Blue Cross & Blue Shield of Mississippi and Ridgeland Recreation & Parks will host the 28th annual Heatwave Classic Triathlon.

This year’s race will consist of a half mile swim in the Ross Bar-nett Reservoir, a 24-and-a-half mile bike ride along the scenic and historic Natchez Trace Park-way, and ending with a 10K run along Ridgeland’s heavily shaded Multi-Purpose Trail. Eight months ago, Chris Jacobs brought the beach to the metro area when he transformed the Sportsman’s Lodge on Northside Drive in Jackson to the paradise known as Islander Seafood & Oyster Bar.

Reminiscent of coastal eateries, Jacobs is proud of the transformation. White-top tables match well with

the light blue chairs and walls. A little bit of orange is thrown in the mix as well. Add some mounted marlin and “beach lighting” and the mood is set.

“I’m saving everybody four hours worth of driving to the coast,” Jacobs laughed. “This place has a very coastal feel.”

With Jimmy Buffett and Bob Marley playing in the background, patrons have plenty of options on the menu. From fresh oysters to filet mignon, Jacobs said there is nothing on the menu he can call his favorite.

“They all are,” he said. “When I started, the menu was 15 pages. I’ve narrowed it down to a front and back of all my favorite things.”

Jacobs said the lunch crowd keeps them busy, serving everything from hamburger steak to the fresh fish of the day. There are always specials, like soft shell crab with sweet chili remoulade.

At night, oysters run a plenty. Whether you like them raw or with a twist, Jacobs and company have many options to choose from — Rockefeller, Santa Fe and Bienville to name a few.

With a fresh delivery of fish and oysters every day, Jacobs has ordered from all along the Atlantic Coast up to Nova Scotia.

“The best, clearest oysters I have seen lately have been coming out of Apalachicola, Florida,” he said. “They’re cold, they’re clear, and they’re fresh. We don’t crack them until you order them.”

On Sundays, hit up their brunch, beginning at 10 a.m. It’s where the beach meets New Orleans. Then you have a chance to try their take on Eggs Sardou and Eggs Benedict. Or you can opt for the lobster omelet or spicy crawfish omelet. If that won’t fill you up, try the Islander Benny — smoked salmon on a toasted bagel with cream cheese and capers.

The po’ boys are also local favorites. Jacobs said what separates them from other eateries is they ship up french bread from Gambino’s Bakery.

“Everything is made in-house and we use the finest of ingredients,” he said. “We’re having a good time and we’re real proud of what we’re doing.”

He added, “The Islander is unique to the area. Everybody loves to go to the beach and eat at their favorite restaurant. We bring that to this area.”

You’re 18, on your own, the boss of yourself, your time and all things you. Oh, and you’ve got to get to class, make new friends, learn how to really handle money and get into the groove of college life. But beware, all these social changes can lead to physical changes – the dreaded “Freshman 15.” That weight gain that seems to slip up on you over the first semester

of two in your collegiate life. But there are ways to avoid and even stave off moving up to a bigger pair of Levis.

Registered Dieticians Amber Westbrooks of Baptist Hospital and Paul Robertson of University Medical Center gave us some simple advice to follow and things to look out for that first year of higher academic learning. Robertson put together 10 tips to fight the Freshman 15. In no particular order of importance, each one plays a role in weight management.

“Have a schedule or routine for eating,” he said. “Have a time planned out. People who don’t do that may stay up late for a test and your appetite kicks up and you may eat that fourth or fifth meal of the day.”

And remember, you do have to eat, just eat early.“Establish a habit of eating breakfast,” he said. “Breakfast is really impor-

tant for setting the tone for your metabolism. Eating breakfast within the first hour of waking up may increase your metabolism or boost it by up to 20 percent throughout the day.”

And you don’t need a full on Bacon, eggs and grits but you can supplant that with a Carnation breakfast drink or some other type of protein, accord-ing to Robertson. Another tip is how you actually set up your plate for your scheduled meals.

“Make three-fourths of your plate with grains, fruits and vegetables,” he

said. “Dining halls typically have different lines you can go through but try and pick some of those better choices. But if you have your plate set up with those better choices and if they are prepared in a healthy manner that’s going to help as far as calorie control.”

Look for fruit rather than a bread pud-ding, he suggests for a dessert. But also, take a break and see if you’re full. Your stomach and brain take a bit to communicate while eating.

“Wait about 10 to 20 minutes after a plate of food and see how you feel at that point. If you’re satisfied you’re done. If you’re not go back and get some non-starchy vegetables or a small piece of lean meat – the size of half a deck of cards. Protein will help keep you from getting hungry.”

How much you eat is key, according to Westbrooks.

“Watch the portion sizes and eat slowly. The slower you eat the less you are likely to eat,” she said. “And choose low-fat options – fat free salad dressings and mayonnaise or low-fat cheeses.”

The best way to find a starchy vegetable is to cut it open. If it’s the same color inside as out, then it’s non-starchy according to Robertson. You also need to watch out for “liquid calories.”

“That’s something people get in trouble with. Alcohol is prevalent in college and not recommended unless they are 21 but just be careful. Avoid mix drinks, they have a lot of calories,” he said.

Robertson suggests sipping slowly on one or two light beers. But also remember to limit your lattes. The milk and sugar added compounds calories so a diet soda, ice tea or a simple cup of coffee will bring the caffeine you might need without the added weight gain. And you don’t want to pick up any other “bad habits.”

“Smoking – a lot of times people are less likely to exercise if they start smoking,” Westbrooks said.

Another simple thing is to educate your-self on your snack content.

“Pick a healthy snack and watch portion control,” he said. “Look for whole grains like whole grain crackers with low-fat string cheese or a non-starchy vegetable. But a lot of folks aren’t too excited about those op-tions so I tell people to keep it to 100 to 200 calories unless they are a world class athlete.”

Also, plan ahead and don’t be compul-sive if possible. If you’re going to go out to Buffalo Wild Wings for a game or have a pizza night, plan ahead by not making poor

choices during the day.But one of the biggest things that lead to

packing on the pounds is stress. By managing your stress in college you’ll be less apt to eat empty calories and throw late-night eating binges in your dorm room.

“Stress makes people eat compulsively and it causes hormones like cortisol to be released a little bit more. The best thing is to plan ahead, stay organized and get plenty of sleep. Try to create a low stress environment,” Robertson said.

“Get plenty of sleep – at least seven to eight hours a night,” Westbrooks said. “There are plenty of studies that link lack of sleep to weight gain.”

Dorm rooms can be small and naturally you end up lying in bed reading, studying and hanging out but don’t eat there, accord-ing to Robertson.

“A lot of times you find yourself sitting there working on something and you just start eating something. It can create bad habits for later in life and I always encourage folks to not do that,” he said.

But one of the best things to do to keep that weight off – exercise. By simply walking to class and not hitching a ride can help burn off excess calories and keep your body

moving.“And if you exercise a minimum of 30

minutes four to five days a week that will re-ally help,” Robertson said. “And get involved in organizational sports. That keeps you ac-tive and helps you meet other people which is really important in college,” he said.

There are plenty of ways to gain but by eat-ing regularly during the day and not snacking late at night.

“Avoid eating while you are studying or watching TV. You consume a lot more than you would normally. Put everything on a

plate and don’t eat out of a bag so you can see the amount,” Robertson said. “And steer clear of vending machines and fast food.”

Westbrooks summed up the list of do’s and don’ts with, exercise common sense.

“A lot of it whether you’re in college or 20 years later in life, these are practical solu-tions,” she said. “Lots of water, less alcohol, good sleep, no smoking and watch your portions.”

That’s a healthy full education that will get you past your freshman year and beyond. - MC

school memory? Being on the student council and

the annual staff have been my favorite activities throughout high school. They have given me many opportunities to be involved in many areas that I would not have been able to

have if I was not a part of those associations.

Where did you decide to go to college and why?

I have chosen to attend Mississippi State University. My family has a

tradition of going there and it is a place where it is easy to get involved and to be

a part of something. Who has inspired you the most as a

student and why? My science teacher Mrs. Kathy Sheffield

has inspired me the most as a student. She moved from a registered nurse to

an educator. She was a dedicated nurse and has applied the same dedication

My favorite high school memory is probably our senior trip to NYC. We stayed for only five days, but made enough memories to last a lifetime. Everyone had a fantastic time. It is a smaller college with a close-knit feel. It was a good distance from home, but not too close and not too far away. They also have an excellent pre-med program which is what I am interested in. 1) - sT. Joseph senior marimac collins became the school’s first student to win the prestigious Lindy Callahan Scholar Athlete Schol-arship. Given by the Mississippi High School Activities Association in honor of Mr. Lindy Callahan, the award goes to the top male and female scholar athlete in each of the state’s eight districts. Collins won for Dis-trict 6. She is a National Merit finalist and the Star Student. She made a 35 on her ACT and has a 4.31 GPA. She is a state champion swimmer, soccer MVP, and a track and cross country state finalist. She is shown with Mr. and Mrs. Lindy Callahan.2) - : St. Joseph Bruin football team went undefeated, 11-0, in regular season play for the first time since 1972. The Bruins advanced to the playoffs, ending the season 12-1 after losing Nov. 9 in a close game against East Marion Eagles.3) - A group of St. Joseph students joined a delegation from the Catholic Diocese of Jackson in January on a trip to Washington to participate in March for Life -- and protest the legalization of abortion that took place 40 years ago with the Roe V. Wade U.S. Supreme Court decision.4) - St. Joseph’s theater department staged a successful three-day run on Friday, April 19, through Sunday, April 21, of Meredith Wilson’s award-winning musical “The Music Man” -- one of the most ambitious theatrical productions staged in the school’s Fine Arts theater.4) - St. Joseph seventh-grader Linda Martinez was selected as the Mis-sissippi winner of the 2012 Healthy Lunchtime Challenge contest and at-tended a kid’s State Dinner at the White House on Aug. 20, 2012, hosted by First Lady Michele Obama. Martinez participates in track and volley-ball at St. Joe and was the 2013 spelling bee winner for the school.

Bucky and Catherine with their dogs Bella and Xander.

Bucky and Catherine Bell have spent the last three years in Madison County.

The pair, both Mississippi State alums, met back in 2005. “We met through mutual friends at a New Year’s Eve par-

ty while students at Mississippi State,” Bucky said. “They thought that since we are both tall, naturally it just makes sense for tall people to be together.”

Their friends’ intuitions paid off and the couple was wed in Vicks-burg in 2010.

Bucky, 29, is currently an accountant at Armstrong Resilient Tile Plant. Catherine, 27, is an attorney with Wells, Marble & Hurst PLLC. She is also involved with the Jackson Young Lawyers Asso-ciation, offering pro-bono mediations with the Hinds County Justice Court.

It was their careers that led them to Madison County. “Job opportunities brought us to the Jackson area,” Bucky said.

“During our process of selecting a home, Madison stood out due to the big city opportunities with a small town feel.”

The couple currently resides in Locust Hill in Madison, where both serve on the HOA board.

“We have really enjoyed our neighborhood community at Locust

Hill,” Bucky said. “On our first day in our new home we had several homemade goodies hand-delivered to our doorstep. Madison is also very convenient and offers several amenities.”

The couple have no children yet, but they are parents to an English Bulldog named Bella and a Britney Spaniel mix named Xander.

They have been members of Broadmoor Baptist Church since 2011. Both Bucky and Catherine love the outdoors and said the many

sites in Madison County are great for adventuring. “We love to utilize the Natchez Trace trails, by either jogging or

biking. Whenever we get a chance we like to camp and canoe out on creeks or in local state parks. We enjoy traveling and hope to eventu-ally see all 50 states. (Bucky’s plan is by RV).”

When not enjoying the outdoor amenities, in the fall the couple travels back to their alma mater in Starkville to do a little football tail-gating.

Hobbies for Catherine include running, yoga, gardening and read-ing. Bucky is more hands-on — honing his woodworking skills or cooking in BBQ competitions.

The still-newly-married couple is building their own family tradi-tions, but one thing that comes to mind is always cooking pancakes on Christmas morning before doing anything else. - MC
