Information

Our MMC Fit To Win Interns and Student Leaders completed the Bod Pod sessions with our

community clients and CSUN Athletes in addition to our Sports Registered Dietitian, Simona Hradil.

Student Interns were also able to help Simona maintain the fueling station within the CSUN Athletics

Department. We are continuing outreach to outside facilities and within CSUN community.

Simona coordinated cooking workshop for new incoming freshman athletes on July 21, 2017, with

30 students in attendance.

In addition, our Fit To Win MMC Interns utilize ESHA/Genesis Food Processor software to conduct

nutrient analysis of food records for diet analysis, and they also utilize the software to conduct

nutrient analysis of recipes that includes a nutrition facts label, ingredient list, nutrient analysis, and

food safety guidelines. Analyses may also be completed for recipes provided by outside food

manufactures. All interns have taken or currently taking FCS 321, which introduces them to the Food

Processor software.

Annual maintenance fee was paid for ESHA Food Processor software.

Contracts with companies: We are currently in collaboration with Rochelle Levy & Associates,

Inc., Avocado Commission completing recipe analysis and Nutricia.

From July 2017 to May 2018 we have completed 3 diet analyses and 62 recipe analyses.

MMC Interns helping the community! Our Community Educators participate at the MMC farmers

market table every Tuesday 10am-2pm disseminating general wellness information and promoting

Center services/resources. MMC in collaboration with campus dining coordinates a monthly Food

Demo at the Farmers Market. MMC also collaborates with the Institute for Health & Wellbeing, as

MMC interns lead their Walkability Wednesdays with different wellness topics. Summer 2017, we

started a collaboration with Valley Care Community Consortium and CHLA, one to two Community

Educators are sent to help assist with their projects/programs. In addition, Community Educators

participate in various community events throughout the year overseeing MMC table, providing

information on wellness and promoting MMC services.

Agenda Topic: Cooking Matters® - Grocery Tour

Grant Agenda Item 6.1

Information

The Marilyn Magaram Center received a grant from Cooking Matters® to help support

coordinating and implementing grocery store tour for low income communities.

Dietetic Interns and MMC Interns are trained in the Cooking Matters® curriculum and prepare to

conduct the tours. We are working with local grocery stores with whom we have already

developed relationships through past grocery store tour programs. All tours follow the Cooking

Matters curriculum (i.e. reading food labels, comparing unit prices, finding whole grain foods,

and identifying three ways to purchase produce), followed with a short cooking demo where

participants can take samples as a snack. In addition, we collaborate with other departments on

campus, to coordinate pop-up grocery store tours.

This collaboration draws awareness to the importance of purchasing fresh vegetables and fruit

and a greater understanding of healthier food items by the low-income families with children ages

0-5 within local communities.

Information

MMC Student Interns help engage students, teachers and parents within Anatola ES, Calahan ES,

Cantara ES, CSUN A.S. Children’s Center and CSUN Lab School in learning about being healthy

and growing their own fresh produce. MMC Student Interns educate students about growing

fruits and vegetables, the importance of eating healthy, sustainability, and other garden-related

topics.

As part of this internship, we have developed a specific collaboration with Calahan Elementary

School. This collaboration was developed in honor of Dr. Christine Smith, who worked closely

with Calahan to provide a bountiful garden program. MMC Interns provide nutrition and garden

education to students and parents at Calahan, as well as maintain and improve the existing

chicken coup.

From July 2017 to May 2018, our student leaders/Master Gardeners, Frida Endinjok, Maddie

Hoeks, Kelsey Good and our Let’s Grow Healthy Interns have been reviving gardens and

coordinating gardening classes.

In this MMC Internship, MMC Student Interns volunteer at Glendale Adventist Medical Center

(GAMC) in the Clinical Nutrition Department. Under the supervision of the Clinical Nutrition

obtained through patient visitation and screening, taking into account allergies and functional

Analysis Agenda Item 6.1

Information

Compusense is a sensory analysis software program that enables us to provide research data in

the field of food science. Students assist and coordinate with the Marilyn Magaram Center Food

Science Coordinator to create Compusense learning opportunities for food science and nutrition

students as well as be able to provide contracts to local businesses in the future.

Interns are currently helping finalize procedures and guidelines for our Compusense/sensory lab.

The MMC have setup a contract and continuing to work with Local Roots Farms and Nissin.

Local Roots is a company that has essentially designed an indoor farm. Fall 2017/Spring 2018 we

tested their Mars Mix (Spring Mix), Butterhead lettuce, Kale Trio and Gems Mix (Baby

Romaine). We will be running a FRAP (Ferric Reducing Antioxidant Power) test, Nutritional fact

panel, and possibly microbiological testing. In addition, we are collaborating with nissin

conducting sensory analysis for their cup noodles.

Agenda Item 6.1

Information

Matador Marmalade: MMC Interns are working on the ongoing product development project, Matador

Marmalade. Matador Marmalade is a student based project utilizing our on campus orange groves to create

a delicious marmalade product to be produced and sold on campus. This project includes but is not limited

to recipe development, sensory analysis, product labeling, UPC coding and marketing.

Our interns are currently working on a low sugar and high protein version of our matador marmalade. We

have received approval to sale the matador marmalade on campus, and collaborating with LACI to help

expand this project. In addition, our interns are working on a Matador Jam line. New project will be named

“Fit Jam” and consist of a variety of flavors that use locust bean gum and pectin. The project will combine

jam with foods containing functional properties. Dietetic Interns are working with business department. Dr.

Besnilian took sample marmalade to peninsula meeting.

Spicy Matador: MMC Student Interns assist and coordinate with the Marilyn Magaram Center Food

Science Coordinator with the development of Spicy Matador, a spice blend originated with herbs grown

from the CSUN Sequoia Hall garden. This project includes but is not limited to recipe development,

sensory analysis, product labeling, UPC coding and marketing.

Our interns have created a low sodium version of our Spicy Matador, and we are in collaboration with

Pacific Spice mass producing the blend. In addition, the “Spicy Matador” was selected as one of the top ten

pitches at the 3rd Annual Fast pitch competition. Hosted by the Nazarian College of Business and

Economics, the competition provided students with the opportunity to flex their entrepreneurial muscles.

"CSUN Fast Pitch is an "elevator pitch" competition held in the Fall Semester where 10 teams of CSUN

students, selected as finalists from a competitive field, have three minutes & three slides to pitch their new

venture idea to a panel of judges and audience. The Marilyn Magaram Center Food Science Interns and

CSUN’s Dietetic Interns paired up for this competition to create a brand of no sodium spice blend called

“HotStuf.” This is a delicious salt-free spice blend formulated at CSUN, created for use on all foods, for

retail distribution. We are excited to announce that “HotStuf” won audience choice and 2nd place! We are

so proud of our Dietetic Interns and Food Science Students, for their hard work and dedication!

Congratulations! “HotStuf” was also nominated and presented at the “Bullring” competition in spring 2018.

Bee A Matador: We are very excited to announce our newest product Bee a Matador, a wildflower honey

sourced from honeybee hives in California State University, Northridge’s very own Botanic Garden and

Orange Grove. Bee a Matador is a collaborative project between CSUN biology faculty (Rachel

Mackelprang) and the Marilyn Magaram Center for Food Science, Nutrition and Dietetics.

In February 2018, we extracted and bottled honey from CSUN’s bees for the very first time.

The docile Italian honeybees pose no threat to CSUN students, faculty or staff. Students have been

involved in logo design and nutrition label creation using the most current industry-standard software

program—Genesis. In the future, students will learn to evaluate likability and employ quality assurance

controls for their product through sensory analysis research using Compusense software. In addition,

students will collaborate with CSUN’s marketing department and Innovation Incubator, to develop a

business plan and to produce and market the Bee a Matador Wildflower Honey.

Agenda Topic: Women Infant & Children (WIC)

Center on Campus Agenda Item 6.4

Information

WIC is a Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) that provides

Federal grants to States for supplemental foods, health care referrals, and nutrition education for low-income

pregnant, breastfeeding, and non-breastfeeding postpartum women, and to infants and children up to age

five who are found to be at nutritional risk.

Marilyn Magaram Center has been awarded a grant from Northeast Valley Health Corporation (NEVHC) to

open a WIC Satellite Clinic on CSUN campus. The clinic is located in Santa Susanna Hall Room 104. A

NEVHC Clinic Supervisor, oversees the clinic on Thursdays. The Clinic is open to all CSUN

students/staff/faculty who are low-income, expecting a child and/or have children ages 0-5.

The CSUN WIC is a pilot, with a few challenges during the year. The satellite was not able to schedule

appointments for the CSUN WIC office since it was not a full service (approved) WIC site at this time -

there were no dedicated appointment templates. This will be discussed and based on the number of

participants we are able to reach in the upcoming year.

The next phase of the CSUN WIC has started in which the participant can now satisfy the education

requirement with a group class worksheet or single contact counseling (when feasible). The participants will

then be able to receive their food instruments (checks) via mail. Different weighing scales for the

participants (infants, children, and adults) are now available in the office. Lactating moms have access to

personal manual pumps provided by NEVHC WIC Program. With these changes, we hope to see an increase

in participation.

Fall 2017/Spring 2018 Marilyn Magaram Center Student Leaders, Student Leaders, and CSUN Dietetic

Interns have be coordinating WIC outreach efforts to increase participation.

Students and Interns have walked over posters/flyers to departments and centers on CSUN campus. In

addition, they completed over 38 WIC presentations in classrooms and have been able to reach close to 1300

students/staff/faculty. Students and interns have also coordinated WIC outreach table in front of Santa

Susana Hall on Thursdays between the hours of when WIC is open to direct participants to the clinic.

Information

Let’s Cook, Move and Grow in Schools is a program developed to increase physical activity and healthy eating

behaviors among elementary school students and their families in low income, predominantly Latino serving

schools in Los Angeles. Thank you to our funder: Kaiser Permanente Panorama City & Kaiser Woodland Hills

Community Benefit Grant Program, UCLA KP, and Clinton Foundation.

Since July 2017, the following sites have been identified and contacted. 5-week parent education classes have

been implemented at Hart Street Elementary, and CDI Early Learning Center in Fall 2017; and Calahan

Elementary, Cantara Elementary, Gault Elementary, Anatola Elementary, Cohasset Elementary, Napa

Elementary and LAPD Topanga in Spring 2018. All sites have gardens, Lets Grow Healthy Program was

implemented at Anatola Elementary, Calahan Elementary, Cantara Elementary, and we revisited Gault

Elementary to help revive their garden. Myplate Musical Program was coordinated and implemented at

Cohasset elementary and Hart Street elementary in Fall 2017; and train the trainer was coordinated at Anatola

Elementary and Hart Elementary in Spring 2018. We have also started coordinating wellness committee to help

make policy change at each site.

MyPlate Musical was a finalist for the University Economic Development Association (UEDA) Award of

Excellence! Each year, higher education institutions and organizations across North America compete for their

prestigious Awards of Excellence, which recognize outstanding, leading-edge higher education projects and

initiatives promoting economic development and engagement. Award categories included talent, innovation

and place; and criterion for judging included initiative replicability, scalability, sustainability, impact, and

originality. MyPlate Musical was chosen as a finalist in the category of talent and place; and received national

recognition!

We have been able to contract with 7 LAUSD schools and 2 community organizations. We have been

able to reach over 2,000 participants in the community.

Agenda Topic: Champions for Change Agenda Item 6.6

Information

The Marilyn Magaram Center (MMC), in collaboration with CSUN's Institute for Community Health and

Wellbeing, is excited to start implementing the Champions for Change-Healthy Communities Initiative! A

grant for $895,000 through the Los Angeles County Department of Public Health. Champions for Change is

a statewide initiative that focuses on utilizing nutrition education, physical activity engagement,

advancement of policy, systems, and environmental changes. The overall goal is to apply comprehensive

evidence-based obesity prevention strategies to achieve specific behavioral outcomes. These outcomes

include increased consumption of healthy foods, reduced consumption of sweet beverages, and increased

levels of physical activity.

The Champions for Change program is continuing to move forward in its effort to increase vegetable and

fruit availability and consumption among our SNAP-Ed eligible population in Canoga Park. Since July 1st,

we have implemented approximately 249 direct nutrition and gardening education classes with an estimated

1,900 participants. We have continued to revitalized and build edible gardens leading to an increase in the

number of growing gardens in schools and community centers. In addition, we have participated in 47 large

community events including farmers markets and school/site outreach/recruitment/indirect education events.

Our program (direct education and gardens) have reached over 17,000 people.

In addition to having an impact in the community of Canoga Park with our nutrition/gardening education,

institutional, and environmental change efforts, the Champions for Change program offers internship

opportunities to CSUN undergraduate nutrition students, CSUN/MMC dietetic graduate students, and have

provided community service opportunities for CSUN’s Bridge to the Future in-coming freshmen in Year 2.

The Marilyn Magaram Center (MMC) sponsors events and activities throughout the year that

benefit students’ professional development, in addition to providing scholarship opportunities.

Spring 2018, we sponsored 4 Dietetic Interns to attend the California WIC Association

Conference, 13 Dietetic Interns to attend the California Academy of Nutrition and Dietetics

(CAND) Annual Conference, Food Science students/staff to SCIFT dinners, and we sponsored all

13 Dietetic Interns to attend public policy day Sacramento March 2018. In addition, MMC

sponsored 21 students to attend the 2nd Annual CAND Los Angeles District Conference.

Agenda Topic: Feeding Therapy Clinic Agenda Item 6.9

Information

The Speech, Language, and Hearing Center at California State University, Northridge works to

provide the San Fernando Valley community with access to early intervention for children with

diagnoses that interfere with their speech, language, and hearing. The health care professionals at

the Speech, Language, and Hearing Center have expressed a need for Registered Dietitians to

work with their patients in order to address selective eating. Selective eating is defined as

selectivity of food that severely limits dietary intake, resulting in compromised nutrition status.

The Feeding Therapy Clinic is designed to address selective eating by providing patients with

nutrition assessment and intervention plan. In addition, the clinic provides education and tools for

families, so that they may be able to provide their children with support needed in the home to

increase nutritional intake.

We have hired an RD Consultant that has experience working in feeding clinics. We just

completed the hiring process, and she has started working with one family at the Language,

Speech and Hearing Center. RD and Speech Therapist will be working together. We currently

have two clients.

Spring 2018, we had a meeting with the CSUN Family Resource Clinic to discuss a possible

collaboration and how we can expand the feeding therapy clinic and our clientele.

Agenda Topic: Educational Theater Project/MyPlate

Musical Agenda Item 6.10

Information

The MMC and the CSUN Theater Department have joined forces and have begun collaborating

on a theater project. Programs utilizing theater, such as the Kaiser Permanente Educational

Theater Program, have shown to be beneficial for education and we hope to provide the same to

our community.

The goal of this project, as well as future projects is to enhance and promote health and wellbeing

through the medium of theater. The focus of their first collaboration is to assist in the prevention

of eating disorders in adolescence. The first workshop was held in January 2017 at Canoga Park

High School. There were 25 high school students who attended and participated in the workshop.

Our very own Dietetic Interns, Dannielle Trafficanda and Paige Handler, lead a few activities.

Unfortunately, we did not receive the grant from the National Endowment for Arts, to get funding

to conduct a robust research on our educational theater projects, which includes our MyPlate: The

New Food Guide Musical. We have some funding through Kaiser and other internal funds for this

project. For update on the MyPlate Musical, please refer to 6.5 on the consent agenda items. We

will be resubmitting for the grant in collaboration with Neighborhood Partner in Action when it

becomes awarded.
