Jorg Amsler is an award winning pastry chef and FoodNetwork challenger. In his Sunday, 3D Cake carving class,he will teach you how to make your own armatures and tocarve cake to create wonderful display pieces. Histechniques are simple to follow, quick to execute, and fun tocreate. You will learn about balance and movement that willbring your creations to life. On Monday, March 31st he will present, Fruit and VegetableCarving. Create amazing 3D displays using seasonal fruitsand vegetables that will stop your customers in their tracks. Use your carvings to hold fruit salads or delicious desserts. These carvings are fascinating to see and easy to create. Using just a paring knife, you will be able to carve beautifuldesigns and sculptures. This is a beautiful art that yourcustomers will order along with their celebration cakes. They are perfect any time of year and with any celebration!

classes are from 8 A.M. through noon. On Sunday, Ruth Rickey, CMSA, will host PAINTING ONCAKES. Ruth will bring her vast knowledge as aninstructor to the Atlantic Bakery Deli Dairy Expo. Shewill show you how to transfer designs on to gumpaste. Teach you several different painting styles,watercolor, oil color, pen and ink, and cocoa butter. You will learn how to reproduce complex monogramsand invitations using her techniques. She will alsoshow you techniques on transferring these designsonto fresh cakes as well as a new technique forpainting on dark cakes. Participants will bring hometheir creations from her class. In her class on Monday, WEDDING ESSENTIALS, youwill learn how to properly do horizontal stripes; makedrapes that look like fabric, and tips for embellishingjoints. She will also teach you how to use cutters tocreate appliques that are easy to embellish with pipingto simulate wedding dress embroidery. Then you cancreate a Calla Lilly topper and bring home a smallthree tier cake. These hands on classes that are offered are alwaysquick to sell out.
