INVITATION Dairy and food industry is of enormous significance for India’s development because of vital linkage and synergies that it promotes between the two pillar of the economy, namely, Industry and Agriculture. India is the world’s second largest produce of Food and has potential to become number one with sustained effort. We are already the largest producer of Milk in the world. The growth potential of this sector is enormous and it is expected that the consumption of vlaue added dairy and food products would grow at a very fast pace. Most of the growth in agriculture which will drive the food industry is expected to take place in the country. it is a matter of great pleasure to extend you all a warm welcome to this International Conference at BHU, Varanasi. In the centenary year of Banaras Hindu University, a great sheet of learning founded by Bharat Ratna Mahamana Pd. Madan Mohan Malviya ji, Banaras Hindu University (BHU) founded by Pt. Madan Mohan Malviya ji in 1916, is one the most prestigious Central Universtity in the country. It is the largest residential University in Asia. A living embodiment of Malviya ji, Dr. Annie Besant & Dr. S. Radhakrishnan, this seat of learning epitomizes synthesis of ancient wisdom & modern scientific temper. Banaras Hindu University ranks among the first few in the country in the field of academic and research out put. This university has two campuses (Main campus at Banaras and another Rajiv Gandhi South Campus at Barkacha, Mirzapur)140 departments, 4 advanced centers and 4 interdisciplinary schools. The University, is making its mark at the national and International levels in a number of forntier areas of Science, Social Science, Technology, Medicine and Agriculture etc. BANARAS HINDU UNIVERSITY CENTRE OF FOOD SCIENCE AND TECHNOLOGY Centre of Food Science and Technology (CFST) at Banaras Hindu University (BHU), Varanasi has come up in recent past to achieve academic excellence, create valuable human resource and to undertake R & D for driving economic growth of the country through food processing. Government of India has already acknowledged the importance of the Centre by funding its activities through Department of Biotechnology (DBT). VARANASI The holy city of Banaras is endorsed as one of the oldest civilization known for astuteness in wisdom of all disciplines of knowledge especially in religion and music. Ravi P. Singh Director A. Vaishampayan Dean Food processing is a vital component of government policies throughout the world for politicians, researchers, industrialist and enterprenuer in order to meet the global demand for sustainable development. About 37 percent of food is wasted at the consumer level while 63 percent of food waste occurs at some stage of production, transportation, storage or in the market place. One-third or more of all food produced never makes it to consumers. This can be overcome by Food processing which makes use of various unit operations and technologies to convert relatively bulky, perishable and typically inedible raw materials into more useful shelf-stable and palatable foods or potable beverages. Processing contributes to food security by minimizing waste and losses in the food chain and by increasing food availability and marketability. Food is also processed in order to improve its quality and safety. Technologies applied in the processing of food must assure the quality and safety of the final product. Biotechnology can show a promising prospect and potential tool as applied to food processing by improving properties such as the taste, aroma, shelf-life, texture and nutritional value of foods. Biotechnological intervention in food processing will lead to production of microbial cultures, enzymes, flavours, fragrances, food additives and a range of other high value-added products. These high value products are increasingly produced in more technologically advanced developing countries for use in their food and non-food processing applications. Many of these high value products are also imported by developing countries for use in their food-processing applications. To succeed, the global food industry must invest in ideas, knowledge and skills and encourage innovation and creativity. With researcher and nutritionist working on the science of future food we will form a traverse between the academic and industry peers. THEMES OF THE CONFERENCE 1.
