“This year Antonio and Roberta almost totally changed the style of
their bubbles: they gave up the search of smoothness and
sweetness by drastically cutting the dosage and allowing the wine
to take the spotlight.
A good example of this new phase is TRENTO DOC BRUT 2008,
well supported by a slightly acid vein that is the counterpoint of the
earlier notes of ripe fruit.
TRENTO DOC BRUT RISERVA 2005 is good, complex and spicy
but in the meanwhile austere and rigorous. Chardonnay and Pinot
Noir grapes, coming from organic vineyards, pour the mineral
nature of the land into the glass.
TRENTO DOC BRUT ROSE’ 2008 (from Pinot Noir grapes) is
larger and smoother.”
