Ingredients10 cups of whole wheat bread, cubed2 cups butternut squash, chopped2 cups onions, chopped3 cups celery, chopped1 tbsp fresh thyme, chopped2 tbsps fresh sage, chopped3 cups apples, chopped2 chicken & apple sausages, cooked2 eggs¼ cup fresh parsley, chopped3 cups chicken broth1 cup dried cranberries3 tbsps olive oil2 tbsps butterSalt and pepper to taste

CELEBRATE HARVEST WITH SQUASH

Veggie-Packed Butternut Stuffing

Cooking Instructions1. If your bread is not stale, place it on a cookie sheet and broil at 300 for 15-20 mins2. In a casserole dish, spread the butternut squash. Toss with one tbsp of olive oil. Salt and pepper. Roast at 400 for 35 mins3. Heat 2 tbsps oil in a sauce pan. Add in chopped onions, celery, thyme, sage. Cook until veggies are tender, about 10 mins 4. Add in chicken broth and bring to a simmer. Remove from heat and set aside5. Heat 1 tsp butter in a pan. Toss in chopped apples and sauté about 10 mins until tender6. In a large bowl, whisk eggs and parsley. Add in bread, squash, celery and onion mixture, apples, sausage and cranberries. 7. Move mixture to a buttered casserole dish and top with 1 tbsp of butter by crumbling small bits over the top. Cover with foil8. Place in the oven at 375 and bake for 25 mins. Remove foil and continue baking for 20 mins

Ingredients1 spaghetti squash1 tbsp olive oil (Ideally ½ tbsp regular olive oil & ½ tbsp flavored olive oil)1 tbsp dried basil2 smashed garlic clovesSalt and pepper to tasteHandful fresh basil (optional)

Cooking Instructions1. Preheat oven to 425 2. Line a rimmed baking sheet with foil3. Cut squash in half and scrape out the seeds (or you can do afterward)4. Drizzle ½ of the oil on the squash halves and then sprinkle salt, pepper and basil. Place garlic in the middle5. Flip squash over so that the cut sides are down. Stab a few times with a fork and place in oven for 45-60 minutes until soft6. Remove from oven. Flip the halves back over and fluff with a fork until it looks just like spaghetti. Drizzle olive oil on top and add fresh basil

Dressing Instructions1. Prepare the dressing first so that it has extra time to marinate 2. Combine all ingredients and set aside in a small bowl

Orzo Instructions3. In a medium sauce pan, add chicken broth and one cup of water 4. Bring to a boil 5. Add in orzo and continue to a boil for 8-9 minutes. Bring down to a simmer 6. Drain orzo and set aside

Salad Instructions7. Chop all salad ingredients 8. Heat 1 tbsp of olive oil on medium high. Toss in the onions and a pinch of salt. About 5 minutes later, add in garlic and squash, stir often to make sure nothing burns9. Once the squash is cooked (it should be the consistency of a potato when cooked) turn off the heat. Add the cooked orzo and the salad dressing, toss well until all mixed10. Move to serving platter or personal plates, top with goat cheese crumbles and chopped parsley

Heavenly Acorn Orzo SaladThe goal with this dish is to cut calories and add lots of vitamins and fiber, by using vegetables and orzo. This is a great way to make any meal a skinny one!

Salad Ingredients3/4 cup orzo2 cups chicken broth or water 1 tbsp olive oil1 yellow onion, finely chopped2 garlic cloves, very finely chopped1/2 acorn squash, finely chopped1 cup garbanzo beans drained/rinsed2 tbsp goat cheese or feta1/2 cup fresh parsley, roughly chopped

Dressing Ingredients1 tbsp capers1 tbsp kalamata olives, finely chopped1 tbsp balsamic vinegar1/2 tbsp extra virgin olive oilSplash of caper juice Pepper to taste

Garagiste Movement Grows in Central Coast Soil

Two years ago, few in the US had heard the term ‘garagiste’ – and fewer still knew it as a term

associated with the Central Coast. But that was before The Garagiste Festival, which, for the third year, will be showcasing ‘garagiste’ winemakers (64 of them!) to passionate wine consumers in Paso Robles in November. So what is a ‘garagiste’? Pronounced garag-east or gar-uh-zhē-stuh, it’s a term originally used in Bordeaux to denigrate renegade small-lot winemakers, sometimes working in their

“garages” - who refused to follow the “rules,” but who went on to be recognized as making some of the best wine in the world. But garagiste is no longer a term just for rebellious French winemakers, today it refers to a burgeoning population of stunning, small-lot producers in the US, who are also making some of the best wine in the world – and the heart of the American garagiste movement is right here on the Central Coast.

According to Wikipedia, Paso Robles

“represents the core of the garagiste movement” – and San Luis Obispo county overall boasts over 150 garagiste winemakers, many of who have poured and gained fans over the years at the annual Garagiste Festival, held at Paso’s Windfall Farms. A festival unlike any other, it is bringing national and international recognition to these winemakers – as well as to San Luis Obispo County. The non-profit festival benefits SLO’s Cal Poly Wine and Viticulture program.

This year the festivities kick off on Thursday, November 7th with a ‘Multi-Winemaker Dinner,’ matching garagiste wines with exquisite cuisine at Atascadero’s historic Carlton Hotel. November 8th is ‘The Opening Round,’ which showcases 15 outstanding artisan winemakers from across California at the Pavilion on the Lake in Atascadero, followed by the hugely popular ‘Shiner’s, Samples, & Secrets Mixer’, offering one-time-only opportunities for attendees to taste some remarkable off-the-grid wines, while

hanging out with the garagiste winemakers who created them.

The ‘Main Event’ at Windfall Farms on Saturday, November 9th, begins by bringing back one of the most popular features of the Garagiste Festivals, its engaging, educational, and unique winemaker panel and tasting seminars. The festival’s ‘Grand Tasting’ follows, with 48 winemakers pouring 125+ wines and 20+ varietals. Stay later into the evening for the ‘Winemaker After-Party’, where guests and winemakers mingle, drink, dance, and continue the conversation.

Capping it off on Sunday, November 10th is title “The Chemistry of Wine: Practices and Pitfalls” a tasting symposium for serious aspiring and beginning winemakers and brings the focus out of the vineyard and into the lab where a whole new set of decisions need to be made in order to craft the wine of your dreams. Attendees will taste the impacts of certain winemaking procedures - another example

of the get-it-nowhere-else benefits of the G-Fest.

La Famiglia (the family), provides two annual shipments, each containing four bottles of the winery’s Reserve label wines, including exclusive vintages that are available to club members only. Il Formaggio (wine and cheese club) is a very unique club. Two annual shipments include two bottles of fine wine and a cheese that is specially selected to pair with each of the wines. Select cheeses are typically artisan cheeses from smaller producers that are difficult to find, and therefore an extra special treat. Often times Le Vigne Winery club members join both clubs to maximize their wine and cheese experience.

For a truly special experience, all members are eligible to receive the spring-only shipment called La Tavola della Famiglia (family table). This special shipment is the winery’s premiere level club, where members receive special release wines along with the key ingredients to create a special meal designed to pair with the wines included. The shipment is offered for pick-up during the Paso Robles Wine Festival and members are invited to attend a cooking class where they can learn tips on preparing the special dish and get a chance to try the pairing before making it at home. Members of this club also receive complimentary admission to Le Vigne’s monthly culinary series.

Wine Club

Over the years I have watched our wine region blossom. From a few small-lot wineries and private vineyards grew a culture of wine appreciation that has resulted in bountiful numbers. Over time I have visited many tasting rooms, cruised the “back-roads,” attended winemaker symposiums and participated in vineyard and winery tours throughout the county. Skyler and Hamilton. The estate grows Bordeaux and Zinfandel and has made the 100-year-old restored farmhouse available for guests to vacation. Similar to a custom barn from New Hampshire, this setting was created for intimate parties. Like the property, HammerSky wines are made with the same care and creative form.

The property was purchased in May of 2007, the same year that HammerSky released its first vintage. HammerSky wines have received high marks and medals from critics, and many compliments from customers and guests. While the wines have personality, structure and decadence so also does the tasting room which can be characterized by its welcoming owners and staff, family-friendly environment, and of course, its visually stunning, serene setting that features one of the oldest oak trees in the valley. The tasting room has been uniquely structured by the Hauck’s consideration of comfort and unbelievable views. Their vision is for guests to enjoy their wine as well as their visit. HammerSky Vineyards is a 50-acre property located on Vineyard Drive in Paso Robles’ Westside, just a short

drive from the coast. The location, history and beauty are enveloped in this back road valley. Some say it reminds them of Gone with the Wind or an East Coast estate. To owners Kim and Doug Hauck, HammerSky is an ever-changing family retreat that they love to maintain and share.

Kim and Doug are both California natives and have been married over twenty-three years. In the beginning stages of their marriage they dreamed of owning a vineyard property. Over the years of searching for the right property in their vision, this jewel became available in Paso Robles. Upon first sight, some may not have thought of it as that. While the vineyard and old oak trees were spectacular, the old farmhouse had weathered through the years and was not much more than a shelter. But with the creative gene in Kim and Doug – Doug being a visionary and cosmetic dentist and Kim a designer who has dabbled in set design, interior design and has owned a floral design studio – both knew their vision was about to be born.

Much work went into the restoration of the farmhouse and landscape which could be described in the likes of Ralph Lauren-style or rustic chic. It is a blend of the Hauck family treasures and unique taste, even the name HammerSky is named after the couple's sons,

Where are you from? Tell me a bit about yourself and your family. Cristina: We both grew up in the Central Valley of California in a very rural area. We are a husband and wife design-build team. The development of this property was the precursor to our business FORM Design + Build and the realization that having a full service company that can take you from start to finish on a project is essential. In order to streamline our processes on projects, we have worked over the years to include architectural services, interior design, contractor services and real estate to our scope of reach. We have two small children and our daily lives revolve around growing our business and raising our happy, energetic kids.

What do you enjoy most about the area where you live?

Dustin: School brought us here and the lifestyle, weather and culture kept us here. We love the mix of agriculture and beach atmosphere that Arroyo Grande has to offer.

Tell me about the process leading up to building your home.Cristina: In 2005, we moved to Copenhagen, Denmark for a year while Dustin studied architecture with Cal Poly's study abroad program. We rented out our house, put all of our possessions in a shipping container in the back yard, and embarked on our journey. While we were away, we had many things to consider; we watched the market fall, learned the advantages of rental income, and researched adding a second unit onto our property. Dustin decided that this would make a great senior project; providing for our personal needs and creating an

opportunity to explore the world of property development from start to finish.

When it came to building, what were your goals? Cristina: Our house is small, functional and aesthetically pleasing. There were several goals that we were trying to achieve with this project. On a personal level, we needed to create affordable housing for our family in order to live in this area; coastal housing prices are a little overwhelming for two young people who grew up in the Central Valley. We also needed to create a plan for future growth as our family size grew. As a senior project and architecturally speaking, Dustin wanted to create a modern, sustainable, structure while exploring the use of alternative building materials and prefabrication. There are a few design elements to this home that you wouldn't notice at first

What are your personal hobbies?Dustin: My hobbies involve playing softball and golf, backpacking and traveling. Cristina would say that my main hobby is fantasy football.

Cristina: My personal hobbies include gardening, painting, traveling and flipping houses. And of course, Dustin would say that my hobby is Pinterest!

Would you say this is your dream home?Cristina: Acutally, no. It might surprise people to learn that it's not far off, given the size. It would be nice to add more square footage but we will never dream of living in a McMansion, so to say. However, it would be nice to have a little more space and a larger piece of property in the country. A country house with an ocean view – isn't that every Central Coast resident's dream?

blush: for instance, the window placement was carefully selected in order to maximize light in the winter and shade in the summer months.

What features are you most proud of with this house? Tell me a bit about them. Cristina: Some of the things we love about the space are the small footprint, tall ceilings that make the small space feel larger, and the indoor/outdoor feeling of the house. We also love that we were able to re-purpose the Seatrain shipping container into an office, laundry and utility storage space. What we are most proud of is that we were able to build a comfortable, architecturally pleasing dwelling for our growing family for what most people spend on the purchase of a used SUV. By using simple and common building materials, we were able to add architectural details without paying for expensive systems. For

instance, if you look closely at our stair railing, you will notice that the horizontal members are galvanized electrical conduit (EMT) that you can get at hardware stores by the bundle and the handrails are constructed of standard muffler pipe.

Who lives in the house and how does it fit the residents and pets? Dustin: We live in this house with our two children Lincoln (5) and Ava (3) and our dog Milou. We have even managed to fit two cats and three chickens into our outdoor living space. The house is surprisingly spacious and comfortable for 500 square feet. It is "lacking" in all things non-essential, but to us, that is a plus. Leaving all of our possessions behind for a year and taking notes from the notoriously minimal Danes has allowed us to break free from non-essential clutter and live in a simpler way.

The boutique also offers selections for men and we will be expanding our men's line in the near future.

I am continuously searching for items for the boutique that are made by companies that were started as a result of cancer. Our customers appreciate my experience as a survivor and the compassion and understanding that comes from my experience; I can relate to what cancer patients are going through emotionally and physically.

Wig Boutique was born out of my personal experience. In March 2010, I was diagnosed with a rare, aggressive breast cancer. By opening Secret Strands Wig Boutique, I know that I will be able to give back and help others that are currently in the same situation that I was in. We have a lot of fun in the boutique, women will often come in distraught that they will lose their hair but will leave with a hug and a smile on their face. And it is important to note that wigs are not just for people experiencing hair loss due to medical reasons. Often times women today enjoy the convenience of wearing a wig because they do not want to style their hair each day. They will buy a wig to take on vacation so they do not have to worry about their hair. Wearing a wig is also an economic choice since a quality wig is equal to the cost of two to three salon visits and will last much longer. Husbands often stop in with their wives and comment about how they love the idea that her “getting ready” time will now be cut down by almost 30-45 minutes. I also have a fun selection of wigs that I call my “Vegas Wigs.” Many ladies will come in to the boutique before their “girls night out” and pick out something fun!

energy were restored. By day nine, I shed 10 lbs and everyone began to notice. I felt stronger and had more endurance. After twelve weeks, I had lost 33 lbs and could see muscle definition that I had never seen before.

LW: Would you recommend a nutritional cleanse to those who feel that they are already at their strongest, fittest potential?

CR: In many aspects, I feel that athletes need to cleanse more than the average person. As a family, we love to play soccer and at-home, silly relay races that leave us laughing in our backyard!

Jim Rohn said that you are an average of the five people that you hang out with the most. You may wonder who Jim

Rohn is; he is best known for his personal rags to riches story and his forty years of personal development seminars, founded on well-crafted philosophy and psychology of living. When a person like that says something, the rest of us better listen.

If you want to amuse yourself, put pen to paper and write down the names and qualities of the five people that you hang out with the most and take the average. See if you still like yourself. You may love yourself. You may decide it’s time to rearrange your friends’ list. No need to wonder if your grandmother knew Jim Rohn, just because she told you, “Tell me who your friends are, and I’ll tell you who you are.” It’s more likely that Jim listened to his grandmother and look what that brought him and countless others.

It is interesting to wonder about our hidden potentials and secret dreams. In her very influential book The Artist’s Way, Julia Cameron warns all of us that creativity is the electricity of life and a God-given gift, a responsibility which if left unrealized, leaves us feeling unfulfilled and sometimes jealous of others or generally stuck with

flat lives. You may wonder what an artist, an entrepreneur, a housewife, a teacher, an engineer, or a barista have in common. And you may conclude like most out there, that they have nothing in common. Like most others, you will be wrong. Creativity is what we all have in common as we are the very expression of creativity – from the moment of our conception and even before. Creativity is what is needed in every aspect of our lives, from solving problems, to writing a play, to painting a room, to starting and running a business, to cooking dinner. If we approach life like a series of tasks on a to-do list, we end up waiting in line at the pharmacy for the next refill of antidepressants.

The other commonality is that we all have friends. Even the introverted types like me, who prefer the company of books and keeping the bluffs trail in Montaña de Oro all to myself. The friends we have will either help or hinder our creative expression. A young lady came to see me once and told me in all seriousness, “No one wants me to succeed!” I was shocked and hurt to hear this. How is she to live in a world where she felt like being herself and aspiring to become what she wants to become will be met by people who are not interested in her growth. I told her that it

was simply not true: “It’s just that you have not yet met the people who will want you to succeed.”

To have friends that in some way inspire your creativity, stimulate your self-expression, and support you in whatever way they can on your journey of life, are the kind of friends you should be surrounding yourself with. At the same time, you should consider being this kind of friend too, because you are also needed in realizing the dreams of others. Without your heartfelt participation, someone else’s life will be flat. Without your honest self-expression, a piece of the mystery of the universe will have to be left unrealized. Without your willingness to rise above your fears and limitations, the only faith that awaits you is the well worn out spot on your couch…and then you die.

The Gallery at the Network brings together a collection of jewelry and small sculptures by master designer, sculptor and artist, Jack Biesek. The Gallery has been pleased to represent Jack’s jewelry for the past several years, and we were greatly saddened when he passed away on June 30 of esophageal cancer at his home in See Canyon. 

His work of hand-crafted jewelry and sculpture has a simple elegance that is often described as tribal, ancient or primitive. Made from silver, pewter, bronze and stone, each piece is distinctive and reflects a rustic and original style. A celebration of graceful shapes, venerable materials and superb finishes, his creations are one of a kind in bronze, stone and steel. His wife, Sumac, often worked with Jack in creating their work known as California Rustic. 

Jack was involved in creating and designing since he was twenty years old and maintained a “beninner’s mind” which he saw as being far more motivating than being “the expert”. He states,”The universe has blessed me with this condition and I graciously accept it. I give credit to the muses who speak through me. I am only the hands, the mind and the spirit that is moved to explore the depth of my soul for the shapes and figures that are simple, abstract and poetic.”

In addition to his fine art, Jack was a leader and innovator in the world of environmental graphic design and owner of Biesek Design where he created projects worldwide. But he is most remembered for his huge heart, glowing smile and immense generosity, and he will be greatly missed. The Jewelry and Sculpture of Jack Biesek; A Retrospective Exhibition will be displayed Oct 1-Nov 27.

San Luis Obispo Botanical Garden is pleased to welcome  Kaaren Perry of the Morro Coast Audubon Society for a family-friendly birding walk. Kaaren Perry is an avid birder and for the past 20 years she has enjoyed leading local field trips and field classes.

This engaging walk through the San Luis Obispo Botanical Garden and the surrounding environs will get you acquainted with the wide variety of feathered friends found in San Luis Obispo County. We will look for returning wintering birds and fall migrants including sparrows, warblers, raptors, and others. October is prime time for rare migrants when nearly anything can show up. Walk will begin at the Garden’s second parking lot. The walk is $5 for Garden members and $10 for non-members. homeland in Champagne’s Epernay region. Their search ended just south of Arroyo Grande, nestled among the foothills that stretch parallel to Highway 101. The property soon boasted several acres of Chardonnay, Pinot Noir and Pinot Blanc, as well as a production facility equipped with two traditional French Coquard presses – still, the only two in North America.

As Maison Deutz Winery (the original name for what is now Laetitia) a culture of respect for Old World methods was established with the Coquard presses and méthode champenoise, a traditional, labor-intensive and time-consuming approach to making sparkling wine. And even after the property changed hands and the name became Laetitia Vineyard & Winery several years later, that culture remains.

“When it comes to sparkling wines, the only difference between Old World wine and Laetitia sparkling wine is the use of New World grapes,” said Dave Hickey. “I was trained by French winemakers who were, themselves, trained in Champagne. They wanted it done exactly the same way here as it was there. And to this day, one of the highest compliments anyone can pay me is to say that my wine reminds them of Champagne.”

Thirty years after its first vintage of Old World-style sparkling wine, Laetitia Vineyard & Winery is popping open a bottle of bubbly and celebrating with friends.

Sparkling WinemakerDave Hickey has been on the team almost since the beginning, albeit in roles as varied as cleanup crewman and cellar hand. And his son, Eric Hickey, who started out observing winery operations as a kid on the fringe, is now President and Head Winemaker of the venerated brand.

“When I started here, the winery was empty,” said Dave Hickey. “The tasting room was built but had never been used.” The inception of Laetitia Vineyard & Winery is woven into the history of Central Coast winemaking, though sparkling wine was something of an anomaly for the area at the time. In the early 1980s, French viticulturists came to California to seek out a New World outpost for growing vines and producing wines similar to those of their On Friday, November 1, participants become

“roadies” for an afternoon as they enjoy a “backstage” look at three SLO Wine Country wineries. Happening from 10am to 4pm, this Rockin’ Road Trip ($50) takes attendees from vine to wine, teaching the art of winemaking through demonstrations and hands-on activities at Laetitia Vineyard & Winery, Talley Vineyards and Saucelito Canyon Vineyard & Winery. This “experience” event includes a luncheon and wine tasting. Attendees may also enjoy the Collaborative Winemaker Dinner ($110) on Friday evening, November 1 from 6pm to 9pm at The Casitas Estate in Arroyo Grande. Hosted by one of SLO Wine Country’s celebrity winemakers, the dinner will consist of five courses by Chef Russ as well as Chef Heather Thomas of Two Cooks Catering, all paired with wines of SLO Wine Country. This will be an evening under the stars, overlooking the breathtaking Arroyo Grande Valley. Wineries featured at the dinner include: Ancient Peaks Winery, Chamisal Vineyards, Claiborne & Churchill Winery, Baileyana Winery, Saucelito Canyon Vineyard and Winery, Edna Valley Vineyard and Sextant Wines.

Saturday, November 2 the Grand Tasting and Auction, will be held at the Avila Beach Golf Resort from 12pm to 3pm. Attendees enjoy cuisine by some of the finest local chefs paired with wines by the artisan winemakers of SLO Wine Country. Along with food and wine from more than sixty establishments comes an “over the top” wine and lifestyle auction, hosted by the winemakers.

Sunday, November 3 is a winery open house day for all of those who attended Saturday’s Grand Tasting. All day SLO Wine on Tour features wineries offering complimentary tastings, food and live entertainment along with wine discounts and special offers.

In celebration of the world-renowned oysters of Morro Bay, the second annual Central Coast Oyster Festival will be held this year Saturday, October 19th at the Morro Bay Golf Course from 12PM to 8 PM Tickets on sale now, shuck yeah! Dozens of chefs from across the Central Coast will go head-to-head for the ‘Best Oyster of the Central Coast” Chef Award, and the audience will be invited to taste their sumptuous efforts. But while oysters will, of course, be the main attraction, other epicurean delights will also be available. Any good oyster festival needs a shucking competition, and the Central Coast Oyster Festival is no exception. Local shuckers will be invited to demonstrate their speed and skill to a live audience for prizes and the respect of the Central Coast community.

In addition to the delectable flavors of fresh Morro Bay oysters, the festival will include special features such as whimsical structures from SpinCycle, a locally based event art installation company who first started at Burning Man creating beautiful designs and unique environments within the festival. SpinCycle will work alongside The Do LaB, based out of Los Angeles. The Do LaB is world-renowned for bending reality through interactive environments, event production and creative lighting design. Prominently showcased at such high-profile gatherings as the Coachella Valley Music and Arts Annual Festival. The Do LaB takes an organic approach to everything they design and create, striving to bring their visions to life with natural materials, found objects and sustainable resources, both a perfect fit for the vision of this one of a kind Central Coast Festival.

Come out this year to this full day music festival that includes all the amazing local chefs preparing oysters in various ways. New to this year will be a food stage in addition to the full day music festival stage, where chefs and wineries will entertain your palette.
