LatestKWS Kuwait holds AGM: Kokan Wel-fare Society (KWS Kuwait) conducted its annual general body meeting in Salmiya on May 5, 2016. The program started with recitation of verses from the Holy Quran.

The president Dr Abdul Razzak Rumane welcomed the members of the society. This was followed by the annual report by Dr Rahmattullah Galsulkar. He, in detail, informed the audience of the various activities the society conducted throughout the past years and in particular to the last year.

He elaborated the aims & objectives of the society and their future plans. He stressed for a common platform for the welfare of community and requested the people to support the society in its welfare works.

A question answer session was allowed wherein the members of Kokan welfare society were given chance to raise their queries or put forth any views or sugges-tions.

The old EC team was dissolved and the Election Commissioner, Mr. AbdulQadir Khot took the stage. Nomination and Election results were declared and the new executive committee for the year 2016-2017 was elected as follows:

Salim Desai, President; Mufti Hamza Kasim, Vice-President; Dr Rahmattul-lah Galsulkar, General Secretary; Ashraf

Hajwane, Joint Secretary; Aslam Thakur, Joint Secretary; Yacoub Solkar , Joint Secretary; Mohammed Shafi Alware, Treasurer; Ashfaque Solkar, Joint Treas-urer.

Hardly can a visitor of Istanbul miss the impres-sive Roumeli Hissar Castle, admiring greatness and unique beauty of such historical site.

It is one of the most magnifi cent sites and tourist attractions in Istanbul, if not in entire Turkey, located in the Sariyer district of the

city, on a hill over the European side of the Bosphorus. It literary means “the Strait-Cutter Castle.” Walls of the castle are 20-25 feet wide, while those of the lead-crowned towers are 32-35 feet.

The outer curtain walls of the fortress are

from north to south 250 meter long and from east to west varying between 50 and 125 me-ters long. Its total area is 31,250 square me-ters.

Roumeli Hissar, designed by architect Musli-hiddin, has three towers; two of them were built

to control sea traffi c on the Bosphorus Strait.Over the centuries, the fortress turned into a

prison used by the Janissaries (the elite infantry units that formed the Ottoman Sultan’s house-hold troops and bodyguards), and was also closed for a long time. (KUNA)

The fi rst time I ate fresh soybeans was, naturally enough, at a Japa-

nese restaurant. Known as edamame, the dish is a staple of Japanese restau-rant menus.

They were served as an appetizer, in their pods, steamed and sprinkled with salt. It took a little work to suck the cooked fresh soybeans out of their pods, but who cared? I was out to din-ner and in no rush. Besides they were delicious, meaty and fl avorful. They reminded me of lima beans minus the funkiness.

And, big surprise, not only are they good, they’re good for you. Of course, all legumes wear a nutritional halo, but the one radiating from soybeans is especially blinding. They boast more protein than any other legume, and they’re a great source of folate, vitamin K, calcium, iron and fi ber.

RevelationBut the idea of putting edamame on

a home cook’s menu for a weeknight meal? It never entered my mind. Then, several years after my restau-rant revelation, I noticed a recipe in

Gourmet magazine that featured fro-zen shelled edamame, the beans freed from their pods, combined with butter and buttermilk. Who knew you could

buy them already shelled? Suddenly a new world opened up.

Following the Gourmet recipe, I began boiling, steaming or mashing shelled edamame according to my mood. Here, I’ve taken them in a yet another direction, reworking my recipe for a lighter version of Mex-ican-styled refried beans by replac-ing the pinto beans with edamame. The fi nished product is wonderfully creamy smoother than the creamiest mashed potatoes because the beans are pureed instead of mashed. It was a real hit with my family.

One caveat: You want to be sure to cook the fresh soybeans until they’re soft. This advice runs counter to the directions on the back of the package, which recommends boiling the beans for a mere 5 minutes. For this recipe, that short a cooking time would leave them too fi rm.

By the way, when I refer to fresh soy-beans, I mean the frozen shelled guys. At least sometimes, of course, you’ll be able to fi nd them fresh in the pod at the

farmers’ market, and I’m sure they’re delicious. But then you’d have to shell them once you brought them home, which is pretty tedious. The great thing about frozen vegetables is that not only are they a snap to prepare, but they also taste surprisingly fresh. That’s because they’re harvested at the peak of ripe-ness, then briefl y blanched, then quickly frozen. It might seem counter-intuitive if it’s frozen, how can it be fresh? but it turns out to be a great way to lock in their goodness.

Mexican-style edamame ‘refried beans’

Serve these as a dip for tortilla chips, spooned into soft or hard tacos, or layered between quesadillas.

Start to fi nish: 40 minutes (25 minutes active)

Servings: 616-ounce bag frozen shelled

edamame3/4 cup low-sodium chicken or

vegetable broth or stock2 tablespoons vegetable oil

1/2 cup fi nely chopped yellow onion

1 teaspoon minced garlic1 teaspoon ground cumin1/2 teaspoon chili powder, pref-

erably chipotle1 to 2 tablespoons lime juiceKosher salt and ground black

pepper1/4 cup sour creamPepitas (toasted pumpkin

seeds) or toasted pine nuts, to garnish

In a medium saucepan over medium-high, bring 2 quarts of well salted water to a simmer. Add the edamame, return to a simmer and cook until soft, about 20 minutes. Drain the edamame, reserving 1/2 cup of the cooking liquid, and transfer them along with the reserved liquid to a blender or food processor. Start to blend the edamame and when they are fi nely chopped add the chicken broth and continue blending, scraping down the sides as needed, until the beans are smooth. (AP)
