Unfortunately, the weather was not so supportive and it rained for much of the first day. We were grateful for our waterproof ponchos that Kathy managed to locate at the Dollar Store. Along with the volunteers, the mile signs definitely helped with our motivation. We were really motivated on passing the last sign of the day even though it was at the bottom of a really big hill that we had to climb in order to reach the base camp. After eating and sleeping we started the second day in Chevy Chase, Maryland and were even more motivated than the first. We knew we just had to make it 14 miles to end our journey at Nationals Stadium in South West D.C. Pow Wow

On the

journey. It was dark, cold and drizzly

but the atmosphere was positive and

people seemed to be in good spirits.

After so much training and

fundraising we were excited and

motivated by the great warm up

session that got all of our muscles

stretched and ready to go.

The walk took

us throughout the

streets of Washington

D.C. from South West

Cooking Corner

Ingredients:

1/2 cup chopped pecans

1 tablespoon butter

1 1/2 cups half and half cream

1 cup packed brown sugar

2 eggs, lightly beaten

1/2 cup heavy whipping cream

1 teaspoon vanilla extract

Directions:

1. In a small skillet, toast pecans in butter

for 5-6 minuets or until lightly browned.

Cool

2. In a heavy sauce pan, heat half and half

to 175 degrees, stir in the brown sugar

until dissolved. Whisk a small amount of

the cream mixture into the egg, return all

to the pan, whisking constantly. Cook

over low heal until mixture reaches at

least 160 degrees and coats the back of a

metal spoon.

3. Remove from heat and cool quickly by

placing pan in a ice bath, stir for 2

minutes. Stir in the whipping cream and

vanilla. Cover the surface with plastic

wrap and refrigerate for several hours or

overnight.

4. Fill cylinder with cream

mixture and add the

toasted pecans. Follow

the manufacture’s

directions for freezing.

Allow to firm up before

serving.

Butter Pecan Ice Cream

Ingredients:

1 small seedless watermelon, sliced 1/2

-inch thick into 1/4 triangles

1 tablespoon olive oil for brushing

1 lemon, juiced and zested

4 fresh basil leaves, torn

4 fresh mint leaves, torn

1/2 cup (about 1 ounce) Pecorino

Romano or parmesan cheese, grated

finely

Directions:

1. Preheat grill or grill pan (for about 5

minutes) over medium-high heat until

very hot.

2. Brush watermelon slices with olive oil.

Grill watermelon for about 2-3

minutes per side, or until grill marks

appear.

3. Remove from grill, cool slightly. Cut off

rind and chop into chunks.

4. Add watermelon to serving bowl and

toss with lemon juice, lemon zest,

basil, mint, and cheese. Serve

immediately.

This June 14 Americans will celebrate the American Flag, just as many before

have. People take this one day to ponder the meaning of the flag, it’s place in history and

everything that it stands for. Many people recited the Pledge of Allegiance many times

before fully understanding it’s content and now have a greater respect for the flag and the

traditions surrounding it.

Flying “old glory” is a daily tradition at public buildings and many private

residences. Here at Powhatan we display a flag in the lobby and fly the colors at the main

entrance, weather permitting. The Flag code, which formalizes and unifies the

traditional ways in which we give respect to the flag is a good resource for flying the flag

in an appropriate manner. The song “Grand old Flag” says it best, “and forever in peace

may you wave”.

bed), etc.

staff members directly involved in your

4. You should be granted privacy when going

to the bathroom and in other activities of

personal hygiene. If you need assistance, the

staff should respect your need for privacy.

We Did It (Contd)

We made the decision that we

were going to reach our destination in

less than four hours. Luckily the rain

had stopped and the sun started to

shine even though the day

started out in the 40s and unseasonably

cold for May. We made it to the

Nationals Stadium by 11:00 am.

We stayed until all of the participants

made it to the stadium and this was followed

by a closing ceremony which was such a

memorable and emotional experience

for all of us. Meeting women who are

in the middle of chemotherapy

treatment and yet managed to

complete the walk was a humbling

experience to say the least.

As many of the Powhatan residents,

staff, family members and friends have, not

only followed our journey as we trained for the

Avon 39 walk, but helped with our fundraising

efforts along the way. We are so grateful and

thank all of those who helped make this

journey such a success. The Washington D.C.

walk raised four million dollars which is an

amazing amount of money and will really

make a difference. Each person may have

walked to honor different individuals but

ultimately we all walked to make a difference

to the breast cancer cause!!

Medical Minute: Prostate Health One of the most common health

concerns of men over the age of 65 is

prostate enlargement. Benign prostatic

hyperplasia, also known as BPH is a

condition in which the prostate gland is

enlarged but not cancerous. BPH affects

about 50% of men between the age of 51

and 60 and 90% of men older than 80.

Signs and symptoms of BPH are

usually the result of a blockage in the

flow of urine from the urethra or a

bladder that is overworked from trying

to pass urine through the blockage.

Urinary frequency, more than eight

times per day

Urinary urgency, the inability to

delay urination

Trouble starting, a weak or

intermittent stream

Nocturia, waking up to urinate

Acute urinary retention, the inability to

pass any urine.

The diagnosis of BPH is made based on

signs and symptoms, physical exam, digital

rectal exam, as well as diagnostic studies

including urinalysis, PSA, Cystoscopy,

Ultrasound and biopsy.

Treatment depends on the severity of

symptoms and the potential for complications.

The goal of treatment is to avoid kidney and

bladder damage. Lifestyle changes and

medications are the least invasive treatments.

Although talking with your doctor about

such sensitive issues can be uncomfortable,

early detection and treatment are essential to

successful outcomes and a more enjoyable, less

stressful life.

Father’s Day is a celebration honoring

fathers and celebrating fatherhood, paternal

bonds, and the influence of fathers in society.

The feast day of St Joseph has been

celebrated since the middle ages in Catholic

Europe on March 19 and by the Coptic Church

on July 20 since the fifth century.

Father’s Day has been widely celebrated

in this country starting in 1966 when President

Johnson issued the first presidential

proclamation honoring fathers and designating

the third Sunday in June as Father’s Day. Six

years later, the day was made a permanent

national holiday when President Nixon signed

it into law in 1972.

Today it’s a time to come home for a visit,

if you don’t live near your father or bonus

father.

Celebrate with cook-outs and lawn

games and let Dad be the King of the remote.

Retailers are now treating the day as equal to

Mother’s Day with masculine themed greeting

cards and putting electronics and tools on sale.

Also sporting events coincide with Father’s Day

weekend to give Dad an excuse to sit and do

nothing on his special day.

someone special to be a dad”. Thank you to all

the men who loved us, took care of and

supported us through our formative years and

beyond.

Bring on Summer

As usual, everyone has an opinion

about the weather, but rain or shine it’s

the time of year to get away and relax.

As we plan for our vacations and even

our staycations, please be safe and

Aphasia Awareness Month are available to evaluate and treat all

forms of language impairment as well

as swallowing issues.

What can you do as a loved one or

caregiver, here are some pointers:

Use simple, short, uncomplicated

sentences.

Repeat instructions or directions and

ask reflective questions.

Keep distractions to a minimum.

Direct conversation to favorite

themes and topics.

Don’t correct their speech, accept

simpler answers.

Be patient, provide processing time

for the resident to reply.

Aphasia is an impairment of

language, affecting the production or

comprehension of speech and the

ability to read or write. Aphasia is

always due to injury to the brain-most

commonly from a stroke, particularly

in older individuals. But brain injuries

resulting in aphasia may also arise

from head trauma, from brain tumors,

or from infections.

It is the job of the professional to

determine the amount of function

available in each of the channels for

the comprehension of language, and to

assess the possibility that treatment

might enhance the use of the channels

that are available.

Here at Powhatan, we have a

skilled team of therapists including a

Speech Language Pathologist. They
