    While everyone is enjoying the Pimms,youve got meat, buns and skewerspractically smoking out your ears, and uh-oh those luxurious leek and cheddarsausages which you could hardly wait toimpress your loved ones with have startedto look more like the hot charcoal thatscooking them than the succulent bronzed-banger youd imagined.

    To ensure all malfunctions are avoided,and so you can enjoy your summers daystress-free, filled with impeccably grilledmeats; weve put together a handy guide toaccomplish the perfect barbecue, includingcooking techniques, pros and cons of gasand coal barbecues, as well as a recipe to try out.

    SETTING UP THE BARBECUEWith charcoal cooking, you know its ready when its covered in a thin layer of grey ash.It doesnt take too long to reach this stage and theres no rush to cook on it as it stays hotfor a long while.

    Arrange the hot charcoal in the centre-third of the barbecue, so theres room for youto move the food away from the heat if need be. Place your food around the column ofheat, so as the food cooks and the fat melts, it wont splash on to the hot charcoal,causing flare-ups.

    This method should stop your food from blackening. If anything does start to cook tooquickly, then simply move it further towards the outside of the grill.

    Top tips for not burning your food: Don't cook too soon, use the charcoals heat, not flames Use all of the grill space to cook, not just above the heat If you have a lid for your barbecue you can use the lid to control flare ups

  • VEGGIE TREATHALLOUMI KEBABS WITHTHYME AND LEMON BASTECook time: 15-25 minutesServes 4

    Ingredients2 medium courgettes2 peppers (red/yellow)1 large red onion250g low fat halloumi cheese16 cherry tomatoesPitta bread, to serve

    For the lemon baste:1 tbsp olive oil2 tbsp lemon juice2 tsp Dijon mustard

    Method1. Halve the courgettes lengthwaysand thickly slice. Cut the onion intowedges and separate into pieces. 2. Thread the halloumi, cherrytomatoes, courgettes and onion ontoeight skewers. Cover and chill thekebabs until you are ready to cook(you can do this up to half a dayahead.)3. To make the baste, mix togetherthe olive oil, lemon juice, thyme,mustard and seasoning. This can alsobe made ahead and chilled too.4. Preheat the barbecue or grill andarrange the kebabs on the rack. 5. Brush with the baste, stirring it firstto make sure the ingredients areblended. Cook for 4-5 minutes,turning often, until the cheese beginsto turn golden and the vegetablesare just tender. 6. Serve while still hot with warmpitta bread.

    For meat-lovers simply add chunks ofbeef, chicken or lamb and grill untilcooked through.

    TRY THIS TASTY RECIPE:

    CHARCOAL v GAS

    Its a debate which has the power to causeheated arguments amongst the moreexperienced of barbecuers, whohave tried and tested both, andfaithfully chosen the preferred side for life. Itis, of course, the gas v charcoal dispute.

    Those that are pro-gas will argue that theirapparatus provides instant ignition, instead ofwaiting for the coals to burn, its easier tocontrol and adjust the heat and flames and easy-to-clean drip trays provide much lessmess than lots of grey ash.

    On the flip side, loyal charcoal fans will argue that the process of lighting the coalsand standing nearby with a glass of wine while they burn is an integral part of thebarbecuing experience. The smoky goodness that comes from charcoal also provides adistinct flavouring that a gas cooker simply cannot replicate.

    While both clearly present their pros and cons, ultimately if youre looking for lessmess and quickness go for the gas barbecue. Whereas if youre looking for the moreauthentic barbecue experience, smoke n all, then perhaps charcoal is for you.

    STEAK SUCCESSGrilling the perfect steak issomething of an art form.Although the phrase practisemakes perfect is apt for thisskill, if you follow these simplesteps, you should have notrouble grilling a fantastic steak.

    Firstly, allow your steak toreach room temperature. Trim any excess fat off andseason your steak to taste, witha brush of olive oil and some

    cracked salt and pepper. Oil the grill by grabbing a piece of the trimmed-off fat with a pair of tongs and rubbing itacross the grill. Ensure the barbecue is piping hot and place each steak on the grill for one minute, turnand grill the second side for another minute. Turn again and rotate slightly, to get adiamond-grill pattern. Cook the steak on this side for half the remaining cooking time (seebelow for guide), and then turn once more to complete. Remove from the heat. Check the steaks are cooked to preference by using the face test:cheek rare, chin medium and forehead well-done. If you press the steak and thencompare it with the fleshiness of each of these facial features, it provides a decent guide ofwell-done-ness. Allow them to rest for five minutes; letting the juices flow from the centre and creating anall-round, succulent taste.

    For different flavours, soak your steak in a marinade overnight and enjoy with some salad, acorn on the cob, or whatever sides take your fancy.

    Multi-million pound revamp for Ponds Forge A state-of-the-art gym expansion and brand new changing facilities including sauna and steam room will be introduced at PondsForge International Sports Centre as part of a multi-million poundrefurbishment.

    Thanks to a major investment by Sheffield City Trust (SCT) andSheffield City Council, it will be leading in ultra-modern technologywith a Wellness System and MyWellness Cloud equipment to trackfitness development, Technogym apparatus and the dynamic,pressure-sensitive lighting and sound Prama system which willbring the gyms floors and walls to life to create an energetic andmotivating atmosphere.

    Steve Brailey, chief executive of SCT, said: All this will contributeto our ongoing goal to improve the health and wellbeing ofSheffield by creating top-of-the-range venues where local peoplecan go to exercise and improve their fitness.

    Until 21 September, there will be a temporary gym in the sportshall. All refurbishment work is expected to be completed by theend of October.

    Councillor Isobel Bowler, cabinet member for neighbourhoods atSheffield City Council, said: Ponds Forge is one of the citys most

    prestigious sports facilities and is an excellent city centre venue foreveryone from children learning to swim through to Olympic-levelathletes. I am delighted that the facilities there will be enhanced.

    SCT is reviewing the gym class schedule and will makecustomers aware of the new timetable as soon as it is revised.

    Charity triathlon raises 300Kath Morgan-Cresswell and Elaine Kirby residents at Brunswick Gardens RetirementVillage in Woodhouse completed a sponsored triathlon. The challenge comprised aten mile walk from Woodhouse to Rother Valley Country Park, a five-mile bike ridearound Rother Valley and one hour on exercise machines in the Villages gym. Theirefforts raised 300 for Brunswick Gardens self-funding gardening club to purchasecompost, seeds and other equipment.

    Yorkshire theme forAston CarnivalAston Carnival, this year taking place on1 August 11am-5pm with a theme ofYorkshire Day, is now in its tenth year.From small beginnings, it has grown intoan annual event on Lodge Lane playingfield.

    There will be plenty to entertain thewhole family, including knights in battle,a live band, a parade, a fun fair, dancersand gymnasts, a dog show andrefreshments.

    The carnival queen and her attendantswill arrive at the head of the parade,which starts at Swallownest Primary at11am. They will be escorted onto thefield by knights in armour and thencrowned by the deputy mayor ofRotherham, who will also open the event.

    Any surplus money generated by thecarnival will be passed to local charitiesand good causes.

    LIFE INSIDETHE BUBBLEFrom fine art to fantastic beaches and 24-hour party people, thereare plenty of reasons why Tel Aviv is becoming THE short breakdestination of choice, writes Chris Wilson.

    Asnapshot of Tel Aviv is likely tocontain at least three of thefollowing: a spectacular seafront withpalm trees and golden sands, beautifullypreserved Bauhaus architecture, ultra-modern tower blocks, building sites, leafyboulevards... and a handful of impossiblycool dressed-down twenty-somethingsmaking an art form out of doing nothing inparticular.

    This is the city that took a long, hard lookat the political and religious strife that mostof the world associates with Israel, anddecided it would rather throw a partyinstead. They call it The Bubble, and itseasy to see why.

    Well, thats one side of the story, and ifyou are looking for a short breakdestination that provides brilliant beaches,shopping, smart restaurants, and a

    relentless dusk til dawn nightlife you wontbe disappointed.

    You will, however, only be getting halfthe story. Tel Aviv is certainly big and brash,with an ever-changing skyline thanks to thehuge number of very tall buildings beingthrown up to cope with a boomingpopulation and vibrant business culture but appearances can be deceptive.

    The anything goes culture that makesthis city a magnet for the modern worlds24-hour party people, has also created ahaven for artists, designers and creativeminds, a point that was very much broughthome to me as soon as I checked in to theArtplus Hotel.

    This chic and understated hotel (blinkand youll miss the entrance) is dedicated toIsraeli art. Five local artists werecommissioned to create the murals that set

  • the tone for the dcor on each of the fivefloors. Retro-style furniture combines withclean modern design. My own room wasa white cube with splashes of red acrylicpaint on canvas designed by acclaimedlocal artist Elfrat Gal Nur.

    All rooms provide scribbling pads andcoloured crayons, encouraging guests tocatch the mood and get creative. Withvideo installations on the stairwells and avirtual Persian-style carpet projectedonto the lobby floor, I found the wholeset-up great fun.

    The location is hard to beat. You maynot get a sea view but it is a two-minutestroll to Tel Aviv beach and thebeachfront promenade.

    They also do great breakfasts and havea happy hour with nibbles and wine forguests every afternoon. Whether you arehere to soak up the culture, hit the beachor crawl the bars, Artplus is the ideal basefor your stay.

    If you want to get to grips with what is happening in Tel Avivright now, head for the Sarona Complex. Hyped as the New Cityof Tel Aviv, it is a mix of unique Tel Aviv architectural history and afusion of urban experiences, incorporating art, culture,entertainment and leisure. Despite the relentless buildingprogramme, huge efforts are being made to renovate andpreserve. In the Templer settlement, one of the first modernagricultural settlements in Palestine dating back to the 1870s, westumbled across an immaculately preserved olive press alongside avery cool modern wine bar built into the basement of one of theold dwellings.

    Often when a city embarks on a massive modernisationprogramme like this and the corporate world is pouring millionsinto the new business-minded Tel Aviv alternative lifestyles aremarginalised and the result is a sterile banality. Not here, wherestreet art (graffiti if you prefer) thrives.

    These arent just chancers with a few cans of spray paint.Committed artists like Maya Gelfman, a 37-year-old who has beenexhibited at art fairs around the world, can take weeks working oncomplex, striking designs that all carry her tell-tale heart signature.There are many more like her. From the overtly political to thesimply pretty, this unofficial art is as much a part of the cityscape asthe sleek new office blocks and the cool bars.

    For something slightly less cerebral, take a stroll along thewaterfront. From the billionaires boy toy yachts in the harbour tothe surfers and beach volleyball aficionados, its the perfect settingto find a caf to settle down for a spot of people watching. I didntspot any dog grooming parlours but they must exist, judging bythe number of primped pooches strutting alongside their owners.

    For a more traditional take on Israeli life a visit to Jaffa is a must.Home of the Artists Quarter, also known as Yafo, this is the ancientport city out of which Tel Aviv has now grown. Jaffa has, in recentyears, been regenerated with the old narrow streets and courtyards

    becoming another highly desirable part of Tel Avivs urban tapestry.The narrow passageways and ancient buildings in the Old City ofJaffa are worlds away from modern Tel Aviv, and if youve had ahectic Saturday night the quiet cafes serving the most fantasticcoffee and freshly squeezed pomegranate juice provide the perfectSunday morning pick-me-up.

    Jaffa is also home to the brilliant, barmy Bet Ilana Gur Museum,which exhibits original sculptures and designs of the artist Ilana Gurand also serves as her private home. The museum building standson a hill in Old Jaffa with breathtaking views of the new city andthe Mediterranean.

    The museums collections boast works of art both from Israel andthroughout the world; sculptures by Henry Moore, ethnic art fromAfrica and South America, experimental art from around the world.Eclectic is the word and Gur the collector clearly favours art with astrong sense of self-expression.

    Even if you are not an art fanatic the views from the roof of themuseum, back across to Tel Aviv, are mesmerising. Its the perfectspot to draw breath, try to put everything youve seen into somesort of perspective, and plan your next visit.

    Traditionally Tenerife has been the first choice as a winter sundestination, offering the prospect of heat, fine beaches and abreak from bleak British weather.That perception is now changing with the realisation that the

    island, the largest of the Canaries, offers attractions as an all-year-round destination. The principal amongthese is the climate temperaturesaverage 22 degrees centigrade and 27degrees is rarely exceeded. There is novariation in temperature between summerand winter months and it is increasinglyseen as a better alternative to traditionalsummer destinations such as Spain andPortugal where temperatures can beoppressive in the summer months.

    The tourist industry is helping toencourage this influx of new visitors in thesummer by offering attractive rates forhotels and for playing golf on the eightcourses on the island. The mild but warmclimate in the summer makes golf apleasure in Tenerife and golf parties orcouples would be well advised to consider the island as the idealdestination.

    Tenerife is just over four hours flight time away (Monarch flyfrom a number of UK airports) and one of the courses closest tothe airport is Golf Las Americas. The verdant 18-hole course isformed from a natural amphitheatre of land with stunning viewsover the Atlantic and the island of La Gomera, home to theCanaries ninth golf course El Tecina.

    The par 72 was designed by John Jacobs and is a perfectexample of a really good resort course. The fairways are enticinglywide as they snake around lines of pine and palm trees and thegreens, with some undulations, are fair and true. The Bermudagrass on the fairways means that clean ball striking is the order ofthe day. It is not unduly long and some of the shorter par fours and

    fives offer the average club golferthe chance of that rarecommodity: a birdie.

    A review would be incompletewithout mention of the wonderfulclubhouse with balconiesoverlooking the course and itsexotic flowers and fauna. Thequality of food and service isexcellent as would be anticipatedwith it being part of the five-starHotel Las Madrigueras resort.

    Many of the luxurious and spacious bedrooms, the terraces, therestaurant and the swimming pool overlook the course and it isideally situated being close to both Los Cristianos and Playa de LasAmericas.

    As is the case with many golfing destinations, especially on thecontinent, courses such as Golf Las Americas are attached to ahotel which offers discounted rates to play and stay. The ratesimprove in the summer months so that one nights bed andbreakfast here for two plus one round of golf is offered from 202euros until 30 September 2015.

    The Abama course is another attached to a hotel, the Ritz-Carlton, where special rates are offered. The course contrastsmarkedly with Golf Las Americas; it is more of a stadium course

  • challenge for anyone but the fittest. Any track where you have toavoid 22 lakes and 25,000 palm trees is tough and Abamacertainly is a great test of golfing skills, or lack of them. DaveThomas has used all his imagination to create some awe-inspiringholes hewn out of rocks and canyons which are a major feature ofthe landscape. The hotel offers a fine retreat from the rigours of thegolf course with outstanding food, service and facilities.

    A golfing holiday to Tenerife would be incomplete without a visit

    to Golf Costa Adeje, arguably the flagship andmost famous course on the island having stagedthe Spanish Ladies Open last September. The PepeGancedo layout is highly unusual raised terracesmade from boulders run across a number offairways, old farm walls line holes and somebunkers incorporate the volcanic signature sand ofTenerife.

    There is a sense that the course is long-established and very traditional. This, plus thefantastic views, makes the course a pleasure to play.A number of holes have greens perched on theheadland, framed by the azure colours of theocean below.

    Other courses on the island include the ManuelPinero modified Golf del Sur, the Donald Steeldesigned Amarilla Golf, the Ballesteros Buenavista,the very traditional Real Club de Golf de Tenerife,and Golf la Rosaleda.     Golf is not the only attraction on Tenerife. Itshome to 70 beaches, the majority of which have been awardedblue flag status. Its an island of two halves; the lush north of theisland complements the sunny and dry south, shielded from thewind and humidity by a mountainous landscape which divides theisland into two different worlds.

    At the heart of the mountainous range is the Tiede National Parkwhich features the spectacular Mount Tiede. Vast volcanic cratersgreet the visitor and imprints of lava flows remain etched on thecraggy landscape. A cable car will take you up to the very top ofthe volcano although some hearty souls do attempt to walk.

    Whale and dolpin watching is also popular. The waters aroundthe island are home to about 400 short-finned pilot whales andnumerous bottlenose dolphins and tours are available all yearround. Tenerife also has a well-deserved reputation as a culinarydestination with its excellent food being complemented by someaward-winning local wines which owe their success both to greatimagination and the subtropical climate.

    In addition to Hotel Las Madrigueras, visitors might want toconsider the plush five-star Iberostar Anthelia Hotel or thecomfortable and friendly Hotel Suite Villa Maria also five-star.     Harder, better, faster, stronger Jordan Cutforthchecks out the latest performance upgrades.

    Joy of sixBMW has released a new CompetitionPack for the M6.

    The main highlight is a significantpower upgrade of 40hp from thestandard M6 making total output now592hp. Torque has also been upratedrising to 516lb ft from 501lb fit. This hasimproved the performance figures noend: 0-62mph now takes 3.9 secondsor 4.0 seconds for the Cabriolet, 0-124mph now takes 11.8 seconds (overhalf a second quicker than the standardcar) and theres a new top speed of189mph if you choose to disable theelectronic limiter.

    Other changes include stiffer springs,dampers and anti-roll bars, a newmapping for the steering system, new20-inch alloys and black chrome quadexhausts.

    No word on a price yet but itsavailable from July.

    Competitive edgeThe 595 Competizione is a spiced-upversion of the already mad Fiat 500 Abarth.However, Fiat thinks the ordinary 595 isntenough so theyve increased the poweroutput and added a host of standardequipment.

    Power has been raised by 20hp from160hp making the total output of the 595 to180hp with 184lb ft of torque. This makesthe 595 sprint from 0-62mph in 6.7 secondswith a 140mph top speed. It can even do48.7mpg on the combined cycle.

    Standard equipment now includes aRecord Monza exhaust system, 17-inch alloyswith titanium finish, a race-bred Brembobraking system, red brake calipers, Sabeltsports seats, Xenon headlamps and parkingsensors.

    Prices start at 19,890 for the hatch,21,890 for the Cabriolet. On sale now.

    R-rated Jaguar?Upon the arrival of the new Jaguar XE, the fastest version you can buy is the XE-S which houses the same 335bhp supercharged V6 found in the entry-level F-Type.

    While this model is undoubtedly fast, it cant match the halo models made byrival companies BMW and Mercedes-Benz which are considerably morepowerful. As a result, Jaguars got a hot version of the XE in the pipeline to takethe fight to the unsuspecting Germans.

    Its called the XE-R, and while it hasnt been made official, itll most likelycome with the 488bhp V8 found in the F-Type roadster. Therell be a morefocused chassis, and an eight-speed ZF automatic will be the only choice.

    Expect prices to hover around the M3s 56,000 mark.

    Black magicNo, this isnt another hardcore version of one of Mercedes already hardcore AMG cars. No,this is a special edition that Porsche has created for its base 911 Carrera.

    Changes over the regular 911 Carrera include a completely black exterior with 20-inch 911Turbo style alloy wheels. Standard equipment includes auto-dimming rear-view mirrors, rainsensing windscreen wipers, cruise control, automatic climate control, heated leather seats,sport designed steering wheel and Porsche Communication Management (PCM) whichincludes a seven-inch colour touchscreen with satellite navigation.

    As its based on the base 911 Carrera, itll only be powered by a 350hp 3.4-litre straight-sixengine with the option of two or four-wheel drive and in coupe or convertible body styles.
