The Cloister gets its name from its first ever occupants, the Cordeliers, Franciscan friars who followed the precepts developed by Francis of Assisi in 1210. The name was given to them by Jean de Beauffort during the Seventh Crusade, due to their clothing which consisted of a large brown sheet held together by a rope (“corde”).

Before occupying the current cloister the monks most probably lived in the Les Menuts hamlet outside the town walls.

In the 14th century numerous battles between the Kings of France and the Dukes of Aquitaine brought unrest to the region. The monastery was pillaged in 1337 during clashes between the lords of Guyenne and the counts of Eu and Guines. To protect themselves against future attacks, the Cordeliers were authorised to build their chapel within the town walls in 1338. The Pope also granted them the right to build the cloister and monastery in the town. A few years later the Cordeliers undertook work to convert the chapel into a church, which is still visible today. The rest of the buildings were enclosed inside the walls.

The Cordeliers occupied the place for the four centuries leading up to the French Revolution in 1789. In this period the monastery had a church, a courtyard, a winery, a vat house, a cellar, a garden and a lodge with six rooms. The Revolution disrupted life in the cloister, and the order was banned. All 284 monasteries occupied by the Cordelier monks in France were closed down. The building became a national asset and the occupants were dispersed. It was not until 1850 that the Cordeliers order was authorised once again, but no one came to reclaim the monastery in Saint-Émilion.

The cloister was left abandoned and nature took its course. Ivy invaded the little streets and climbed all over the buildings. Several written accounts from the era mention that the place became a favourite spot for poets, romantics and drop-outs.

In the 19th century, the new owners had the idea of using the basements and underground cellars to make and mature sparkling wines in the traditional method. These wines were made under the name MM.G.MEYNOT et Compagnie. From 1892 to the present day, various owners have come and gone, each adding their own ideas and expertise in order to perpetuate tradition and manufacture sparkling wine.

The current team, run by Pauline and Stanislas Cattiau, respectively aged 25 and 27, has brought a new dynamic combining history and modernity.

ThE hISTORy OF ThE CORDELIERS FROM ThE CRUSADES TO MODERN TIMES

The CORDELIERS cloister is set in the heart of the medieval town of Saint-Émilion in the Gironde area. It is one of the town’s most emblematic and picturesque sites. A listed historic Monument included on the UNESCO World heritage list, the site also has underground cellars where sparkling wines are matured.

Its columns are monolithic, in other words cut from a single stone from the base to the capital. Hidden on the abacuses are small crests.

This vestige, steeped in history and with perfectly preserved architecture, has inspired writers and artists, including Giacomo Meyerbeer who reproduced the building at the Paris Opera in his play Robert le Diable, and Pierre Gaspard-Huit who came to film several scenes for his movie La mariée est trop belle with Brigitte Bardot.

The CORDELIERS site also has underground tunnels and cellars. They are the result of the extraction of the stone used to build the town of Saint-Emilion and certain districts of Bordeaux. Three kilometres long, the tunnels wind their way beneath Saint-Emilion and below the vineyards of various châteaux, eventually leading to cellars. They are at a depth of 20 metres, pitch-black and with a constant temperature of 12°C all year long. These are ideal conditions for the maturing and storage of LES CORDELIERS sparkling wines.

A 14Th-CENTURy CLOISTER AND SOME AMAzING UNDERGROUND TUNNELS

With its Romanesque architecture, and built using the limestone which is prevalent in the Saint-Emilion area, the CORDELIERS cloister stands next to the former chapel and the Gothic church.

After a strict selection of the most prestigious Bordeaux grape varieties, LES CORDELIERS pick the grapes by hand using small open-faced trays in the vineyards of the Entre-Deux-Mers region. They then conduct a light pressing operation (100 litres of juice per 150 kg of grapes) and vinify the wine at low temperatures, making a unique blend for each cuvée. The wines are transferred directly to bottles, into which yeast and sugar are introduced. A natural fermentation then starts during which the yeasts feed on the sugar and release carbon dioxide into the wine. The bottles mature on the lees for 12 to 24 months in the cellars, where the conditions are ideal for the formation of bubbles and for conservation. When the bottles are destined for sale, an operation known as “disgorging” is performed with the aim of extracting the dead yeast which has used up the sugar and now forms a deposit at the bottom of the bottle. The final steps in the traditional method are the “dosage” with liqueur, followed by the corking.

The white sparkling wines boast a brilliant pale yellow colour with greenish tints when young and dashes of gold when they age. They produce very fine bubbles which end up forming a string. The bouquet is reminiscent of white and yellow blossom (hawthorn, lime-tree, acacia), summer fruits (peach, apricot), and citrus (lemon, grapefruit).

The rosés have a salmon-pink colour, evocative of onion peel. Highly aromatic on the palate, they are characterised by red-fruit flavours (cherry, raspberry, strawberry) and great complexity.

They should be served at between 5° C and 7° C and are ideal as an aperitif or with fish, desserts and cheeses.

Inside the cellars the sparkling wine is made in accordance with the traditional “champenoise” method. Using all their artisanal know-how, LES CORDELIERS attach the utmost importance to respect for this long, painstaking process.

LES CORDELIERS produce and market around ten white and rosé sparkling wines, in three different ranges: Prestige, vintage, and Grand vintage. They are made with the most famous grape varieties in the Bordeaux region: Semillon, Sauvignon, Cabernet Franc and Merlot.

A guided tour of the underground tunnels and cellars of LES CORDELIERS is on offer in the summer season (without an appointment) and the low season (groups only, appointment required). This trip to the depths of Saint-Emilion combines the history of LES CORDELIERS with explanations of the traditional method for making and ageing sparkling wines. It is followed by a tasting of a glass of wine on the terrace of the cloister or in the wooded garden.

LES CORDELIERS has a winebar called the Bar-à-Bulles where visitors can buy LES CORDELIERS sparkling wines. The vintage range is available by the glass, white brut or demi-sec and rosé brut or demi-sec, for 4 € per glass.

The Vintage and Grand Vintage ranges are served at 15 € and 17 € a bottle respectively. A wide choice of soft drinks are also available (organic sparkling grape juice, fruit juice, lemonade…), as well as sweet or savoury snacks.

Visitors buy sweet and savoury items of their choice from the list on offer (bread, dried sausage, pâté, vegetable spread, cheese, macaroons, etc.) and eat them on-site, either in the cloister or in the wooded garden.

LES CORDELIERS has a function room specially dedicated to such events and a medieval table with capacity of up to 30 people. The wooded grounds and the cloister can be used for outdoor events such as fashion shows, cultural exhibitions, concerts, etc.

Note that LES CORDELIERS have a Community Manager running the website and strengthening the presence of LES CORDELIERS on the net and in social media. The brand has also decided to promote high-quality electronic music acts such as DJs from the UNDERGROOVY PRODUCTIONS label, with whom the brand has collaborated during BORDEAUX FETE LE VIN 2012. By promoting the digital world and electronic music, LES CORDELIERS are modernising their brand image whilst remaining faithful to their history and their expertise.

Other projects were recenty born : Partnership with Lacanau Pro Surfing, shooting in the convent for TV, reception of the festival Philosophia, etc. New original and artistic initiatives are planned in parallel with the development of sales outlets for the brand in Aquitaine, the rest of France and internationally.

Distinguished by its yellow tones and flashes of green, this beautiful, shimmering wine produces very small bubbles, which are both concentrated and persistent. The 2008 has a very refined nose, with very pleasant fruity aromas blessed with both delicacy and complexity. On the palate, the 2008 VinTAGE is lively and fresh, with a harmonious balance of citrus notes building to a long-lasting, refreshing finish.

With its golden yellow colour, this wine has been aged slowly over the lees. Fragrant, refined and highly complex, the 2006 VinTAGE Authentic Dry White exhales gentle hints of menthol and flint. The 2006 is well-balanced and highly expressive on the palate; fleshy and well-rounded, the pleasant mineral notes ensure a wonderfully refreshing finish.

With its salmon-pink tint, this rosé is blessed with fine, light bubbles. Prominent summer fruit aromas dominate a nose which is refined and expressive. On the palate the attack is fresh and full-bodied, building to an elegant, long finish with echoes of those summer fruit aromas.

TASTING COMMENTS :

Distinguished by its yellow tones and flashes of green, this beautiful, shimmering wine produces very small bubbles, which are both concentrated and persistent. The 2008 has a very refined nose, with very pleasant fruity aromas blessed with both delicacy and complexity. On the palate, the 2008 VinTAGE Dry White is lively and fresh, with a harmonious balance of citrus notes building to a long-lasting, refreshing finish.

With its salmon-pink tint, this rosé is blessed with fine, light bubbles. Prominent summer fruit aromas dominate a nose which is refined and expressive. On the palate the attack is fresh and full-bodied, building to an elegant, long finish with echoes of those summer fruit aromas.
