Mrs. Helen P. Hoefer, assistant state leader of home demonstration agents, is in immediate charge of the program and will work with agents and nearly 200,000 rural home- makers throughout the state, in towns of 2500 or less. The cut-off vegetable oils from the Far East, plus the Increasing need for fats and oils for the Allies, now makes it necessary for all to save waste kitchen fats, she says. Home- makers can help their country and at the same time keep food bills down by making the beat use of all fats in the home. "Save pan drippings from roast ham, beef, lamb, and poultry. Save boiler drippings from stocks, chops, veal, and bacon. Save deep fats, whether lard or vegetable shorten- ing, from tried potatoes, fish, dough- nuts, or similar prepared foods. "If the fat cannot possibly be used in cooking food, it should be saved and sold. If every family saved only six ounces of fat a week, the b. | yearly saving in America would come to about 600 million pounds. More than two billion pounds of fats are wasted in American kit-chens each year, according; to the nutrition committee of the New York State Extension Service, which has been asked to work wiUf New York rural homemakera In saving and using all waste cooking fats.

Mrs. Helen P. Hoefer, assistant state leader of home demonstration agents, is in immediate charge of the program and will work with agents and nearly 200,000 rural home-makers throughout the state, in towns of 2500 or less.

The cut-off vegetable oils from the Far East, plus the Increasing need for fats and oils for the Allies, now makes it necessary for all to save waste kitchen fats, she says. Home-makers can help their country and at the same time keep food bills down by making the beat use of all fats in the home.

"Save pan drippings from roast ham, beef, lamb, and poultry. Save boiler drippings from stocks, chops, veal, and bacon. Save deep fats, whether lard or vegetable shorten­ing, from tried potatoes, fish, dough­nuts, or similar prepared foods.

"If the fat cannot possibly be used in cooking food, it should be saved and sold. If every family saved only six ounces of fat a week, the
