Cookery School puts you at the heart of the action - creating unique dishes and experiencing all the
theatre of a Michelin-starred kitchen.
Launched just 12 months ago the school, under the watchful eyes of Head Tutor Michael Vanheste and
assistant Sonia Marsden, offers a variety of courses to suit everyone from those new to cooking, to the
enthusiastic amateur chef.
Picture yourself in the beating heart of Northcote, learning new skills whilst all around you the drama
of this outstanding kitchen plays out. Courses include entertaining, themed menus and technique.
These, together with premium master classes from Nigel Haworth, Lisa Allen and guest chefs, provide
an unequalled opportunity to add finesse to your cooking.

Michael is the head tutor of Northcote Cookery
School. A former student of Thomas Danby
College, Leeds, he has worked for many
exclusive UK establishments and honed his
talent for teaching as an inspirational tutor
at the famous Betty’s Cookery School in
Harrogate. He joined the brigade at Northcote
bringing with him a wealth of knowledge and
a passion for food which will inspire everyone
who joins him at the school.
Whatever the occasion, Northcote’s Cookery School offers endless opportunities for
everyone from the complete beginner to the experienced home chef.
Courses are limited to a maximum of eight students. Whether you are a host hoping to
impress or a couple planning the perfect dinner party, our classes are tailored to ensure you
exceed your culinary ambitions.
For that special occasion, our group bookings are a fantastic opportunity for everyone from hen parties to corporate teambuilders to have
fun and learn new skills.
Michael is a huge talent and a great teacher. He has a real understanding of food techniques and flavours and is an asset to our team here at Northcote. I know every student attending the school will be inspired by his knowledge and enthusiasm and will end the day having learned new skills whilst also having lots of fun!

FOUNDATION LEVEL
Not just for beginners in the kitchen but
also for those wanting to discover new
flavours and techniques. This type of course
introduces the fundamental skills required
to build confidence and knowledge. The
emphasis is on helping delegates understand
the ‘hows and whys’ and utilises familiar
kitchen appliances and equipment found in
most homes.
INTERMEDIATE LEVEL
Designed for adventurous home cooks who
like to entertain, these courses enhance
confidence and prowess whilst fine-tuning
skills and techniques. Delegates need to be
familiar with general cookery methods such
as baking, basic knife skills and frying but no
special aptitude is required - the course will
cover everything you need to know and may
introduce kitchen equipment you haven’t
used before.
ADVANCED LEVEL
Tailored for those wishing to cook to a
fine-dining standard, advanced courses
concentrate on intricate cookery methods
with a focus on presentation skills.
Accomplished cooks familiar with the basics
and comfortable with a fast pace will find
these classes challenging and fascinating.
Delegates will be working with professional
kitchen equipment and some experience of
basic butchery, fish filleting, sauces, baking
and pastry may be required.
The Cookery School seats eight people which enables good one to one tuition as well as group teaching, Qs and As and demonstrations. The ‘classroom’ is well equipped with the latest technology and equipment including everything you could ask for and more.

FULL DAY COURSES
• To start the day you will be welcomed into the restaurant to meet your fellow students whilst enjoying a light breakfast
• Meet Head Tutor Michael who explains the day ahead followed by an informative tour of Northcote kitchens.
• Course commences in the cookery school. Generally up to 6 dishes are demonstrated by the team with students cooking at least 4 themselves.
• Enjoy a 2-course lunch and complementary glass of wine in the Northcote restaurant before resuming your course.
• Tea and freshly baked scones served mid-afternoon, providing an opportunity to reflect on the day.
• Your day ends at approximately 4:30pm. You will depart with your Cookery School apron, course folder and all the food you have prepared in a cookery school bag.*
* On certain courses it is more suitable to eat the food on the day.

HALF DAY COURSES
Half day courses follow a similar format to the full day option with a welcome reception and tour of the kitchen with Michael before the course commences.
• Morning courses commence at 9am with a 1pm finish.
• Afternoon courses commence at 2pm with a 6pm finish.
• Under the supervision of the cookery school team there will be demonstrations and ample opportunities for you to gain first hand experience of your chosen course.
• You will depart with your Cookery School apron, course folder and all the food you have prepared.*
* On certain courses it is more suitable to eat the food on the day.

with Nigel Haworth and the Cookery School tutor, Michael Vanheste. The experience was fantastic and I learned to use techniques and ingredients I would probably not have attempted in a domestic environment.
