WHAT IS BIRCH SAP?
Birch sap of sometimes called birch water is liquid inside trunks of birch trees. It is a very
beneficial and healthy product containing a good deal of elements required by the human organism.
Birch sap is a remedy for any ailment.

winter and spring.
From ancient times our ancestors used birch sap not only as a tasteful drink to quench thirst but as

BIRCH SAP IN MEDICINE
Birch sap is not a medication, but a natural supporting remedy, which is worth using in complex
treatment.

BIRCH SAP IN COSMETOLOGY
Hair mask with birch extract helps get rid of dandruff, strengthens the hair and gives it healthy
look. To prepare the extract you will need the following:
birch sap – 2 cups (400 ml),
liquid honey – 1 teaspoon,
salt – 1 teaspoon.
Mix all the ingredients and pour the mixture into a dark container, having added 100 ml of vodka.
The mixture should be kept in a dark place for 10 days.
When the extract is ready, apply it on your scalp and hair for 20-30 minutes and then wash the hair
using a shampoo.
Facial mask with birch, besides cleaning your skin, will help you get rid of many smaller
skinimperfections. Preparation:
birch sap- 2 tablespoons,
sour cream – 1 tablespoon,
honey – 1 teaspoon.
Mix thoroughly. Before applying the mask, it is recommended to wipe the face with vegetable oil.
Apply the mask for 10-15 minutes and rinse with clean water. The same procedure can be used for
the treatment of lichen or eczema.
Washing your face with birch sap every day has a rejuvenating effect on your facial skin
andcan help you get rid of acne.
Few people know that Princess Olga used to rejuvenate her body taking birch sap baths and was
famous for her beauty far beyond the borders of Kievan Rus’.
BIRCH SAP IN COOKING
Hlyboka-Style Shashlyk (delicious, juicy and useful!!!).
Preparation:
Meat (pork neck) – 2 kg,
Birch sap with lemon (diet) – 2 cups (400 ml),
Soda water – 1 l,
Onions – 300 gr,
Salt, black ground pepper, bay leaves
Purified sunflower or olive oil– 50 ml.
Wash the meat, cut it into fairly big pieces and soak in soda water (for up to 1 hour). After you pour
off the water, sprinkle the meat with salt and add black ground pepper. Then, add sliced onions,
pour birch sap on and mix thoroughly. After that , cover the bowl with meat with a dinner plate
turned upside down. Marinate for 6-8 hours. Add oil to the marinated meat and mix it all.
‘Special’ Birch Kvass
Heat birch sap to 35º C, add 15-20 gr. of yeast and 3 raisins per 1 liter. After that, cover the jar or
bottle tightly and leave for 1-2 weeks.
Birch Kvass ‘Tropical Storm’
Take 10 liters of birch sap and add 4 lemons, 50 gr. of yeast, 30 gr. of honey or sugar, raisins – 2-3
pieces per bottle. Pour the mixture into bottles and keep for 1-2 weeks in a dark cold place.
Vitamin shakes:
You can use birch sap to make useful and delicious shakes. Birch sap + cranberry juice. This
mixture can give you good mood, make you feel like new after a stressful working day and even
help in your career, as this shake stimulates brain activity and improves your efficiency.
Birch sap + mint leaves. This shake is efficient for indigestion, it is used for the prevention of
gastritis and to stop vomiting. The mixture improves digestion and raises appetite. It has a
stimulating and soothing effect.
The drink is offered as with Mint Extract
Birch sap + rosehip extract. In the evening, pour 1 liter of boiling water over 2 handfuls of
rosehips and leave for the night in a vacuum flask. Then mix the tincture with birch sap in equal
proportions. This drink will help you overcome spring vitamin deficiency, boost your immunity
system, improve your efficiency and revive you.

HOW IS BIRCH SAP COLLECTED?
Birch sap is collected from birch trunks in the early spring.
The exact time for tapping birch sap is difficult to determine, as it depends on weather conditions.
For example, if during March thaw birch sap has already started tapping and suddenly it became
freezing, the sap may stop tapping for some time. However, the sap starts running when the snow
melts and the buds swell, which usually happens in the middle of March. At that time birch sap
moves intensively in the trunk, people call it called birch crying. This period lasts for about 15-20
days, and the sap collected within this period of time is not only sweet, but also useful.
It’s best to choose a birch with the diameter of minimum 20 cm and a well-developed crown for
collecting the sap. A small hole is accurately drilled on the trunk 20 cm. from the ground. It’s
essential to know that the sap mainly moves in the surface layer between the bark and the pulp, so it
is not necessary to make a deep hole. A birch bark or other semicircular gutter is placed in the hole
to lead the sap. The gutter shall lead into the jar or bottle.
The best time to collect the sap is between noon and 6 p.m., when it runs mist intensively. The
number of holes you can make depends on the diameter of the tree: if 20-25 cm.– then only one; if
25-35 – two, if 35-40 – three, but if the diameter is over 40 cm – it is allowed to make four holes.
The collection of birch sap shall stop before the small sticky green leaves shoot forth. And this
usually happens a month before the appearance of full-bodied leaves, approximately in the second
half of April.
After finishing the collection of birch sap, you should tightly cover the hole with wax, cork,
plasticine or moss, so that bacteria or pests, that can be harmful for the life of the tree, could not get
into the trunk.
Birch tears should only be collected in ecologically clean forests as the tree can absorb harmful
substances and exhaust fumes.
Our company collects birch sap only from special areas, which are tested by international certifying
organizations every year (that take soil samples, check proximity to pollution sources, ecological
and sanitary condition, etc.) The areas are located close to the Banyliv-Pidhirny village (in the
Carpathians) on a 10-hectare territory with abundant coniferous forests, far from agricultural fields.

And thus, while collecting the sap, there is a chance to enjoy the cleanness of the cool mountain air,

Over several past years of Ukraine’s active living in the market economy, packaging of food and
other products have become quite a commonplace.
With this, traditional and seemingly tried, especially for juice category products, have become
aseptic packaging technologies by TetraPack.
Paper packets rushed into the use having replaced traditional as of the time glass jars. Such
packaging being lightweight is no doubt more advantageous for logistics. And is more efficient on
terms of manufacturing – it is easier to produce, and on terms of storing – it is easier to handle as
there is no danger of bring broken. It is a priority from economical point as it is much cheaper than

Glass is considered the second material after bronze to be hand made by people as early as 5000
years ago. A then-new technology of glass produced by blowing emerged in 200 B.C. At that time
glass was attributed to noblemen and the royal courts, and later became an important issue of trade.
Today, glass is widely used in almost all spheres of engineering, medicine, scientific researches and
everyday life. It is used for food packaging as well.
It has been shown in practice that the packaging standards testify to the level of a country’s
development. Thus, recent researches carried out in 12 European countries show that over 74% of
consumers prefer food and drinks to be packaged in glass containers to plastic or even cardboard or
metal ones. First of all, it is due to the ability of glass to preserve taste and smell of products intact
and fully preserve their properties keeping them safe from external factors.

friendly packaging.

way.
Today it is still more the issue, being confirmed by scientific researches, that containers and
packaging can do harm to our health through their direct contact with food and drinks. In the USA,
there have been recently published a report on cancer causes which warns that not enough
regulations are provided for chemical substances being used which may have far-going impact on
health conditions. Last year, the EU banned the use of bisphenol A (BPA) in bottles for younger
children.

representatives of international agricultural business. Representatives of the company are, in their

Considerable improvements were made in the production during introduction of food safety and
quality management system in compliance with international certification ISO 22000 (by
international certification organization DQS, Germany). Further upgrading took place for
certification by OrganicStandard that made it possible to produce organic products in compliance
with EU requirements No 8342007 and No 8892008.
RAW MATERIALS
Birch sap must be collected only in ecological pure forests because trees may absorb harmful
substances and exhaust smoke.
LLC "UKRAINIAN ECOLOGICAL GROUP" collects birch sap in specially selected areas
which are tested annually by international certifying organizations; tested and assessed are, in
particular, soils, distance from contamination sources, environmental and sanitary conditions. The
parcels, sized over 10 hectares, are situated near the village of Banyliv-Pidhirny (Carpathian region)
in the area rich in coniferous forests remote from farming lands. The place is paradise for those
loving the nature of mountains. The place is almost surrounded by hilltops of the Bukovyna
Carpathians.
When collecting sap one can fully enjoy fresh clean mountainous air, beautiful nature and
impressive landscapes of the Carpathians.
Thanks to that, birch juice produced by LLC "UKRAINIAN ECOLOGICAL GROUP" from
natural primary products taken in the Carpathian ecological surrounding has no contradictions and
can be enjoyed by everyone but for people having allergy to birch pollen.
TECHNOLOGIES
Since only natural stuff is used by LLC "UKRAINIAN ECOLOGICAL GROUP" to produce
juices based on birch sap, much preparation and attention are required for collection of the main
component.
Birch sap part in the final product makes up to 95-98% depending on part of other natural
components, such as rose hips extract, mint extract, apple, cherry or lemon juices, citric acid, sugar,
etc. As collecting of birch sap is a very seasonal process and this period cannot in any way be
lengthened by humans, special technologies must be applied.
Sap is collected from March till April. Sap flow duration and intensity depend on weather
conditions and temperature, and as soon as conditions get favourable all efforts and capacities are
forwarded to collect sap in order to provide a yearly demand within two-four weeks of collecting.
Firstly, birch sap is collected into glass containers right in the forest, then it is filtered and delivered
to be processed.The processing of sap is as follows: citric acid is added (natural antioxidant and
preserving compound letting sap to be stored during a year), sap is sterilized and cooled, bottled in
specially prepared containers and sealed. This is the way to preserve juice and is called aseptic.
It is worth mentioning that birch sap can be stored not more that 24 hours (at temperature of 0oC
+5oC) from the moment it is collected till being processed. That is why sap collected during the
night is delivered from forest to the plant in the morning and that collected in daytime is delivered
immediately during the same day.
Additionally, before being preserved, every container of the primary product coming from forests is
tested in laboratory to meet the set quality standards. Sap getting whitish or having unusual smell
means to have started fermenting. Such product and those unaccepted by the laboratory are
disposed of.
This technology allows birch sap to be bottled and blended during the whole year, with all healthful
properties being preserved in full.
It is not a breakthrough technology; it was developed during the Soviet times. It was then when
birch juice became highly popular among all people.

QUALITY CONTROL
LLC "UKRAINIAN ECOLOGICAL GROUP"guaranties that quality and safety of its products

integrated quality and food safety management system in compliance with international Standards
ISO 22000 and ISOTS 22000-2 (certification scheme FSSC 22000).
The company management system ensures quality and safety of all products all the way through
from production to the end-consumer.
The laboratory of LLC "UKRAINIAN ECOLOGICAL GROUP" regularly controls products
quality at every stage of production process from testing of soil samples where birch trees are
grown, incoming raw material, ingredients, packing material, to final products, sanitary and hygiene
condition of production site at all levels, namely physical-chemical, radiological and
microbiological.
In order to keep production appropriately sterile, the laboratory staff regularly carries out
microbiological control of equipment, machinery, tools, packaging materials and containers, clothes
and other objects.
All parameters of concentration and temperature of cleaning and disinfecting solutions, as well as
water are controlled at the time of cleaning by testing in the physical-chemical libratory.
Additionally, products quality control is periodically carried out in shop shelves because our
products must reach the consumer in the same high quality as they come from the production site.
In the laboratory there are stored samples from all produced batches till the end of their shelf life
which makes it possible to monitor products quality during quite a long time.
