If you’re part of the localmusic community, it’s a giv-en you knowMeegan Hol-land. She earned a namebooking national and localperformers at the CreoleGallery in Old Town foryears before tragedy struckand owner Robert Busbypassed away in 2007, leavingthe future of the gallery inquestion.After taking some time
to mourn and gather herthoughts, Holland startedbringing performers back tothe Creole in September2009. She began slowly,but now, she is back to book-ing regular gigs and evenheads her own booking andpromotions company: SmallThings Productions.Holland’s latest show, fea-
turing the MSU Professorsof Jazz, takes place Sundayat the Creole. The remain-ing concerts in the series areFeb. 12, April 30 and Sept.30.“I can’t resist booking
bands that I respect, and mynext three concerts certain-ly involve such bands,” Hol-land says. “I can’t book as
much as I used to, but I wantto keep my hand in it.”This particular series was
sparked by a grant theband received from the ArtsCouncil of Greater Lansing.“The point of the series is
to have one of the professorscompose a piece and thenperform it publicly,” Hollandexplains. “The grant sup-ports a partnership with Pat-tengill Middle School andwith our series at Creole Gal-lery. It’s meant to exposeyoung people, especially, tothe idea that you can listen tomusic, you can play it — andyou can actually create it.”As for the community’s
response to bringing showsback to Creole, it’s over-whelmingly positive.“We’ve sold out every
show since I came back tobooking concerts in 2009,”she says. “It’s a testamentto howmuch this communi-ty supports homegrown andtouring bands, thanks to along-standing tradition nur-tured by the Ten PoundFiddle, Elderly Instruments,MSU, various music festi-vals and of course, the peo-ple who are willing to leavetheir homes at night andcome out to a concert!”When asked about the
MSU Professors of Jazz,Holland calls them “stellarplayers, brought together byleader RodneyWhitaker, a
world-renowned bassist whoalso leads the MSU JazzStudies program.”“I can’t say enough about
how this band has raisedthe bar for jazz not justhere, but around the region.Rodney has been especiallygood about taking the band’smusic to Michigan commu-nities,” she says.“The Creole is such a spe-
cial venue. Yes, it has greatacoustics, but there’s also awonderful community vibethat’s almost palpable dur-ing concerts there,” she says.“It’s not just a musician play-ing in front of people. I oftensit in the back or alongsidethe stage during concerts,and I watch how the audi-ence and the performer en-gage each other.“I love the intimacy of
small concerts, where on areally good night, everyonefeels like they’re a part ofcreating something special.”

“Have you seen our bath-rooms?”I was visiting Fool’s Gold Sa-
loon inWebberville, and wewere having a difficult time com-ing up with what makes thesmall bar on Grand River Roadreally special. By “we” I meanmyself and the bartender GwenBaughman, the daughter of own-er Carol Stowe, who has ownedFool’s Gold for 22 years.The bathrooms were her sug-
gestion. Indeed, I had been in thebathroom, and it was like no oth-er bar facility I’d ever visited. Aspacious, flowery smelling one-seater, the little room offered acupboard full of bathroom ne-cessities, a stately pig statue as-sists with the toilet paper, andthe painted walls are adornedwith smiling portraits of chil-dren of various ages.So assuming you’re cool with
someone’s kids appearing towatch you do your business, I doindeed recommend stopping inthe lovely restroom.The whole place fits the no-
table tidiness of the bathroom,
in fact. I don’t believe I’ve everseen such coordination in a barbefore.Oak furniture matches the
oak bar and oak wood paneling,framed art and well-positionedtelevisions hang from the walls.Baughman emphasized this
by being the first bartender I’veever encountered who looks likeshe came directly from Talbotsin her fashionable cowl necksweater and gold hoop earrings.I learned that there’s no enter-
tainment, there’s no really regu-lar crowd, though out-of-townersare more common than locals.Friday is the biggest night,
though they usually try to getout of there by midnight, andpeople mostly drink beer there.Labatt and Bud Light are on tap.Given the limited selection of
draft beer and the $2 specialon domestic bottles that coin-cided with my visit, I examinedthe Miller Lite “vortex bottle” I’dheard so much about. And I haveconfirmed its ridiculousness firsthand.What were we talking about?
Oh yeah, Fool’s Gold.Its breadsticks are truly de-
licious, so there’s that. Theycome with an apparently famouscheese “dip” that’s more like apaste and didn’t really strike myfancy.The fish and chicken sand-
wiches my friend and I had weregood though, so there’s that.It seems most people who vis-
it Fool’s Gold— though neitherregulars nor locals — do so fordinner. And it’s a nice place to doso, what with all that warm, tidydécor and stellar bathrooms.

me,” Mitchell said.About 45 students take part

frey Bohl credits the populari-ty of the Food Network for en-suring the culinary arts pro-gram continues to fill to ca-pacity each semester.“That program is pretty
much maxed,” Bohl said.“(Food Network) has broughtthe joys of that work area andthat career path into people’shomes so they understand itat a different level.”Mitchell’s love for food
came from his grandmothers’cooking, but his technicalskills came from a career cen-ter similar to the one wherehe now teaches. His goal isn’tjust for his students to learnknife skills, but also work oncustomer service and inter-viewing skills.Students will start serving
more meals at the staff cafeafter Thanksgiving weekend.Next year, the second yearstudents will be in charge ofrunning the cafe.“They’re going to have to
do the inventory, they’re go-ing to have to come up withthe menu, price out the menu,and oversee the first years asthey’re doing production forit,” Mitchell said. “When theywalk out they’ll be able to doentry level jobs for sure. Go-ing into college, they shouldhave a few classes underneaththeir belt.”He hoped the community
service project will also helphis students see what culinaryarts are all about.“You have a chance to
make an impact on everyone’slife that you encounter,”Mitchell said. “Somebodycould come into the restau-rant and have the worst dayof their life. You give themgood service, good conversa-tion, they leave with a full bel-ly. You just completely bright-en their day, turn it around,they walk out with a big smileon their face.”

sandwich on the day after
Thanksgiving, but here are three
ideas to spice up your extra
helpings of turkey so they won’t
feel like leftovers.
TURKEY ANDMASHEDPOTATOCROQUETTESFILLING• 2 cups minced turkey
• 1 cup mashed potatoes
• 1 tablespoon chopped parsley
• 1/4 teaspoon black pepper
• 2 tablespoons butter
• 1 clove garlic, minced
• 4 tablespoons flour
• 1/4 cup chicken broth
• 1/4 cup milk
• 1/2 teaspoon salt
COATING• 1/2 cup flour
• 2 large eggs beaten
• 1 tablespoon water
• 2 cups ground bread crumbs
PREPARATIONCombine turkey, mashed
potatoes, parsley, and black
pepper in a bowl.
Melt butter in a saucepan. Add
flour and stir until blended. Stir
in chicken broth and milk. Stir
for 2 minutes. Add salt to taste.
Combine with turkey mixture.
Refrigerate for about two hours.
Put 1/2 cup of flour in a plate.
Beat eggs in a bowl with 1
tablespoon of water.
Put finely ground bread crumbs
in another bowl.
Shape croquette mixture into 1
inch balls.
Roll in the flour to coat, then
in the egg. Coat with bread
crumbs.
Place on a foil-lined cookie sheet.
Heat oil to about 360°. Fry the
balls for about 2 minutes until
golden brown. Drain on paper
towels. Serve with cranberry
sauce.
CURRIED TURKEY SALADINGREDIENTS:• 1/4 cup mayonnaise
• 2 tablespoons chutney
• 3 to 4 teaspoons curry
powder, to taste
• 1/4 cup celery, chopped
• 1/3 cup raisins
• 1 tablespoon chopped green
onion
• 2 tablespoons chopped
pecans
• 1 cup diced turkey
PREPARATION:Combine mayonnaise, curry
powder and chutney.
Combine celery, chopped
raisins, green onion, pecans
and turkey. Stir in the
curried mayonnaise. Serve
on greens or as a sandwich
filling.
TURKEY AND SPINACH QUICHEINGREDIENTS:• 1 9-inch pie shell
• 3/4 cup chopped spinach
• 2 tablespoons chopped onion
• 1 tablespoon butter
• 3/4 cup chopped turkey
• 1/2 cup shredded Gruyere cheese
• 3 eggs
• 1 1/4 cups half-and-half
• 1 teaspoon curry powder
• 1/2 teaspoon salt
PREPARATION:Cook spinach and onion over medium low heat stirring frequently,
until tender. Spread spinach, onion, turkey and cheese in the pie
shell.
Beat eggs, half-and-half, curry powder, and salt in bowl. Pour over
turkey and spinach mixture. Bake for 15 minutes at 425 degrees.
Reduce heat to 325 degrees and continue baking for about 20
minutes.

faith have been re-minded, week afterweek, of the cock-roach-like ability ofState to just keepcoming back.Seriously.Last week, after playing three quarters
like a pack of zombies, MSU came backin the final frame to beat Purdue by four.It was a heart-stopping methodic mad-ness that turned a loss into a tenth win,and broke many a Boilermaker’s spirit inthe process.This weekend, we travel to Happy

Sure. Glad to oblige:First, it’d be great ifMSU came out anddecided to play totheir potential fromthe first snap, in-stead of after thebands play at half-time. If we get downearly in this one,PSU has the defen-sive schemes to stuffus for the rest of thegame. Score early.Second, our of-
fensive line has gotto protect KirkCousins to preventthat extremely an-noying habit of his:hurling ducks off ofhis back foot.I can’t think of an
interception he’s thrown this season thathappened when he threw it from the5-step drop. However, when Cousinsgets happy feet, the football ends up inthe hands of a guy wearing the wrongjersey.Third, exploit the youth. (This prob-
ably applies to other areas, but let’s stickwith football for now.) PSU is talented,but raw around the edges. They’re ayoung team with young leaders — weare an experienced group with testedleaders. If this game is close: look for thelatter to rise to occasion.It’s the time of year to know what
you’re thankful for, and I can say quitehonestly that I’m loving writing about awinning football program.It is a LOTmore entertaining that
writing about losses; as evidenced by mytransparent lack of Lions pieces.Enjoy the game this weekend, and
