Charles Goodnight, a cattle rancher from Texas, gets

credit for inventing the chuck wagon in 1866. Before that time,

each cowboy had carried his own food. Goodnight bought an old wagon

and outfitted it to serve as a movable kitchen. Cowboys may have eaten

more nutritious food at this so-called “chuck wagon” than at modern

fast-food restaurants. Many cowboys today eat too much greasy and fried

food and not nearly enough fresh fruits and vegetables. Perhaps one day a

clever modern rancher will invent a “health wagon” to help modern

cowboys improve their diets.
