LESSON 1 : INTRODUCTION TO THE FCS HYGIENE AUDIT TRAINING ONLINE COURSE The FCS hygiene audit training is designed to offer understanding and insight into the requirements of the FCS hygiene audit and to assist our clients in complying with the requirements as well as to reduce the risk of causing food poisoning. The FCS hygiene audit will help in risk prevention, managing efficiency as well as the costs in operating a kitchen. The training covers all the required cleaning and sanitising procedures, the R638 legal requirements as well as microbiological best practice. All critical and most major non conformance’s will be explained in this training as well as tips on how to comply with the requirements. We know that all the areas in and around the kitchen must be kept clean and in a good physical condition. As such not all the audit requirements meaning the minor non conformances will be covered in this training. The FCS hygiene audit templates does however cover and list each of these requirements.
