BBC Radio Lancashire Maria Felix Vas’ Lunchtime Favourites Lesley Chisnell-Helme, owns and runs "Lovette guest house" in Nelson. Maria went there for "Lunchtime favourites" on Saturday 10th Sept These are her two recipes she'd like to share with you Lesley's Cheese and onion pudding (adapted from "Catherine Kirkpatrick's 500 recipes) 8oz onions 6oz fresh bread crumbs 3 eggs 4oz grated cheese Salt/pepper 1 pint of milk Cayenne pepper Chopped parsley 1. Peel and slice onions thinly, and cook in the milk slowly until tender 2. Remove from heat, and add breadcrumbs, beaten eggs and most of the cheese. 3. season,and keep tasting till desired taste. 4. turn into a greesed ovenproof dish, sprinkle with te rest of the cheese. 5. (Next time you grill sausages or bacon, keep the dripping fat, and mix with olive oil to form a smooth paste to keep in fridge.)

1. Spread dripping// or just olive oil on a slice of bread. 2. Season with sea salt and Black pepper and a few italian mixed herbs. 3. Grill under the grill, until browned on top 4. Serve on own, or with creamed cheese spread.
