How We Make it

Superior

Deli Production - Though we refer to it as Deli Production, our ready to eat processed products fall into a number of product categories. We produce a wide variety of sauces, marinades, mustards, spreads, flavored salad dressings and seafood stuffing’s (... and ideas we haven’t even thought of yet) all under strict SQF standards.

Meat Production -Our USDA inspected facility produces custom cut products to our customers’ individual specifications. Our meat production products are produced nightly for next day delivery insuring our customers always have exactly what they need.

Seafood Production -Seafood production is the foundation our company was built on. We still cut fish by hand to insure each fish is inspected and meets our quality standards prior to processing; and then use the latest technology to finish and package. We utilize SQF standards throughout the supply chain and our trademarked Signal Case state-of-the-art packaging to insure quality and freshness.

Anyone who lives in Northern Michigan knows that the smell of boiling sap is one of the first signs of spring. The sugar maple sap starts to flow when the late winter nights are still cold and

the days are beginning to warm. That's when the sap is collected and processed to become maple syrup and maple sugar. A tapped tree normally produces up to twelve gallons of sap during a good year. It takes approximately 40 gallons of sap to make one gallon of syrup.

This document is to certify that Superior Foods Company has been and will continue to operate under both the United States Food and Drug Act (FDA) and the Hazard Analysis Critical Control Point (HACCP) guidelines, as well as mandated HACCP requirements of the Michigan Department of Agriculture (MDA) and the United States Department of Agriculture (USDA).

Superior Foods Company:

• complies with the procedures for the safe and sanitary processing of fish and fishery products, as outlined by the FDA Title 21 part 123.

• continues to conduct hazard analysis for all its seafood products, has constructed a HACCP plan where applicable, written and implemented Standard Sanitation Operating Procedure (SSOP), and operates in accordance with the FDA Title 21, part 123.

• has implemented then scientifically validated HACCP Prgrams and periodically reassesses our established HACCP and SSOP programs as per all United States Food Safety and Inspection Service (FSIS) notices and regulations.

• is inspected daily by USDA FSIS and recently went through a comprehensive Food Safety assessment conducted by the USDA. In addition, we are audited annually by and accredited third party to assure compliance with all FDA and USDA regulations.

• implements an extensive cold chain program which monitors and documents 24/7 the temperature of all production rooms, storage rooms, coolers, and freezers via a computerized temperature monitoring system. This system is monitored by a third party security and surveillance operation.

• has registered (Registration Number:18321008074) with the FDA pursuant to section 305 of the US Public Health Security and Bioterrorism Preparedness and Response Act of 2003.
