Hanging Rock Winery’s ‘Jim Jim’ Vineyard and winemaker John Ellis

Hanging Rock Winery was established in 1983 by John and Ann Ellis. The winery is located 3 km. from the internationally known landmark Hanging Rock, on the slopes of a small mountain known as the ‘Jim Jim’, in the very cool Macedon Ranges region of Victoria. The iconic Hanging Rock brand produces a multitude of premium wines including the multi-award winning ‘Jim Jim’ Sauvignon Blanc and Heathcote Shiraz.

FLAGSHIP & RESERVE WINES

In wine producers parlance ‘Reserve’ typically means a quantity of wine set aside for special or additional treatment at the hands of the winemaking team. This extra time/effort/cost is, obviously enough, reserved for batches of wine of such quality that the investment of resources is justified. Our investment has been one of time - the wine has evolved and matured remarkably; rich in fruit character, elegant in structure and style, beautifully balanced with fruit, oak and tannins all seamlessly inegrated. Released with approximately 6-7 years of bottle age (depending on the vintage.) It is a rich, elegant wine, beautifully balanced and with great cellaring potential. The colour is deep, intense purple/mulberry and the nose exhibits elegant, plum/berry aromas with a gentle oak presence and some mintiness. On the palate it has a silky texture, complexity, delicious plummy berry flavours and a good balance between the fruit, oak and tannin.

Heathcote Shiraz Reserve

The Heathcote region in Central Victoria is rapidly becoming the place to grow Shiraz in Australia. It features a deep strip of rare, very old, red Cambrian soil: soil that gives Heathcote Shiraz its distinctive character. The combination of low rainfall, hot summers and the red Cambrian soil creates a challenging environment in which the Shiraz vines thrive, albeit producing low yields and small berries, but with intense flavours. Powerful berry fruit aromas abound and rich, ripe blackberry fruit character is reinforced on the palate. The wine has excellent harmony between tannin and oak and a very long, satisfying finish. Cellaring is recommended and, in good conditions, the wine should cellar for fifteen plus years.

Macedon LD NV Late DisgorgedWith at least ten years of extended lees ageing, in this bottle, the wine achieves previously unseen levels of flavour development, complexity and refinement for an Australian sparkling wine. The components in each blend of Hanging Rock Macedon LD are aged on-lees from the moment primary fermentation is complete. The ageing process begins with the base wines which are stored on lees in old French oak barriques. These barriques contain the lees from many previous vintages and are never washed - this residual lees material playing an important part in developing the complexity that is the hallmark of this wine. Each Cuvée comprises 50% of the current vintage and the balance is reserve wine from all vintages back to 1987. The wine is blended after some two years of barrique maturation. The blend is approximately 60% Pinot Noir and 40% Chardonnay. Ageing then continues on lees in the bottle, in which the wine remains until disgorging takes place. The dosage is a low 2g per litre. The complex bready/biscuity characters of the palate are reminiscent of Bollinger, and very good acidity stretches out the long, lingering finish.

Unashamedly modelled on Krug and Bollinger non-vintage, this wine has elegance, style and flavour. The aroma is yeasty and bready, the palate is rich, creamy and complex. It is full bodied, definitely a dry (Brut) style, and made to go well with food. A 60/40 blend of Pinot Noir and Chardonnay, Macedon is made with the unusual Solera system where approximately 50 % of each vintage is retained for future blending. Each new release is a blend of 50% of the current vintage and 50% the blend of all preceding vintages commencing with 1987. This ensures a continuity of style and consistency of quality.

Macedon NV Brut RoséChampagne is so named because it comes from the Champagne region of France. The name ‘Champagne’ is carefully protected with regulations regarding plantings, varieties, viticulture and winemaking. Wine producers in the Macedon Ranges region have adopted similar rules for their own regional sparkling wines, which is called ‘Macedon’. Our ‘Macedon’ Rose is a non-vintage blend of 50% current vintage and 50% reserve wines dating back to 1987. The blend is barrel aged before tirage bottling and aged on-lees in the bottle for a minimum of 12 months. Salmon pink in colour, delicate in flavour, dry finishing and an ideal aperitif wine.

Hanging Rock‘Tarzali’ Riesling

David and Pauline Ross’s Tarzali Vineyard is at Warrenbayne at the northern end of the cool Strathbogie Ranges region. The 2005 vintage was the first release from this vineyard and showed great promise as the vineyard develops in future vintages. Tarzali displays many of the classic Australian Riesling characteristics; crisp and dry with lemon citrus flavours predominant. Smooth in texture, the wine has low sugar and a good acid levels indicate the wine has the structure to age well and develop toasty honey flavours. A solid acid backbone carries the fruit through to a dry finish.

‘The Jim Jim’ is a small mountain, elevation 750m, just near the famous Hanging Rock in the Macedon Ranges Wine Region of Victoria. It is cold by world viticultural standards, producing wines that have a lot in common with the cooler regions of western Europe.

Our cool climate 'Jim Jim' vineyard at Hanging Rock gives this wine its distinctive character. Long, slow ripening periods are the key to the wine's wonderful flavours. It is a herbaceous style with grassy and tropical fruit aromas and flavours. The fruit is well balanced with the acid producing a long, clean finish. It is an elegant, complex wine that will match beautifully with shellfish, particularly crab and oysters, vegetable dishes and dishes featuring herbs or mushrooms.

Kilfara Pinot Noir is made using traditional methods and fruit from cool vineyards in the Faraday area of central Victoria, the Macedon Ranges and the Yarra Valley. This is a medium bodied Pinot with intense varietal character and excellent palate structure. The tannins are soft and rounded but clearly evident. The nose is rich and gamey, with overtones of leather and spice. On the palate there are cherry and plum flavours with significant richness and depth. A good match with quail, duck, veal or pork dishes.

Hanging Rock ‘Kilfara’ Pinot Noir

Affectionately dubbed the ‘Son of Heathcote’ by our winemaking team, Cambrian Rise is a fine example of Heathcote Shiraz. Its final composition is inextricably linked to the creation of our flagship red wine - ‘Hanging Rock Heathcote Shiraz’. The fruit that does not suit our requirements for the final flagship Shiraz blend immediately becomes available for Cambrian Rise which exhibits all the desirable characteristics of our Heathcote Shiraz: impeccable solid structure, abundant tannins, intense, ripe fruit character and great palate length. The nose is lifted, with fragrant cherry/berry fruit aromas, the palate shows intense, almost sweet fruit, depth that lingers long and fine tannins in harmony with balanced oak treatment.

Hanging Rock Bendigo Cabernet SauvignonThe Bendigo region is recognised as the source of some of Victoria’s best red wines. A warm to hot and dry climate make it very suitable for most red grape varieties, this Cabernet Sauvignon is certainly evidence of that. Drip irrigation is used to control both the quality and quantity of the grapes in most conditions. A bouquet of black forest cake and black tea precedes a palate of sweet winter fruits and cassis. The palate is long and fleshed-out, holding on to the finish. Good acid structure and smooth tannins complete this delicious package. Ideal for immediate drinking and short to medium-term cellaring.

‘S’ is our dessert style wine. Made from Riesling grapes, it is a lighter, refreshing style; sweet, but not too sweet. Ideal with rich desserts or as a finisher. Serve chilled.

The Poppet Head Chardonnay is predominatly sourced from the Strathbogie Ranges, and was named after the tower like lifting structure built over the the top of a mine shaft. Our strategy with this premium fruit is to mature it in new French oak for twelve months. The resulting wine is packed with juicy melon flavours and restrained oak character. The structure of the wine - acidity, flavour and oak - all in balance, indicates that this wine will cellar well. This Chardonnay is a great all-rounder, and can be matched with just about anything! Try it as an aperitif, with a creamy pasta or fish.

Hanging Rock ‘The Poppet Head’ Chardonnay

Many of our wines are sourced from vineyards that were in areas of focus during the gold rush. The name ‘Rich Reef’ was inspired by the quartz reefs which were used to track gold deposits in mines. The fruit for this wine was sourced from premium regions including: Heathcote, Yarra Valley and the Macedon Ranges. The colour is a rich plum with a purple hue. The nose displays vibrant, uplifted, ripe berry aromas with hints of chocolate and all spice. The palate is rich, ripe and generous. It has a soft, round texture with robust tannins which adds structure and depth to the wine.

Hanging Rock‘Rich Reef’ Shiraz

This wine is a blend of approximately 60% Cabernet Sauvignon and 30% Merlot. Winemaking techniques are all aimed at elegance, balance and distinctive character. The style is elegant, with a complex nose and palate, with a firm dry finish. The Merlot contributes softness, middle palate richness and earthy, gamey and leathery characters. The Cabernet adds fresh berry fruit, minty varietal characters and the dry finish. Medium term cellaring will be repaid, but the wine is most enjoyable now whilst still relatively young.

sauvignon blancSourced from vineyards in the Strathbogie Ranges, the King Valley and Kilmore in central Victoria. Free-run juice was fermented as soon as possible after pressing to preserve the freshness and fruity characters.

Palate: A lively, crisp, refreshing wine, showing characters of gooseberries, lychees, snow peas with a touch of asparagus and stinging nettle.

Food Match: Great with appetisers such as artichoke dip, veggie dishes, fragrant salsads like Greek or Caesar, Thai food and sushi.

verdelhoSourced from the Baddaginnie Run vineyard in the Strathbogie Ranges region of Victoria. After pressing, free-run juice was fermented as soon as possible to preserve the freshness and fruity characters.

Palate: Fresh lemon, lime and tropical fruit characters - sweet fruit flavours that persist – but not from residual sugar.

Food Match: A truly varietal wine that drinks well on its own and also matches well with a wide range of food styles and particularly spicy Asian-influenced dishes.

petit noirSourced from the ‘Jim Jim’ Vineyard at Hanging Rock Winery in the Macedon Ranges, Victoria.

This special block of Pinot Noir was picked early in order to produce a wine that is light, fresh and low in alcohol, hence the name Petit Noir.

Palate: Light, bright and very lightly sparkling. It’s floral and fun with strawberry and cherry flavours. Designed to be the perfect summer drink, it should be served chilled.

Food Match: Ideal to drink on the verandah with snacks or with Japanese or light spicy foods such as Thai.

cabernetsCabernet Sauvignon, Cabernet Franc and Merlot from the Yin Barun vineyard in north east Victoria. Merlot from the Gralaine vineyard near Geelong and Petit Verdot from Colbinabbin Estate at Heathcote.

Our young French winemaking team has made a wine fitting of their homeland. Careful selection and blending of these famous French varieties has produced a classic food wine.

Palate: This lovely textured, full-flavored wine has balanced fruit character, acid and subtle tannin dryness; all persisting through a long, lingering finish.

Food Match: This is a food lovers wine, perfect with full flavoured and robust meat based dishes.

Sourced exclusively from the Ellis’ (no relation) vineyard in Heathcote, Victoria.

Palate: A lovely, round, silky textured wine. Sweet apricot and lime characteristics typical of the variety shine through. The wine is very well structured and has an exceptionally long lush finish.

Food Match: The lush richness of the wine makes it perfect with full flavoured food including spicy Thai, soft cheeses, pâté and even light desserts.

This cool climate wine was crafted with grapes from the Yin Barun vineyard in north east Victoria.

Palate: A finely structured aromatic wine, with lower alcohol, crisp acidity and displaying all the hallmark apple and pear characteristics of the variety.

Food Match: Delicious on its own or match with lighter dishes such as seafood.

Rock Chardonnay is full flavoured, yet fresh and light. Un-oaked, it is made with carefully chosen Victorian fruit. The result is a flavoursome wine, with fresh varietal characteristics and ready to drink immediately it is bottled. It goes well with most seafoods, white meats and pasta dishes.

ROCK CHARDONNAY

Sauvignon Blanc and Semillon are a happy combination; fresh, aromatic fruit flavours, complexity and length on the palate, all tied together with a crisp clean finish. Refreshing, on its own or when served with salads and seafood.

ROCK SEMILLON SAUVIGNON BLANC

Rock Merlot is a soft, smooth, medium bodied wine. It has soft spicy aromas on the nose the palate has fleshy, ripe cherry/plum flavours with just a hint of sweet spice. A lightly oaked, ‘drink now’ style, Rock Merlot goes with many dishes.

ROCK MERLOTA blend of Shiraz, Grenache, Mourvèdre and Pinot Noir. Medium bodied with some obvious tannin; the richness of the Shiraz, lively freshness of the Pinot Noir and the spicy ripe Grenache and Mourvèdre combine to produce a great food wine. Rock Shiraz blend goes well with most meats and richer pasta dishes.

CAbERNET SAuviGNoNPETER DouGlAS SElECTioN Excellent growing conditions for the 2006 vintage have produced this beautifully balanced Cabernet Sauvignon. The generous and complex fruit characters have yielded aromas of blueberry, blackcurrant and cedar. Twenty four months in new and old French oak hogsheads provides length on the palate and softness in texture. The wine has excellent tannin balance and cellaring will produce greater complexity and enhance the cigar box and chocolaty characters. The Coonawarra region lies within South Australia’s Limestone Coast zone, 380kms south east of Adelaide.The famous Terra Rossa is red brown topsoil laid over a thin layer of calcrete sitting on a white limestone base which provides its world famous terroir. The elegant wine is ideal with any red meat such as chargrilled lamb or beef and a perfect match to any duck dish or hard, mature cheese.

SHiRAz Rolf biNDER SElECTioN The 2007 vintage was a challenging one and included continuing drought and some frosts. The resulting low yield helped the quality of the finished wine. The overriding feature of 07 Barossa wines is the aroma. The vintage conditions also challenged the mid palate of the wines. Expert winemaking has produced a Shiraz of distinction.“This wine has a fierce deep red, almost cherry black colour.Highlighted by a deep mocha chocolate aroma with a subtle hint of spicy (white pepper) oak. The rich and inviting palate with vast Barossa warmth and a bright intensity of flavour has evidence of shiraz spice, chocolate and delicate cassis which are mingled with soft, elegant but long tannins giving a persistence of flavour to please now and for the next five years.”

“Hailing from the Marlborough NZ region this classic Sauvignon Blanc is clear and bright with a colour of pale straw. PiNoT GRiGioPETER DouGlAS SElECTioNThis refreshing white wine comes from grapes grown in the ‘Tre Venezie’ - an area encompassing Alto Adige, Friuli, and Veneto—where it produces a light flavorful wine with bright acidity. This grape is also known as Pinot Gris in France“This Pinot Grigio is golden in colour with an aromatic bouquet with hints of white flower, apples and pears; this follows through on the palate with a medium body, lovely freshness and a persistent finish”. A perfect accompaniment for light meals, white meat, fish and mild cheeses.

MERloTDoMiNiquE PoRTET SElECTioNThis great ambassador for Yarra Valley Merlot is captivating to the eye, deep red in colour with beautiful clarity. Delicate on the nose with the plum and cherry aromas will develop finesse. The palate is round with overtones of small berries and spice. Aged in French oak, the definition is clearly from a cool region in a ripe year giving the wine good complexity and excellent balance. The tannins are soft and gentle giving it a velvety mouth feel and freshness. Great drinking for the next 5 years. Ideally suited to Duck, Game, Lamb dishes or your favourite Cheese plate.

CHARDoNNAyPETER DouGlAS SElECTioN2007 was a stunning vintage in Margaret River. Arriving early, perhaps more to a warm spring than an excessively warm summer, the flavours and sugar developed quite quickly with the resultant fruit showing enormous intensity and lovely natural acidity.“This modern Australian Chardonnay is richly textured complex wine without being obviously oaky. It has a bouquet of fresh melon, peach fruit with roasted nuts and oatmeal from the barrel ferment. The palate is rich with grapefruit and melon upfront finishing with a spicy almost almond note. Time in the bottle will see even more complexity with development of toasty characters”. – Peter Douglas

MoSCATo D’ASTi PiEDMoNT - iTAly REGioNThis wine is obtained by 100% Moscato Bianco Grapes, cultivated in the vineyards on the beautiful hills around the provinces of Asti, Alessandria and Cuneo, in the Piedmont region. It shows an attractive straw-yellow colour with golden highlights. The aromatic bouquet displays notes of white flowers and fruits such as peach, apricot and orange. On the palate, it is delicately sweet, aromatic and fresh, with a low alcoholic content which makes it particularly delightful.”

MoSCATo PiCColoThis delicate, slightly frizante wine hails from the Lombardy region of Northern Italy. Pale yellow in appearance with lovely golden hues — a delightfully fragrant and aromatic wine with floral notes of orange blossom mixed with tropical fruits and a touch of wild honey.A deliciously creamy mousse with melon fruits, soft but lively and lingering presistence is well balanced with a touch of acidity. Often referred to by Italians as their favourite brunch wine, should be served chilled.

CAbERNET SAuviGNoN2006 SiGNATuRE SERiESA near ideal season with mild conditions experienced throughout the growing season with warm dry conditions during March and April resulting in a very good vintage. Although the yield was below average, the Cabernet’s showed great varietal characteristics and structure with a rich ripe flavour profile and generous ripe tannins. Colour - Crimson almost blackNose - Very ripe black currant, blueberry and black olive fruit with ‘coffee grinds’ oak character. There are cedar and violets evident within a short time in the glass.Palate – blackberry and sweet oak flavours spill onto the palate giving this wine a plump satiny character. The flavours are very persistent with toasty oak and typical cabernet cassis

Shiraz CaberNet- 2006

This Two Eights Shiraz Cabernet is deep ruby red in colour with hints of purple. It is packed with an abundance of ripe berry fruit, plums and cherries. The palate consists of vibrant ripe berries, excellent length and a full soft finish with a touch of attractive oak and raspberry ripple creaminess.

South Australia’s rich diversity of climates provides for equally diverse styles – From its famous red wine regions of Coonawarra, Barossa Valley and McLaren Vale to the cool climate vineyards of the Adelaide Hills producing the most delicate of whites and sparkling wines to the sun drenched Riverland, South Australia remains the powerhouse of Australia’s wine Industry

The 2006 growing season saw exceptional weather with a extremely hot January followed by a cool, dry period as the grapes began to ripen in February. This cooler weather allowing the colour and flavours to develop fully in both varieties with high acidity levels present.

The Two Eights Shiraz Cabernet is an ideal partner to grilled meats or Pasta.

SauvigNoN blaNC SemillioN - 2008

This Two Eights Sauvignon Blanc Semillon has lifted passion fruit characters and aromas which combine beautifully with generous gooseberry and citrus blossom flavours. The palate displays a fine bracing acidity that provides a refreshing clean finish.

Pemberton — Gazetted as one of Australia’s newest wine producers, the small Pemberton Wine Region has already established a reputation for being one the most exciting emerging wine regions. Covering the towns of Pemberton and Northcliffe, the region is home to many picturesque vineyards that adjoin karri forests. It combines southern latitude with high altitude and has a relatively cool climate. A combination of good winter rainfall in the southwest growing regions, and below average falls in the Great Southern, resulted in an excellent back-up to the 2007 vintage. White styles are exciting with high varietal definition evident.

Enjoy this wine on its own or best served with a creamy pasta, white meats or seafood. Also a lovely partner to spicy Asian or Indian dishes.

The fruit for this rosé was destined for the Flaxman’s Valley Syrah and Stonewell Valley Shiraz. 10% of the juice was bled off the red ferments after approximately 20 hours, then wild yeast fermented in 1 year old French oak barriques and racked to tank after 6 months. I blended in 5% Sauvignon Blanc from the Adelaide Hills, then fined and filtered. The result has a deep colour (hence the wine’s name) and is dry with great fruit expression, showing savoury cool-climate Shiraz character and a hint of phenolic grip.

Adelaide Hills Chardonnay Piccadilly Valley

This elevated valley, on the backs of Mts Lofty and Bonython, has the proven potential for greatness as a Chardonnay terroir. This wine comes from two blocks, both sitting at over 500 metres, that ripen their grapes through cold nights and cool autumns so providing taut, citrus minerality. Very low extraction rates, brief cold settling (grape solids are good, squeaky clean wine is boring!), wild yeast barrel ferment (French barriques, 20% new), and 11 months on yeast lees.

Barossa Valley ShirazStonewell Valley

The Triangle Block in the Stonewell sub-region of the Barossa lies on distinct red, iron-rich soil and is managed by biodynamic principles. This 2008 vintage was picked on the 20th February before the March heatwave. Low yields, hand-picked, wild yeast ferment, 10 months on fine lees and 2 years in barrel (French oak, 55% new Francois Freres) deliver a complex vineyard expression of earthy plum, mulberry and prune, chewy tannins, coffee and cocoa. Unfiltered.

Eden Valley SyrahFlaxman’s Valley

The Naimanya vineyard lies on the western lee of Flaxman’s Valley. At 525 metres it’s one of the highest Shiraz vineyards in the Eden Valley and the wider Barossa region. A steady, gentle season until a record 15 day heat-wave in March. For this vineyard it brought a slow season towards fruition, delivering subtle savoury characters alongside trademark Eden Valley cochineal and sweet blueberry fruit. The grapes were crushed and wild yeast fermented, 2 years in barrel (French oak, 50% new Francois Freres). No fining or filtration.

The Winemaker Michael Hall studied wine science at CSU, graduated as dux in 2005, and has always tried to work for the people whose wines he likes the most. This includes stints in Australia with Cullens, Giaconda, Henschke, Shaw and Smith, Coldstream Hills, Veritas and in France with Domaine Leflaive, Meo-Camuzet, Vieux Telegraphe and Trevallon. I now work for Rocland in Nuriootpa. “Fine wine should derive its qualities from the vineyard, the source of all personality and individuality. Its beauty is in its diversity and capacity to express the particular conditions of a great site at a given time. As winemaker my role is to reveal the potential of the fruit and help express its individuality through fermentation and beyond.”

These award winning wines are handcrafted from what was a 20 tonne winery located on the granite slopes of Mt Alexander at an altitude of 450 m and is named after the aboriginal word for this distinctive central Victorian landmark. The cool climate and the best of traditional winemaking methods were presided over by winemaker Matt Hunter– a vigneron in the old sense of that word. Therefore production of the premium wines is purposely limited to 1500 cases per year and these wines are accepted by restaurants and customers at the premium end of the market.

RoSEShiraz, Cabernet Sauvignon,Pinot Noir & Merlot grapes contribute to the sparkling inviting translucent damask pink colour of this wine. This Rosé is made in the dry style to complement food dishes- especially pasta and chicken or as an end of meal palate cleanser. Aroma of spice and cherry followed by a hint of redcurrant. Creamy mouthfilling palate texture shows hints of raspberry and a nice clean acidity and good palate length with an aftertaste of mulberry & almonds. 172º Riesling – Watervale, Clare Valley 2009

Pale in colour with green hues this wine exhibits delicate floral aromas of jonquils and bath powder followed by citrus fruits and is typically limey. In the mouth the wine expresses citrus fruits & hints of passion fruit with balanced acidity giving length and persistence to a clean and intense palate.

429º Shiraz – Clare Valley 2008

Deep red with purple hues this shiraz shows intense dark berry fruits on the nose along with pepper dark chocolate and a little mint. The generous palate is finely structured with good line and firm tannins giving rise to good length and persistence.

516º Shiraz – Ebenezer – Barossa Valley 2008

Dense red / purple in colour, this wine shows blackcurrant fruit on the nose with underlying dark cherry notes lifted with cinnamon & spice, dark chocolate and a hint of vanilla. The palate is full and powerful with firm tannins tying the wine together and giving great length and persistence of flavour*2009 Vintage due end of 2010.
