    Dear Friends,

    For the last couple of weeks, my husband and I have noticed the needles on the

    pine trees in our neighborhood turning brown and accumulating on the ground. With a hint

    of fall in the air, weve been paying attention to the seasonal changes. The other morning

    on my drive into work, I was once again noticing the pine trees when the song, Turn!

    Turn! Turn! by The Byrds came on the radio. I couldnt help but hear the importance of

    the refrain, To everything (turn, turn, turn), there is a season (turn, turn, turn), and a time

    to every purpose under heaven. My mind wandered to all the changes in growth and di-

    rection Ubi had experienced in its years of ministry.

    I thought back to a patient encounter about 10 years ago when a woman came in

    who had never been to our clinic before and wanted to know if she could be seen right

    away. She had been diagnosed with diabetes before she moved to this country, but had not

    had insurance and could not afford healthcare. The clinic staff realized that she had been

    living for some time with diabetes, but she had not been given the proper information to

    understand her disease and the tools to maintain her condition. The staff immediately

    worked her in and treated her. They took the time not only to get her started on medication

    to regulate her blood sugar, but they also took the time to give her education and under-

    standing of her disease. They did not let her leave until they were one hundred percent

    sure that she had a basic understanding and a plan for a healthier future. They also made

    sure that part of her education included spiritual health. They discussed the importance of

    positive thinking, pointing out that worrying excessively through the changes she would

    be making was not going to improve her health. As the patients appointment came to an

    end, the staff comforted her and prayed with her. The nurse then followed up by phone

    every day for the next week to provide support. By the time of her follow up visit, her

    blood sugar was better regulated. To date, she has continued to successfully participate in

    our diabetic education self-management program. You see, even with all of the changes

    she had to make for her health, there was one constant: the love, help, and support she

    received at Ubi Caritas.

    Our health education focus is so very important for our patients. Most of them do

    not have the information tools many individuals have in todays world. They do not have

    the ability to jump on the internet and research their diagnosis, and they also, in some situ-

    ations, do not have the health literacy to understand the knowledge they are being given.

    At Ubi, one thing remains unchanged. We develop programs for our patients that provide

    information about health issues because knowledge is power! With the proper information,

    they are better able to help themselves understand their own medical needs and embrace a

    healthier lifestyle in mind, body, and spirit. We are all proud to be a part of this valuable

    ministry, and so thankful for your continued support!

    Ingredients:

    1 tablespoon olive oil

    1 lb boneless, skinless chicken breasts, cut into 1/2 cubes

    1 teaspoon kosher salt, divided

    1/2 teaspoon black pepper

    4 slices thick cut bacon, chopped

    1 medium sweet potato, peeled and cut into 1/2 cubes

    1 small onion, chopped

    2 Granny Smith apples, peeled, cored and cut into 3/4 cubes

    4 cloves garlic, minced (about 2 teaspoons)

    1. Heat the olive oil in a large, nonstick or cast iron skillet over medium high, until hot and simmering. Add the chicken, salt, and black pepper. Cook until lightly browned and cooked through, about 5 minutes. Transfer to plate lined with paper towels.

    2. Reduce skillet heat to medium low. Add the chopped bacon, and cook until crisp and brown and the fat has rendered, about 8 minutes. With a slotted spoon, transfer the bacon to a paper towel-lined plate (I simply laid another paper towel on top of the plate with the chicken, then stacked the bacon on that). Discard all but 1 1/2 tablespoons bacon fat from the pan.

    3. Increase skillet heat back to medium high. Add sweet potato, onion, and remaining 1/2 teaspoon salt. Cook, stirring oc-casionally, until crisp-tender and the onions are beginning to look translucent, about 10 minutes.

    4. Stir in the apples, garlic, and cinnamon. Cook 30 seconds, then pour in 1/2 cup of the broth. Bring to a boil and cook until evaporated, about 2 minutes. Add the reserved chicken and remaining 1/2 cup broth. Cook until heated through, about 2 minutes. Stir in reserved bacon and serve warm.

    significantly over the past 20 years, and people are living longer and better with the disease. But living longer can mean having

    other health problems longer, too. Good management over a lifetime is the key, starting with the day you're told you have dia-

    betes.

    More than 29 million people in the United States have diabetes, but 1 out of 4 dont know they have it. Most people

    with diabetes9 out of 10have type 2 diabetes. With type 2 diabetes, your body doesnt use insulin well and is unable to

    keep blood sugar at normal levels. If you have any of the following risk factors, ask your doctor if you should be tested for diabe-

    tes. The sooner you find out, the sooner you can start making healthy changes that will benefit you now and in the future.

    Risk factors include: Being overweight. Being 45 years or older. Having a parent or sibling with type 2 diabetes. Being

    physically active less than 3 times a week. Ever having gestational diabetes or giving birth to a baby that weighed more than 9

    pounds. Race and ethnicity also affect your risk. African Americans, Hispanic/Latino Americans, American Indians, Pacific Is-

    landers, and some Asian Americans are at particularly high risk for type 2 diabetes.

    NOVEMBER IS DIABETES AWARENESS MONTH

    On September 21st, Ubi Caritas held its 8th Annual Charity Date Auction at Madisons on Dowlen. The night featured 20 young professionals from the Golden Triangle. Each participant worked extremely hard to secure a unique package to be auctioned off. Madisons was full with anxious attendees waiting for their chance to bid on one of the 21 live auction packages offered. Packages this year included a 5-day Lake Tahoe stay for 10, a backyard BBQ for 30 provided by Blue Daves Barbecue, multiple Crystal Beach cabins, and even a Royal Caribbean Cruise for two with airfare! In addition to the 21 live auction packages, the numbered George Rodrigues Blue Dog silkscreen print We Are Marching Again went for a handsome $2,500.00. Our Masters of Ceremony, Shelly Vitanza and Greg Kerr along with our always wonderful Auctioneer, Scott Droddy kept the crowds attention while the event was taking place. A big thank you goes out to our presenting sponsor, the YMBL and all our major sponsors, Provost Umphrey Law Firm, Industrial Thermal Services, Trinity Industrial Services, and the Beaumont Enterprise.     Corona Chimene Over the last 8 years, the Date Auction is one of Southeast Texas most anticipated events of the year. It is the only event of its kind where it is managed, directed, volunteered, and run by young professionals from the Golden Triangle. The true winners here are the children Ubi Caritas is able to help through our Childrens Health Initiative, Health Is Hip. This educational program is designed to use fun and interactive games to help children learn about nutrition, exercise, and healthy habits. Approximately one-third of Americans ages 2 to 19 are overweight or obese. Ubis goal is to empower the youth of Southeast Texas to adopt healthy lifestyles in an attempt to reverse the increase in childhood obesity and the chronic conditions it causes. 100% of the funds raised from this years Date Auction will help hundreds and hundreds of children in our area.     (Beaumont, October 3, 2016) -- Board Chair, the Rt. Rev. C. Andrew Doyle, Bishop of Texas,

    and the Board of Directors are pleased to announce the selection of Lauren Rahe, CMPE as

    the new Executive Director of Ubi Caritas. Lauren will fill the vacancy left by the retirement of

    Ubis founding director Clark Corky Moore that took place in August. The selection was

    made after a search and selection process, during which Lauren served as Interim Executive

    Director for the organization.

    We are very pleased to announce this selection, reported Mike Peyton, president of the Ubi

    Caritas Board of Directors. Lauren will bring leadership and creativity to the organizations

    programs and a deep commitment to the legacy and future growth of Ubi Caritas.

    Lauren has over 20 years of experience in the medical and non-profit field, 15 of those as

    Medical Clinic Director and Community Health Director with Ubi Caritas. I look forward to continuing to serve the

    ministry of Ubi Caritas, remarks Lauren. I am dedicated to this organization and its mission to carry on the ministry

    of Jesus Christ through healing, teaching and acts of mercy.

    Ubi Caritas is a healing ministry of the Episcopal Church, well known by the underserved population and a strong an-

    chor non-profit in the Beaumont community. Ubi Caritas seeks to provide accessible, affordable, and accountable
