The Seminar

Whether you are currently alicensee, working for a brewery,wishing to take up this professionor just want to develop your ownknowledge of the licensed trade,so as to learn more aboutstocktaking, participation at thisseminar is essential. Nothing istaken for granted and the coursegoes from basics right up toadvanced stocktaking. Of course,it is impossible to createstocktakers over a three dayperiod, but the lecturers will giveeverybody present a very goodgrounding of the profession, whichwill give them the stepping stoneupon which to develop their ownbusiness or seek employment. Forexisting stocktakers this seminarwill iron out the cracks and givethem the capacity to develop theirown professionalism, alsosubstantially increasing thelikelihood of their passing theInstitute examinations and gainingprofessional status.

As you will see from the attachedsyllabus, the Institute has tried tocover all aspects of licensed tradestocktaking as well as food andretail. The syllabus is substantialand reflects the depth ofknowledge required by today’s

Stock Auditor. Evening workshopsare available for anyone strugglingon particular subjects, andhandouts are there in abundance.

The present course has evolvedover the past twenty years to thewell received course that it istoday. Course critiques reinforceour belief that it offers tremendousvalue . However, over the years,the costs have inevitablyincreased and it was decided torestructure the course to offereven better value for money. Forthat reason the course has beenreduced to a three day intensiveresidential course enabling us tosubstantially reduce the pricewithout compromising the qualityof the training.

Anyone entering a professionwhere people’sjobs aredependentupon theiraccuracy, mustbe properlyqualified andexperienced,and it is for thisreason that theseminars arerun – so as togive people thefacility to learn.

The course commences at 10.00a.m. on Tuesday with registration,and aims to finish by late Thursdayafternoon. It is to be held at theShireburn Arms, Hurst Green. Onthe Tuesday night there will be areception in the bar to giveparticipants the opportunity tomeet their colleagues.

As well as the obvious element ofhard work over the three days,delegates are encouraged to mixat a social level, to talk throughtheir own particular situationswith other participants andlecturers, to help them formulate,where appropriate, their career.In addition there is now anelement of preparation prior to thecourse in the form of a DVD thatwill be sent out a few weeks priorto the course. This has enabledus to shorten the length of theresidential element but retain thehigh standards.

Providing they have been presentthroughout, a certificate ofattendance will be issued todelegates at the end of thecourse, which can be used in jobinterviews or to progress theirassociation with potential clients.

The Shireburn Arms is a littlecorner of Old England for you tosavour. When it began life in 1679it was a farm with a series ofoutbuildings. Stonyhurst College,just one mile away is one of thefinest buildings in Lancashire andall England, acclaimed by AlecClifton-Taylor. A Jesuit school ofenviable reputation, responsiblefor the schooling of manyinfluential authors, Arthur ConanDoyle (Sherlock Holmes), J.R.Tolkien (Lord of the Rings), thewinners of seven Victoria Cross’sand the setting of many perioddramas and films. In fact, theShireburn Coat of Arms appearsonly in the college and in stainedglass in the hotel.

This historic hotel itselfcomprises of threebuildings which havebeen sensitivelycombined to provide aplace of charm andcharacter.

The “Shireburn” wassold by the Weld familyin 1831 and then run asa hotel by RichardParker. His Daughter, a

Dominican nun inherited the“Shireburn” and it became aconvent from 1856, who thenowned it until 1975, and was runby various landlords as a hotel. Onan interesting note, the wife of anearlier publican, Ralph Holden,was said to have murdered one ofhis relatives in 1834. However, sheclaimed that she “had only put thearsenic in the teapot, he hadchosen to drink the tea”. She washung at Lancaster Castle.

The Shireburn is a popular venuewith both delegates and lecturers.There are many fine restuarantswithin a short distance for thosewho want to explore this beautifulpart of the country.

From the M6Take Exit 31, joining the A59 towardsWhalley, Clitheroe and Skipton. Turnleft at the first set of traffic lights(continuing on the A59). MIKE MURDOCHMIKE MURDOCHF.I.L.S.A.F.I.L.S.A.

After leaving a family stocktaking firmin 1981, Mike started his own

business. He joined the Institute in1984 winning the George Webber award

for that year. He joined the Council ofManagement three years later and remained

for thirteen years actively involved in theTraining Seminars and the running of the Institute. Whilstexpanding his own successful business he indulges in his othergreat passion – wine. He left our Council for a time becomingTreasurer for the Association of Wine Educators. In 2004 herejoined Council but still remains a Wine Educator, a free-lancejournalist and Member of the Circle of Wine Writers. This enablesMike to have free access to the major wineries and vineyardsaround the world. Mike tries to visit at least one different wineproducing country per year whilst juggling his own business andInstitute commitments.

In 2008 Mike took over as Chairman of the training & examinationssub-committee.

CHRIS SWIFT F.I.L.S.A.CHRIS SWIFT F.I.L.S.A.

On leaving school, Chris undertook anapprenticeship in the kitchen of a Londonhotel. He returned to catering college,

obtaining an Ordinary National Diploma inHotel and Catering Operations, before

passing his HCIMA finals at Thomas DanbyCollege in Leeds.

He worked for many years in hotel management before branching offinto public house management in the Midlands. In 1985 he took hisfirst tenancy in Halifax, eventually ending up with four pubs under hismanagement. He started up his own stocktaking and consultancybusiness in 1987 and was a joint winner of the George Webber Trophyin 1989. He joined the Council of Management in 1995 and was theeditor of “The Stock Auditor” the magazine of the Institute until 2002when he took over responsibility for co-ordinating the marketing of the

Institute. In 2004 further changes at the Institute saw Christaking back the magazine and helping his wife, Diane, in theday to day running of the Institute.

After leaving school, Pat took upa career in retailing. He workedfor several national store groups,including Burtons and the CWS. Achange of direction took him intothe licensed trade in the 1960’swhen he joined WestminsterWines ( later to become PeterDominics ) in their stock auditdepartment. His main task was toassist in the setting up of a newcomputerised stock controlsystem covering the group’s 400plus off licence outlets. He movedto East Anglia in 1972, and joinedthe local arm of GrandMetropolitan’s managed housesystem, as a stocktaker. In 1979he left to start his own companywhich he ran until 1997, havingseen it grow to become one of thelargest in East Anglia. In that yearhe joined a small public housecompany as operations director,responsible for the day to dayrunning of some 18 houses. Hewas awarded the George WebberAward in 1986 and spent eightyears on the main Council of theInstitute, serving for a time asChairman of the training andexamination committee.

For anyone considering a career inlicensed trade stock auditing,membership of the Institute is animportant stepping stone.

Attendance on the course will give youthe basics but cannot possibly turn youinto experienced stock auditors overthe weekend. For this reason the longdistance mentoring scheme was set up.This allows associate members of theInstitute to be matched to anexperienced member, who because ofthe geographical distance does not feelthere is a conflict of interest in advisingnew members.

Rules are set between the two partiesbut basically the mentor is there for theawkward situations or general advicethat may be necessary.

Richard started his career as abrewery stocktaker with Eldridge,

Pope & Co of Dorchester in 1980.After eight years he decided that it

would be a good idea to venture outand work for myself.

Over the years he has had the privilege of working withmany people who have taught him far more than it ispossible to remember about this trade.

Along with his colleagues he currently runs a busycompany dealing with a very mixed selection of clientsacross Southern England. He is proud to have been amember of the Institute for over twenty years.

Produced on a CD thiscovers topics that we feel that should becovered but because of time constraints will not be coveredin full during the course. The videos cover food stock, keg andcask measurement as well as post mix minerals.

Some of the topics above will be addressed through the courseand any questions can be asked of the lecturers. The courseitself is very intensive and this small amount of preparation isvital to the smooth running of the course.

The Institute has nearly fourhundred members; it has beenactive for over fifty years andprides itself on the training givento those considering theprofession as a career.Stocktaking offers variety,constant contact with people, andresponsibility. Integrity and skillare paramount, and the I.L.T.S.A.offers a body which encompassespeople properly trained in theprofession. This gives themmaximum profile across thecountry, so that they can developtheir businesses under a commonumbrella, which is able to offerexpertise in many subjects andwhich creates a pool of properlyqualified and experienced people.

In 1991 the then association wasawarded Institute status by theBoard of Trade. This was in nosmall way attributable to thetraining seminars, which are nowrecognised and acknowledgedacross the country.

Associate membership of theInstitute is open to anyoneinterested in joining the

profession. To achieverecognition and full membership,appropriate examinations must betaken and passed. Fellowship isavailable after seven years.

The lecturers have now worked asa team over several years andhave developed a uniqueapproach.

None of them are professionalteachers, but all glean muchsatisfaction from the excellentcritiques returned at the end ofeach course. The seminar isupdated on an annual basis andmany changes are implementedas a direct result of participantinput.

Held in March and October eachyear these courses are usuallyfull; it is unlikely there will bemore than twenty-five delegateswhich enables one to one tuition.Participants are encouraged toseek help if necessary andlecturers are generally availableduring the early part of theevening to give personalassistance.

In 1989 the Institute published abook called ‘Taking Stock’, it isrecognised as the definitivetextbook on the subject ofstocktaking. A second re-print ofthat book is now available. Apartfrom that, it issues a bi-monthlymagazine, keeping members up todate with trade issues, holdsregional meetings, has a socialweekend each year, and offerssubstantial discounts on variousmerchandise and A.A.membership.

The Institute is very active, and keen that all Licensed TradeStocktakers should be involved. It markets its qualifiedmembers regularly, and ensures that everybody works tosimilar high standards.

The I.L.T.S.A. is the only bodyin Britain which representsLicensed Trade StockAuditors.

They are all enthusiastic,professional and keen toimpart knowledge todelegates.
