Line a baking tray with baking paper, spread almonds evenly on it and pop it in the oven for 7-8 minutes to give them a light roasting. Combine tamari, maple syrup and salt in a bowl. Remove almonds from oven and add to the tamari mixture. Stir to ensure that all almonds are coated. Using a colander, strain the almonds to remove excess tamari mixture. Spray the baking paper with olive oil and spread coated almonds evenly. Roast for a further 10 minutes (keep an eye on them to ensure they don’t burn). Remove almonds and transfer to a clean sheet of baking paper so they don’t touch and allow to cool.
