It's that time of year when you may have an over supply of zucchini. Here is a del ic ious way to use some of them up! VANILLA ZUCCHINI MUFFINS 2 eggs1 cup sugar½ cup coconut oi l1 tablespoon vani l la extract2 cups peeled, grated zucchini2 cups plain f lour1 teaspoon baking soda½ teaspoon baking powder1 teaspoon cinnamon1 cup golden rais ins1/2 cup chopped pecans or other nuts (opt ional)InstructionsCombine eggs, sugar, o i l and vani l la. St i r in zucchini . Combine remaining ingredients. Addto wet ingredients and mix wel l . Pour mixture into prepared t ins or cups up to 2/3 fu l l . Bakein a moderate oven for 20 to 25 minutes.

MethodPlace herbs and sal t into food processor and pulse unt i lyou have a coarse gr ind. You don’ t want to create apuree or paste, so keep an eye on i t . I f you don’ t have afood processor, use a kni fe and cutt ing board andcoarsely chop both sal t and herbs unt i l there is auni form mixture. Place mixture into a glass jar , and intothe fr idge for around a week, to let the f lavours meld.Give the jar a shake every day to combine. I t is thenready to use and wi l l last , stored in the fr idge, for up to6 months (sal t is a preservat ive). This homemade herb sal t can be used in any recipe thatneeds an extra k ick – you can use i t for rubs, to addsal t and f lavour to soups and stews, or even to sal troast a chook. Whack a card or label onto the jar , andyou’ve got a gorgeous gi f t .

The Parndana Community Garden is a wonderfulin i t iat ive supported by Sophie Thompson fromGardening Austral ia. The idea came as a directresponse to the recent Bushf i re cr is is to help supportthose whose gardens were impacted by the devastat ingf i res. Community members can come, create a garden,and hopeful ly gain some respi te f rom the sense of lossthey are exper iencing at home and have access to f reshproduce at the same t ime. The garden beds have beendesigned so they can be transported back to eachgardener ’s own home when they are ready to do so.This is such a beaut i fu l way for those who have beenimpacted to cont inue to be able to work in " theirgarden" as they would at home. Happi ly, the CommunityGarden project has now expanded and anyone iswelcome to come and part ic ipate. Marie and DennisPerkins are the gardens "Guardians" and help to keepan eye on i t .
