Dear Members, I hope you are having an enjoyable summer. The Club has been very busy with a variety of activities for the whole family. Memorial Day weekend got us off to a great start. On Sunday afternoon, The House and Pool Committee hosted poolside music by Late Night Delivery, and members enjoyed a complimentary keg of beer. On Monday, we had our traditional Memorial Day Bar-B-Que along with a DJ and pool games. We had a great turnout for our Fathers’ Day Brunch, the Sunday evening dinner and poolside menus are proving to be quite popular, and summer camps, golf and tennis clinics, and swim team are keeping the kids happy and busy. We also had 9 teams compete in a Parent/Child golf tournament on June 18th, and the USGA qualifying events we hosted in June were well received by the players. They were all very appreciative of the membership and the Club for allowing them to use our golf course. For our members planning on traveling this summer, I would like to remind you of the Club’s participation with Boxgroove.com, a private club reciprocity network. Gainesville Country Club members have already been enrolled at no cost to you as a member. You only need to activate your membership to begin enjoying access to other clubs in Boxgroove’s network. May was a very encouraging month for membership recruitment. I want to thank all of the members who supplied us with referrals and The Membership Committee for creating some new and attractive categories. As we have mentioned in the past, the best source of new members is existing member referrals, and the best reason for being a member of Gainesville Country Club is the friendships formed. Myths Revealed
Myth #1: Most of the heat in hot peppers is in the seeds. Nope. Most of the capsaicin (the compound that gives Chile
peppers their kick) rests in the white flesh, referred to as the veins or ribs. The seeds have little or no capsaicin, but they
taste hot because capsaicin is released and dispersed onto the seeds when the pepper is cut open.
Myth #2: Most of the alcohol used in cooking is burned off when it is brought to a boil. Not true. You would
actually need to simmer your alcohol-imbibed concoction for a number of hours to approach complete vaporization of
the alcohol. For example, ten minutes of simmering will only eliminate about half of the alcohol.
Myth #3: Searing meat helps seal in its juices. Negative. Searing meat does nothing to the moisture level of meat. The
point of searing meat is to caramelize the exterior intensifying the flavor through a series of complex chemical reactions.
Myth #4: Marinades tenderize meat. Ok, there’s a kernel of truth here, but most of this concept is bogus. A marinade
will only have a tenderizing effect if it contains an acid (which most do), but even then the effect is limited. The acid in a
marinade will break down the surface proteins on a piece of meat to some degree. However, even with the extended
resting time, the penetration of the marinade is not that deep. In fact, marinades only infiltrate 3/16 of an inch beneath
the food’s surface! Nevertheless, because there is some degree of tenderizing, marinades are preferred for tougher meats.
Myth #5: Salting beans at the beginning of cooking makes them tough. Where do people get this stuff? Totally false.
In fact, you should salt your beans, and most other foods, at the beginning of the cooking process. Food that is seasoned
prior to or at the beginning of cooking will taste better than salting it at the end. By salting early, it will infiltrate the food
and commingle with the other flavoring elements more thoroughly.
Myth #6: You shouldn’t salt meat before cooking it. This is so far from the truth that you would need the Hubble
telescope to find reality. Taste tests by reputable culinary organizations have demonstrated that meat salted prior to
cooking tastes better than meat salted afterward. Every chef in the world seasons his proteins prior to cooking. Unless
you were to dump an entire jar of salt on the meat and let it rest overnight, you can forget the myth that you will leach
the moisture out of the meat. There is no way any appreciable moisture loss will occur with a normal amount of salt
sprinkled on the meat just before cooking.
Myth #7: Don’t wash mushrooms or they will become saturated with water. Once again, a kernel of truth
surrounded by misinformation. If you merely rinse them off and immediately dry them on paper towels, the amount of
water they absorb is minimal.
Myth #8: Putting the avocado pit in the guacamole will prevent it from browning. Fat chance. Maybe the
guacamole directly adjacent to the pit won’t brown because it isn't exposed to the air, but the rest still will.
Myth #9: Adding salt and/or oil to pasta water prevents it from sticking. Yeah, and people are abducted by aliens.
Salt is added to pasta water to season the pasta. It plays no role in preventing sticking. And oil doesn't do anything.
Remember, oil and water don’t mix. All the oil floats to the top so don’t bother. What prevents sticking is placing the
pasta in already boiling water, not overcrowding the pot, and stirring, particularly at the early stages of cooking.
Myth #10: Pasta should be rinsed after cooking to remove the starch. Even if this were true, why would you want to
remove the starch? You will remove some of the surface carbohydrates by rinsing the pasta, but this is negligible
compared to the total amount of carbohydrates left in the pasta itself. Moreover, removing the surface starch decreases
the pasta’s ability to adhere to the sauce. Less sauce-to-pasta cohesion means less taste.

Congratulations to… Sean and Jamie for taking 2nd Place in the North FL PGA Section’s Two-Man Team Championship. After a 1st Round (-5) 67, they were tied for the lead with 3 other teams, but a 2nd round score of (-7) 65 left all but one team in their rear view mirror. This continues a trend of success for the pair in 2 man events including a win and two 2nd place finishes in only four events.
Golf Shop’s Weekend Point Quota Game There’s a new twist on what used to be the Saturday game. We’ve got the same point quota game, but now you can play as many times as you’d like on Friday, Saturday, or Sunday. The annual one time entry fee is only $20. The en-try fee for each round is still only $5.

Our adult and varsity tennis round robin was very successful with
20 participants. Marisa Thomason was the overall winner, and
Linda Carlene was the lucky winner of the prince tennis racket. It
was a fun-filled event with plenty of friendly competition.
Our day league ladies are on summer break.
Tip of the month: Accessories
Racket: If your racket is more than 4 years old, I
suggest you get a new one.
Racket strings: You should restring your racket in
a timely manner, even if it hasn’t broken. The
rule of thumb is to multiply one year by the num-
ber of times you play a week. For example, if you
play once a week, then you should restring once a year.
Shoes: Don't save money on shoes. Get a good pair to avoid injury.
Also, the wrong shoes will damage the courts.

GWGA NEWS: Join us for Summertime Golf: June, July & August
The GWGA Ladies staying around Gainesville for the summer welcome you to join them on Tuesday or Thursday morning at 8:30am for a few hours of golf, a lunch social, and a few laughs. And we all throw in a dollar just to make it interesting.
There is no permanent commitment; just show up at the Club shortly after 8am - whenever you can - and we will set you up in a group. Hope to see you there, and if you need more information please call the Pro Shop (372-0961).

Rules of Golf: Water Hazards
When officiating golf tournaments, I find most of my rulings involve helping golfers correctly take
relief from water hazards and obstructions. Water hazards are marked by yellow stakes and yellow lines (Lateral water hazards are a
subset of water hazards and are marked by red stakes and lines.) If your ball is in a water hazard, you may play it from the hazard, with-
out penalty, if you can. Otherwise, there are only two relief options available: (1) You may hit another ball from where you last played
the ball, outside the hazard; (2) You may drop the ball outside the hazard any distance along a line defined between two points. The two
points are the flag stick and the point on the margin of the hazard (the yellow line) where the ball last crossed the margin. Both of these
options incur a one-stroke penalty.
The most common mistakes made are dropping the along the line the ball traveled instead of the line described above, and
dropping the ball within two club lengths of the spot where the ball last crossed the margin of the hazard. That is an option reserved for
Lateral Water Hazards (marked with red lines and stakes.) Note that a player whose ball is in a lateral water hazard has the same op-
tions described above for water hazard relief, as well as the two club-length option. Next month I will be discussing taking relief from
immovable obstructions.

Golf Course News July is sure to be booming with fireworks and afternoon thunderstorms. We are in that summer weather pattern again, and we sure need the rain to make up for the last few months of drought conditions. With frequent afternoon storms, some producing heavy downpours and lightning, get your rounds in early and bring your foul weather gear for those brief showers. Please remember to take appropriate cover when lightning is present. The golf course is in good shape, and we are starting to utilize growth regulators on the turf to reduce the mowing frequency, create a tight turf, minimize clipping yield, and control fuel costs. Projects for the month include trimming and repairing cart paths, landscape improvements, and drainage. We hope you enjoy the golf course, and our team wants you and your guests to have an excellent experience each time out.
