Okay, we’re the first to admit that the heady 1 - 2 of “crass commercialization” and “cycnicism” has left poor ole Valentines Day rather battered and bruised as holidays go. But that said, if you can mentally Gravol yourself past all the syrupy-Greeting-Card false sentiment, Valentines remains,at its heart, one of the best ideas we’ve all ever had. A day devouted to love...to the power of change that love can bring. And since nothing lubricates love (poor or apt choice of words...your call), like some good food here’s what on our Valentines menu this year, courtesy of JUNK co-owner and kitchen doyenne,Sean Wiltshire...

Asparagus:1 lb. asparagus1 tbsp olive oil1 tbsp butter2 cloves garlic mincedSalt and pepper

While the asparagus Directions are first, I would cook the Risotto firstThe other key is to have the stock heating on a back burner with a cover on it. For this recipe I use a whole box of broth and maybe a splash more.

Asparagus:Cut off the asparagus tops and reserve. Chop the stems into pieces, discarding thewoody bits about 1⁄4 of an inch at the bottom. (If the stems are really thick and tough looking, peel them first.) Heat the oil and butter in a sauté pan. Add the stem pieces and cook five minutes. Add the garlic and the asparagus tips. Pour over 1/4 cup broth (flavor based on what you are serving it with, season with salt and pepper, and cook until tender, 5 to 10 minutes, depending on the asparagus. (If you like, you can add a sprig of rosemary to the dish with the garlic and tips, then remove it at the end).

Risotto:Bring the stock to a simmer and set aside. Heat 2 tablespoons of the butter in a saucepan and cook the onion and shallot until soft, stirring with a wooden spoon. Add the rice and stir until translucent, about four minutes. Stir in the wine and reduce until almost dry. Add a ladle of stock and cook, stirring, until it disappears. Continue a ladle at a time, until the rice is tender and creamy, about half an hour.

Remove from the heat and stir through the asparagus, remaining tablespoon of butter, lemon zest, and half the cheese. Taste and adjust the seasoning. Top with remaining cheese.

In terms of drinks, its Valentines so only one thing will do...Champagne. And while many things in life have an acceptable range of quality, champagne ain’t one of ‘em. There is good champagne, and there is bad champagne, with precious little in between. That said, no need to break the bank...justcheck out champagne’s Italian cousin, Proseco which has perfectly awesome $25-35 versions. Pick upa bottle or two, sip some, make some bubbly cocktails and feel the love.

Risotto1 L chicken stock3 tbsp butter1 x little onion, minced1 x shallot, minced (optional but makes a difference)1 cup best Arborio rice3/4 cup dry white wine (or whatever you have in the fridge)Zest of one lemon1/2 cup grated Parmesan cheese (don’t be cheap.. get the good stuff.)
