    o items that contained exactlywhat she needed.

    She was blind and mute ...[I] prayed God, give her a good

    box, Humphreys said. [She]opened it up, and everythingin her box was perect or a

    girl who could not see. Tey

    were all tactile things like uzzy

    socks, Play-Doh and noisemakers; all things that she asa blind girl could appreciate.

    Humphreys has workedwith Operation ChristmasChild since she was a childand put together boxes withher amily, and then she

    later became a spokesperson

    or the organization in high

    school. During that time, shegot the opportunity to travelto Ecuador and work with adistribution center.

    Now Humphreys appreciateshow she has come ull-circle

    and attends a university that

    considers OCC an integral part

    o the reshman curriculum.Lee University has partnered

    with OCC or the past 15years to collectively packaround 2,000 shoeboxes ullo necessities and toys orchildren in need in a packingparty at the end o each allsemester.

    placed in the hands o a child.Aer the party, shoeboxesare shipped to the OCCheadquarters in Boone, N.C.

    Lee received an email romher accounting proessor onWednesday, Nov. 11, she hadno idea that in a ew hours sheand our classmates would betraveling to New York City toassist with Hurricane Sandycleanup eorts.

    Many o aculty memberJoseph Shibus riends in StatenIsland were aected by recentHurricane Sandy. He oered

    his students a proposal: an all-expenses paid weekend trip toNew York City or 20 hours oservice work.

    Ashley Lee had only ashort time to decide to takethe opportunity or not, as thegroup le the next day.

    []he spontaneity made itthe best trip Ive ever had,Lee said. It was one o mydreams to go there [New York

    City], and I got to do that in aweekend or ree and serve.Tree other students took

    the 15-hour drive with Shibuand Ashley: Jerey Sierman,Miceaela Fry and Kevin an.

    We went in with servanthearts and helping hands and

    came out eeling connected

    to the people within thecommunity, an said.

    Lee said the group stayedwith Shibus aunt, whose housewas not aected by Sandysoods.

    On Friday, the group helpedone o Shibus riends romcollege whose home hadbeen destroyed by the storm,according to Lee. Tey cleanedhis ront yard, which was

    cluttered with the remnantso his belongings.

    For one o Saturdaysprojects, they handed outwater, cleaning supplies andsnacks in a Staten Islandneighborhood that was badlyaected by the storm.

    Aer that, the group tookdown dry wall in the houseo a widowed woman withoutood insurance, who could not

    pay to proessionally have thework done.Te amount o devastation

    on Staten Island wasunbelievable to Lee.

    group spent Sunday exploringNew York City, visiting siteslike imes Square, GroundZero, Central Park andChinatown.

    According to the BoweryMissions site, they currently

    are providing sae shelter andood to 160+ homeless anddisplaced rom HurricaneSandy.

    Lee was surprised by howmuch the victims appreciatedher groups service.

    rom the headquarters to theirnal destination.Te school has covered the

    shipping ee with studentstuition.he university made a

    commitment 15 years agothat we would pay or theshipping o every box. Its

    one o those things that theuniversity totally believes in,Vice President or StudentDevelopment Mike Hayes said.

    Hayes explained the process

    the boxes go through beorethey are distributed to thechildren.

    We collect them or abouttwo weeks Gateway students

    bring them over [to the PaulConn Student Union], andwell sort them by gender andage group, Hayes said. Tenext ew days, we have loads

    o students and sta sortingthe boxes to make sure thatinappropriate things arent inthere and to make sure theyreall quality.

    Tey are then boxed together

    and shipped to Lie Care, aregional collection centeror OCC. From Lie Care,boxes shipped to the OCCheadquarters where they are

    sorted through again to makesure they are appropriatelypacked.

    It is then determined wherethe boxes will be distributed:they are shipped bothnationally and internationally.

    Tis year Hayes said multiple

    boxes will be given to victimso superstorm Sandy in thenortheastern area o the United

    States.Humphreys explained

    that more work goes intothe distribution process than

    expected.

    She worked with a team thatputs on a Gospel presentationbeore distributing the boxes

    and conducts a six-week ollowup program that she calledSunday school on steroids.

    At the end o the sixweeks, the kids go through a

    graduation ceremony wherethey receive a Bible in theirlanguage.

    Humphreys le her publichigh school and fnished her

    education on her own inorder to intern with OCC andreturn to Ecuador. Her time

    working in the distributionstage helped her to appreciatethe organizations eorts morethan she did beore.

    For so long, we illedshoeboxes and sent themo, Humphreys said. ...Mybiggest realization about theprogram was ... really [that]the shoebox is a catalyst orgreater things, or sharing

    the gospel and setting them upto orm relationships with theLord.

    Hayes said that theshoeboxes combine service

    and evangelism, both thingsthat the university encourages.He also reported that the

    partnership between Lee andOCC has been so successulthat the organization nowencourages other schools andcorporations to ollow Leesmodel o operations.

    Tis year, Lee packed 2,905boxes, bringing the 15-year

    elecommunications majorNate Powers recently wonthe Best Short Film awardin an amateur category othe G-echnology DrivenCreativity USA 2012 ilmcontest or his short entitledRegret.

    Te flm is loosely inspiredby Isaiah 6. Its a very personal

    scripture to me, Powers said.[It] has a lot to do with my

    testimony, as I went through

    a period in my lie o livingin regret o my past, just likeIsaiah was right beore he wascleansed and called to be a

    prophet.Powers said he hoped

    viewers pull a single thought

    rom the flm: orgiving oneselor the past.

    Acceptance o your past theway it is will lead to reedomrom regret. I believe that

    God works in every situation,even the ones that seemhopeless, Powers said.

    Powers said his patience wastested during the competition,

    as he entered the competitionin July.

    Aer that? Nothing.He received no word on

    the results until he was toldin October that his short wonthe competition out o 200

    competing lms.Even though there was a

    long wait time, once I startedfnding things out, the ballrolled very quickly. I gotinto immediate contact withsome big name people, likedirector Vincent Laoret and

    cinematographer Alex Buono,Powers said.

    Powers and his flm thenjourneyed to New York Citywhere the flm was showcased

    in the Driven CreativityCompetition USA 2012Exhibit, a guest-list only eventrom Nov. 7-11.

    Powers also won aG-echnology 4B hard drive.

    M a t t h e w F i s h e r ,

    assistant proessor otelecommunications, saidhe was very pleased with the

    success o Regret, but he wasnot surprised.

    Its a gripping short flm,

    Fisher said. Te cast does a

    great job conveying the storysintensity. Along with this,

    visual and editorial rhythmshave a visceral quality thattakes hold o the audience anddoesnt let up.

    Fisher also said to expectmore rom Powers and thetelecommunications program:more lm-related courses arebeing oered and a flm societywas recently established bystudent Daniel Howat.

    As or Powers, he willcontinue to beneft rom thesuccess o Regret.

    My plan rom here is tokeep doing what Im doing,Powers said. Regret willcontinue its distribution inestivals and competitions,and I will continue to makeconnections rom it.

    He hopes to one day get hisoot into the lm industry butplans to use flm making in

    whatever job comes his way.Visual storytelling is where

    my heart and passion is, and Iwill continue to make flms nomatter what my job is, Powerssaid.

    Powers is already working

    on another short and was eagerto share a ew details about hisnext project.

    My next short flm, TeBusiness Man, is a romantic

    comedy about a proessional

    pickpocket that works ora secret department o thecorporate world, Powers said.

    He expects the short to be

    nished beore May 2013.Fisher said that Powers

    success is an example o the

    burgeoning talent amongLees visual storytellers, andhe expects more accolades orLees lmmakers.

    Its an exciting time tobe a flm enthusiast at LeeUniversity, Fisher said.

    and walk away with the mostbeautiul disaster o candy

    Te holiday season is uponus. Its time to trim trees, singcarols and partake in theseemingly endless cornucopiao unortunately atteningsweets.

    o make matters worse, wellprobably spend hours loungingon our ever-attening rearswatching Christmas movies.

    Between the excessive eatingand general laziness that comes

    with the holidays, here are aew suggestions to help youkeep that mufn top o yourwaist and in the oven where itbelongs.

    1. Go shopping. Ask anywoman who has spent threehours circling a mall carryingpresents or fve people andracing to the next big sale:shopping is exercise. A trekaround the average mall is 1/4

    to 2/3 o a mile. Add in thecardio o a good speed walkand the strength training oall those shopping bags, and atrip to the mall might do youas much good as a trip to thegym.

    2. Decorate or Christmas.

    2 boxes Jiy Cornmeal Mufn Mix -

    Combine into one pan & cook according to pkg instructions

    6 pieces stale white bread

    1 cup nely chopped celery

    1 cup nely chopped onion

    2 teaspoons natures seasons

    1 tablespoon poultry seasoning(maybe a little bit more, according to taste)

    3 eggs

    1 tablespoon o Eagle Brand sweetened condensed milk

    3 to 4 cups chicken broth

    Crumble the cooked cornbread and stale bread together in a large bowl.Stir in all other ingredients. Start with 3 cups o the chicken broth. Shouldstir easily, but shouldnt be too soupy. Add more broth as needed. Bake ina buttered (or sprayed) 13x9 pan, at 375 degrees, 45 mins to 1 hour.

    15-ounce can o pumpkin

    14-ounce can o sweetened condensed milk

    2 large eggs

    1 teaspoon ground cinnamon

    teaspoon ground ginger

    teaspoon ground nutmeg

    teaspoon salt

    9-inch unbaked pie crust (Sidenote: I you can nd a shortbread piecrust, your pie will be that much better.)

    Heat your oven to 425 degrees. Whisk the pumpkin, sweetenedcondensed milk, eggs, spices and salt in a medium-sized bowluntil smooth. Pour it into the crust, then pop it into the ovenor 15 minutes.Aer 15 minutes are up, turn down the oven to 350 degrees

    and continue to bake or 35-40 minutes or until a knie insertedabout an inch rom the edge comes out clean.Let cool.

    1 cup o heavy whipping cream

    1 teaspoon o vanilla extract

    1 tablespoon o conectioners sugar

    1 sleeve (40ish) saltine crackers

    3/4 cup brown sugar

    1 cup butter (salted)

    One 11.5 oz. package chocolate chipsPreheat the oven to 400 degrees

    Line a 10 x 15 jelly roll (cookie sheet with raised edges) with oil

    Spray with Pam, or grease VERY lightly with butter.Cover the sheet with a single layer o saltines.Bring butter and brown sugar to a boil. Boil or three minutes, stirring with a whisk.Pour over the saltines and try to spread it as evenly as possible.Place in the oven and bake or ve minutes.When you remove it, the caramel mixture will be molten and boiling; allow to coolabout three min, or until you can see the crackers distinctly, which will have shiedwhile baking. Push them back into order with a ork or knie.Sprinkle the chocolate chips over the toee and let sit or about 5 minutes to melt.Once melted spread chocolate evenly.

    **Optional: sprinkle on a topping like nuts or crushed candy canes.Let it cool some and then put in ridge or reezer to harden.

    Once hardened completely, break apart into pieces.

    10 - 12 medium size apples

    1/2 cup brown sugar (or to taste)

    1/2 cup o caramel (or to taste)

    4 cinnamon sticks

    3 tablespoons allspice

    1 tablespoon cloves

    1 whole nutmeg

    Wash apples well and quarter them (leave the skin and seeds intact).Place inside your slow cooker and ll with water until it just coversthe apples.Add in sugar, spices and caramel. Cook on low or eight - 10 hoursor on high or our - ve hours.

    Aer cooking, remove cinnamon sticks and nutmeg. Mash theapples with a potato masher until all the pulp is released.Strain liquid in a strainer over a large bowl until most o the juicehas drained. Place the pulp into a cheesecloth and squeeze over thebowl to release the remaining juices.Store in an airtight container or up to one week or reeze or later use.

    1 cups sel-rising corn meal

    1 cup onions (chopped)

    2 tablespoons bell pepper (chopped)

    1 or 2 eggs

    2 or 3 jalepeo peppers (chopped)

    1 small can cream-style corn

    1 small carton sour cream

    1 cup cheese (grated)

    2/3 cup Wesson oil

    1 small jar pimentos (chopped)

    Mix all ingredients except cheese. Pour o mixture intogreased skillet. Spread grated cheese over mixture. Pourremaining mixture and bake at 350 degrees or 1 hours oruntil done.

    1/2 cup sugar

    1 tablespoon ground cinnamon

    1 stick salted butter (soened)

    Taw dough and allow it to rise in a loa pan in a warmarea.Remove dough rom loa pan and place on a ouredrolling surace. Roll the dough into a at rectangle.

    Mix sugar and ground cinnamon together. Sprinklethe sugar/cinnamon mixture evenly over the doughrectangle. Scatter small chunks o soened butter

    randomly over the sugar/cinnamon mixture. Rollthe dough and cut into small cinnamon rolls. Placethe rolls on their side (so the cinnamon shows) in abuttered cake pan.Allow to rise again until the rollstouch each other.Bake at 375 degrees 12-15 minutes until the butter

    bubbles and the rolls begin to turn a warm brown.Remove rom the oven and ice while warm.

    Icing: (Tis is too much icing or one loa o breaddough. Icing will keep in thererigerator or a ew days.)
