EASY HOMEMADE BURGERS
COST £2 (not including buns and/orsalad)SERVES 4TAKES 15-30min
450g lean minced beef (don’t buy thecheapest!) 1 heaped tbsp tomato ketchup 1 tsp ground garlic pepper and a littlefine sea salt (or ground black pepperand some garlic salt) A little sunflower oil or light olive oil
Tip the minced beef into a bowl, add agood dollop of tomato ketchup and sea-son generously with garlic pepper and alittle salt (or ground black pepper andgarlic salt). Mix together well, then di-vide the mixture into four and shapewith your hands into burgers. Lay on abaking tray, cover well with clingfilm andleave in the fridge until ready to cook.Just before cooking smear both sides ofeach burger lightly with oil. Heat a non-stick frying pan for a minute or two untilhot, then place the burgers in the panand fry for 2-3min each side, dependingon how thick you’ve made them. Add alittle oil if they seem to be catching.Serve in a warmed bun with a slice ofonion, a slice of tomato and salad.
THREE-MINUTE NOODLES
COSTS £1 SERVES 1TAKES 3 MINS
1 packet instant Japanese soba noo-dles with sauce Any of the following: A little freshlygrated ginger and/or garlic or half a tea-spoon of ginger and/or garlic paste A good squeeze of lemon or lime Some chopped fresh coriander leaves Some sweet chilli sauce Make up the noodles according to theinstructions on the packet. Once hot,stir in as many of the other ingredientsas you fancy. Eureka! Noodles are available from large super-markets and smaller shops. They arehandy to keep in store as a back up forlast minute friends coming over!
SMOKED MACKEREL, CUCUMBER
AND SOBA NOODLE SALAD
SERVES 2COSTS £1.50 TAKES 15min
100g soba noodles or whole wheatspaghetti 1 smoked mackerel fillet 4 spring onions ¼ cucumber 2 tbsp Asian-style low-fat dressing (seebelow) Salt and pepper (unless you use a pep-pered mackerel fillet)
DRESSING
Rice vinegar is not as acidic as winevinegar so you don’t need so much oil.If you can find organic sunflower oil at areasonable price, snap it up; it has amuch nicer, nuttier taste. 1 tbsp sunflower oil 1 tbsp seasoned rice vinegar 1 tsp soya sauce Shake or whisk together with a fork.
Cook the soba noodles or spaghetti tothe instructions on the packet, drainand rinse with cold water. (Break thespaghetti in half before you cook it.)
With a knife and fork ease the mackereloff the skin and break into roughchunks. Trim the roots and half thegreen tops off the spring onions, cutinto four, lengthways, then chop intoshort lengths. Cut the cucumber intosmall chunks (peel it first, if you prefer).Tip the noodles into a bowl, pour overthe dressing and mix well. Add the cu-cumber, spring onions and smokedmackerel and mix together again. Add alittle extra rice vinegar to taste and sea-son with salt and pepper. The dressingcan also be used on a crunchy salad.

Instead of throwing away veg-etables that are still usable why notmake a thick and rich sauce. Add
your vegetables to a tomato basedsoup and leave to simmer for a fewhours until the sauce is thick and
lumpy!!! Try pouring this over somepasta and sprinkling with
cheese.
