with 1 Tbsp. each milk and rum until dissolved. Blend in ¾ cup icing sugar. Adjust icing to brush the glaze on the cookie. Top with the coffee beans.

Christmas Eve Mice24 double-stuffed cream-filled chocolate sandwich cookies (Oreos)1 cup semi-sweet chocolate chips2 Tsp. Shortening24 red maraschino cherries with stems, well drained24 milk chocolate kisses48 sliced almonds1 small tube green decorative icing gel1 small tube red decorative icing gel
Carefully twist cookies apart; set aside the halves with cream filling. Save plain halves for another use. In a microwave or heavy saucepan, melt chocolate chips and shortening until smooth. Holding each cherry by the stem, dip in melted chocolate, then press onto the bottom of the chocolate kiss. Place on the cream filling of cookie, with cherry stem extending beyond cookie edge. For ears, place slivered almonds between the cherry and kiss. Refrigerate until set. With green gel, pipe holly berries between leaves on the cream. With red gel, pipe holly berries between leaves and pipe eyes on each chocolate kiss. Store in an airtight container at room temperature.

Homemade Rum and Eggnog Frozen Mocha Cheesecake4 egg yolks1/3 cup sugar, plus 1 tablespoon1 pint whole milk1 cup heavy cream3 ounces bourbon1 teaspoon freshly grated nutmeg4 egg whites
DirectionsIn the bowl of a stand mixer, beat the egg yolks until they lighten in color. Gradually add the 1/3 cup sugar and continue to beat until it is completely dissolved. Add the milk, cream, bourbon and nutmeg and stir to combine.Place the egg whites in the bowl of a stand mixer and beat to soft peaks. With the mixer still running gradually add the 1 tablespoon of sugar and beat until stiff peaks form. Whisk the egg whites into the mixture. Chill and serve.

Crust: melt butter in medium saucepan over medium heat. Stir in graham crumbs, sugar and cocoa. Reserve ½ cup. Press remaining crumbs in bottom and up sides of un-greased 9” springform pan. Filling: Beat cream cheese until fluffy. Beat in condensed milk and chocolate syrup. Dissolve coffee in hot water. Add to cheese mixture. Whip cream until stiff. Fold into cheese mixture. Pour into prepared pan. Scatter reserved crumbs over top. Freeze.

Toffee Crunch Cookies
Drumstick Cake
15 graham crackers½ cup almond slices or chopped walnuts¾ cup hard Imperial margarine¾ cup packed brown sugar¼ Tsp. Almond extract1 cup imitation chocolate chips
Arrange whole graham wafers on well buttered 9x13” pan. Sprinkle with nuts. Combine butter and brown sugar in pot; boil hard for 3 minutes (no more). Stir in extract. Pour carefully over crackers. Bake at 375 degrees for 10 minutes or until bubbly all over. Sprinkle with chocolate chips. When soft, spread to frost. Cut into small squares while soft or refrigerate and break into pieces when hard.

SECOND LAYER8 oz. brick cream cheese, softened½ cup white sugar½ cup smooth peanut butter2 large eggs2 Tbsp. milk1 ½ Tsp. Vanilla1 litre frozen whipped topping (Cool Whip)
THIRD LAYER¼ cup chocolate sundae topping½ cup butterscotch sundae topping½ cup reserved chocolate wafer crumb mixture
FIRST LAYERMelt butter in medium saucepan. Stir in peanut butter. Add wafer crumbs and pecans. Mix. Reserve ½ cup crumbs for topping on 3rd layer. Press remaining crumb mixture in bottom of 9x13 inch pan.
SECOND LAYERBeat cream cheese, sugar and peanut butter together until smooth. Beat in eggs, 1 at a time. Add milk and vanilla. Mix. Fold in topping. Spread over 1st layer.
THIRD LAYERDrizzle chocolate and butterscotch toppings over second layer. Spread with the reserved ½ cup crumb mixture. Cover with plastic wrap. Freeze overnight. Let stand 10 minutes at room temperature before serving.
