DIRECTIONS: Preheat oven to 350º. Mix the sugar with the

eggs, add baking powder, the grated lemon

rind, the flour and the extra virgin olive oil.

Place the smooth mixture in a greased baking

dish and bake in the oven for about 30 minutes.

Entirely made in Tuscany, this pasta combines high quality durum wheat farmed only in the region and the freshness of spring water. With every bite, they wish to pass on our heritage of pasta making.

1 lb duck breast, skin removed, cut into 20 strips (2” long x 1/2” wide)

20 strips (2” long x 1/4” wide) of mature Pecorino Toscano

20 strips of bacon

4 small fresh sage leaves

6 oz white wine

1-2 tbsp water or chicken stock

2 tbsp Frantoio Franci Toscano Extra Virgin Olive Oil

DIRECTIONS: Combine duck and cheese and wrap the pieces

with the bacon strips and secure with toothpick.

Heat the olive oil in a large sauté pan, add the

duck and cheese morsels and roast until brown

over medium heat on all sides, carefully add in

white wine and cook until evaporated. Add the

sage, 1-2 tbsp of water or stock and cook until

absorbed. Remove toothpick before serving.

Castellana Crostini

Add a touch of Tuscany to cocktail hour with rustic crostinis from Italy. These traditional crispy crackers are made the old fashioned way with extra virgin olive

oil, sea salt and all natural ingredients. They have no preservatives or artificial flavors. Serve with cheeses, spreads, soups and salads.

1 bunch of Tuscan kale (black cabbage) coarsely chopped

1/4 head of savoy cabbage coarsely chopped

1 bunch of chard coarsely chopped

1 leek, washed well and sliced

1 onion, peeled and sliced

2 potatoes, peeled and coarsely chopped

2 carrots, peeled and coarsely chopped

2 zucchinis, coarsely chopped

2 stalks of celery, coarsely chopped

1/2 cup peas

10 oz white Sorana beans

8 oz Carmelina San Marzano Tomatoes coarsely chopped

Extra Virgin Olive Oil

Salt and pepper

7 oz Castellana Crostini

DIRECTIONS:Soak the beans for about 8 hours and cook them in two quarts of boiling water. Reserve the cooking water. Sauté the sliced onion in olive oil in a large sauté pan, add all the other cut vegetables and let them cook down for about 10 minutes, then add half of the bean water and peas. Pass the beans through a sieve and add to pan with other half of reserved bean water. Cook over low heat for about two hours. At this point add the crostinis, mix well and boil for 10 minutes. Let it rest and serve with a drizzle of extra virgin olive oil. Add salt and pepper.

Stringy Fusilli with Pecorino Toscano 1 lb Bartolini Fusilli Pasta

1 small red onion, finely sliced

8 oz fresh ripe tomatoes

5 oz fresh Pecorino Toscano cut into small 1/4” cubes 1 oz mature Pecorino Toscano, coarsely grated

2 tbsp Lucini Estate Select Extra Virgin Olive Oil Toscano

1 pinch chopped basil

1 small pinch of red pepper flakes to taste

Salt to taste

DIRECTIONS: • Boil the tomatoes for two minutes, drain them, remove the skin and cut them into thin slices. • Brown the onion in the extra virgin olive oil (over medium heat), add sliced tomatoes and cook for 5-10 minutes. • Cook the pasta in a pot of boiling salted water, drain pasta when it is tender to the bite (al dente). Reserve 1/4 cup of pasta water (you will not use of all of it). • Return cooked pasta to sautéed tomatoes and over medium heat sauté for 2 minutes; add the cubed pecorino cheese, red pepper flakes, salt, 1-2 tbsp of the pasta cooking water until the sauce adheres well to the cooked fusilli (at this point the fresh pecorino will be stringy). • Add the chopped basil and serve on a warm plate with a basil leaf on top. • Garnish with grated pecorino.

Classic Tiramisu

4 large egg yolks

3/4 cup sugar

8 oz mascarpone cheese

1/2 cup heavy cream, chilled

1 1/2 cups brewed espresso, cooled to room temperature

3 tbsp Marsala wine

20 Real Torino Lady Fingers

2 tbsp unsweetened cocoa powder

DIRECTIONS: • Beat together yolks and sugar in a large bowl with an electric mixer at medium speed until thick and pale, about 2 minutes. • Beat in the mascarpone until just combined. • Beat heavy cream in another bowl with whisk attachment until it just holds soft peaks. • Fold cream into the mascarpone mixture gently but thoroughly. • Stir together coffee and Marsala in a shallow bowl. • Dip 1 lady finger in coffee mixture, soaking it about 3 seconds on each side and transfer to an 8-inch glass baking dish. • Repeat with 9 more lady fingers and arrange in bottom of dish, trimming as needed to fit snugly. • Spread half of mascarpone mixture evenly over lady fingers. • Make another layer in same manner with remaining lady fingers and mascarpone mixture. • Chill tiramisu, covered, at least 6 hours. • Just before serving, sprinkle with the cocoa powder.
