INGREDIENTS• 1 Smithfield® Steakhouse

Mushroom Marinated Fresh Pork Loin Filet

• 2 medium shallots, sliced• 2 large bell peppers, sliced• 10 white button mushrooms, sliced• Olive oil• Sea salt• 11/2 pt. grated mozzarella cheese• 1/2 cup sour cream• 1/2 cup steak sauce• 10 8-inch soft-shell flour tortillas• Salsa Fresca, for serving

Steakhouse Mushroom Pork & Pepper Quesadillas

DIRECTIONS1. Prepare all the filling ingredients first. Slice the shallots, bell peppers and

mushrooms. Remove the pork filet from packaging. First, section the filet into smaller pieces, then slice into thin slices.

2. Preheat a large frying pan over medium heat and add a bit of olive oil. Sauté the sliced pork filet in two batches to avoid overcrowding. Sauté each batch for 5 to 6 minutes, until golden brown all over.

3. Remove the pork from the pan into a large bowl and set aside. Into the same pan, add the mushrooms and season them with a pinch of salt; add more olive oil if needed. Sauté the mushrooms for a few minutes, then add the shallots and peppers. Continue to sauté for a few more minutes, until the peppers are tender.

4. To assemble the quesadillas, first spread each flour tortilla with a tablespoon of sour cream, then top with a generous amount of mozzarella cheese. Onto one half, add a generous amount of the prepared pork and pepper-mushroom mixture. Drizzle with a tablespoon of your favorite steak sauce. Fold the quesadillas in half and stack until ready to heat.

5. Heat the quesadillas in a preheated frying pan with a bit of olive oil, or on a grill pan or open-flame outdoor grill. Heat for a few minutes on each side, until the cheese is melted. Serve warm with tomato salsa, sour cream and lime wedges.

INGREDIENTS• 2 Tbsp. coconut aminos• 2 Tbsp. avocado oil• 2 Tbsp. lime juice• 2 tsp. minced garlic• 1 tsp. chili powder• 1 tsp. cumin• 1 tsp. dried oregano• 11/2 lbs. steak cut into 1/2” pieces• 6 tortillas• 1/2 red onion finely diced• 1/2 cup fresh cilantro chopped• Lime wedges for garnish• Ortega Taco Sauce

Ortega™ Steak Street Tacos

DIRECTIONS1. In a medium to large bowl, combine the coconut aminos, avocado oil, lime

juice, garlic, chili powder, cumin, and oregano. Add the steak pieces to the bowl of marinade, stir well, and cover before transferring to the fridge. Refrigerate for 1 to 3 hours.

2. Heat a large skillet to medium high heat. Use tongs or a large slotted spoon to add the steak to the pan (don’t worry if some of the marinade comes with it – this is good!). Cook in batches so that the steak has space between each piece and will caramelize instead of steaming. Cook for 2-3 minutes per side or until browned. Set aside in a clean bowl and continue to the next batch until all of the steak is cooked.

3. Warm the tortillas over a low flame (or in a skillet on medium if you have an electric stovetop) and fill with steak and top with red onion, cilantro, and fresh lime. Top with your favorite Ortega Taco Sauce. Enjoy!

split in half• ½ avocado, mashed• ½ tomato, diced• 1 Tbsp. lemon juice• Salt and pepper to taste• Cilantro, chopped to taste

DIRECTIONS1. Split English Muffin in half and toast until golden brown. Set aside.2. In small bowl, mash avocado, lemon juice, salt and pepper and add diced

tomato.3. Spread the avocado mixture onto both halves of English Muffin. Top with
