Indian StandardSPECIFICATION FOR
MANGO KERNEL FAT
o. FORE WORD0.1 This Indian Standard was adopted by the Indian Standards Institu-non on 16 July 1979, after the draft finalized by the OIls and OilseedsSectional Committee had been approved by the Chemical DivisionCouncil and the Agricultural and Food Products Division Council.
0.2 Mango kernel fat is obtained from seed kernels of mango ( Mangl-fera indica Lmn.). Mango trees are abundantly distributed throughoutIndia, There are many regional varieties of mango. The fruit is botha delicacy and a food. The estimated production of mangoes in Indiais around 7 rrnllion tonnes. Mango contains an ovoidoblique solitaryseed, also called stone. The latter consists of a hard shell and kernelinside. The potential availability of mango kernels in the country ISaround one million tonnes which can yield about 70 000 tonnes of mangokernel fat but its present production IS not much.
0.2.1 The contents of stone in mango fruit. kernel in stone and fat inkernel vary with the variety of fruit. On dry basis, stones comprise 4 to14 percent of fruit, kernels 61 to 83 percent of stone, and fat 7 to 11percent of kernels. The mango kernel meal can be used as cattle feed, manure and for production of starch and it has good export potential.
0.3 Mango kernels contain 7 to 1I percent greyish white coloured fatwhich IS suitable for edible purpose after refining. The characteristicsof mango kernel fat are such that It has good potential as a cocoa-butter substitute. It may also be used for wap making. Consideringthe good potential of availability and suitability of this fat for varioususes including that for human consumption, the concerned technicalcommittee decided to formulate this standard.
0.3.1 The fatty acid composition and the analytical constants of themango kernel fat also vary WIth the frurt variety. The major fatty acidsare oleic (33 to 53 percent) and stearic ( 24 to 49 percent). The rawfat can be used in soap making and as a substitute of tallow in textileindustry. Refined fat is suitable as an edible fat, cocoa-butter extenderor substitute, in suppository bases and III cosmetics formulations. Mangokernel fat has also good export potential.

0.4 This standard contains clause 5.1 which calls for agreement betweenthe purchaser and the supplier.
0.5 In preparation of this standard, substantial assistance has beenderived from data supplied by the 011 Technological Research Institute,Anantapur ( AP ), Hindustan Lever Ltd, Bombay and Regional ResearchLaboratory ( CISR ), Hyderabad which is gratefuliy acknowledged.
0.6 For the purpose of deciding whether a particular requirement of thisstandard is complied with, the final value, observed or calculated, expressing the result of a test, shall he rounded off III accordance withIS : 2-I 960·. The number of significant places retained in the roundedoff value should he the same as that of the specified value in this standard.
1. SCOPE
1.1 Thrs standard prescribes requirements and methods of sampling andtest for mango kernel fat.
2. TERMINOLOC/Y
2.1 For the purpos(' of this standai d, the definitions given In 2 ofIS : 54H ( Part I )-1964t and the followmg shall apply.
2.1.1 Raw Mango Kernel Fat - Mango kernel fat obtained from cleanand sound kernels of mango ( Mangifera indica Linn, ) by the process ofsolvent extraction.
2.1.2 Refi'led Mango Kernel Fat - Mango kernel fat obtained by theprocess of solvent extraction which has been neutralized with alkali, bleached with bleaching earth or activated carbon or both, anddeodorized WIth steam, no other chemical agent, being used.Alternatively, deacidification, bleachmg and deodorization may be doneby physical means
3. GRADES
3.1 The material shall be of the following three grades;a) Refined,
b) Raw Grade I, and
c) Raw Grade 2.

3.1.1 The material of the refined grade is suitable for edible consump-tion.
3.1.2 The material of raw grade I is suitable for making VANASPATIand refined fat and not for direct edible consumption.
3.1.3 The raw grade 2 of the material is intended for soap makingand for other industrial uses other than VANASPATI and refined oilmanufacture.
4. REQ.UIREMENTS
4.1 Description - The material shall be obtained from clean and soundkernels of mango (MangifPTa indtca Lmn.) by the process of solventextraction.
4.2 The material shall be clear on meltmg and free from adulterants, rancidity, sediment, suspended and other foreign matter, separated waterand added colounng or flavouring substances. In addition, the refinedgrade of the material shall have acceptable taste and odour and maycontain permitted anti-oxrdants ll1 specified quantincs as prescribed underthe Prevention of Food Adultcrauon (PFA) Rules of Government ofIndia.
4.2.1 Solvent extracted fat shall be obtained from the seed kernelsusmg solvent hexane conforming to IS : 3.J:70·1 '166·.
4.2.2 The clarity of the rnaterial shall be judged by the absence ofturbidity after keepmg the filtered sample at 60°C for 24- hours.
4.3 Admixture with Other Oils or Fats - The material shall be freefrom admixture with rnmeral or other oils or fats of vegetable or animalorigin, when tested according to the methods prescribed inIS : 548 ( Part II )-1976t.
4.4 The material shall also comply with the requirements given inTable I.
5. PACKING
5.1 The material shall be packed in suitably sealed and well-closedcontainers as agreed to between the purchaser and the supplier. Therefined mango kernel fat shall be packed in new tin containers.
