Ways to Give BackLooking to give back to the Durham

community? Making plans to shop for your holiday gifts? Consider donating or volunteering this year with the following organizations! By taking the time to make crafts with children at a Holiday Bazaar or drop off gift donations for Adopt-A-Family, you can make a positive impact this holiday season.

If you’re heading to the mall for some holiday shopping, consider buying a few extra gifts! The Salvation Army provides children and families with Christmas gifts every year that they would not receive without donations from students and residents in the Durham community.

The Angel Tree program pairs over 1,700 children ages 0 to 12 with individuals who donate gifts every year. You will be assigned to one child, learn his or her name, age, gender, clothing sizes and “wish gifts,” so you can shop specifically for that child.

The Adopt-A-Family program is similar, but instead of adopting one child, you adopt an entire family to purchase gifts for. Price limit is $125.

All gift donations must be dropped off by December 6th at the Salvation Army location on Liberty Street. Call Debbie Avolin to get involved.

StepUp Ministry: Holiday Store1701 Oberlin Rd, Raleigh, NC 27608(919) 781-0156

StepUp Ministry is hosting a holiday store for its clients that will allow parents to purchase gifts at 10% of their retail value for their children. All of the proceeds from the holiday store will support StepUp Ministry’s Life Skills class throughout the year.

Donations are need by Friday, January 3, 2014 in the United Way office.

InterAct is a United Way agency that provides safety and support to victims and survivors of domestic violence and sexual assault. At their annual Holiday Bazaar, children can design holiday arts and crafts, “shop” for donated holiday gifts, and wrap a gift basket to give to their mothers as a present. Mothers also have the opportunity to shop for their children among the donated gifts.

Donate: Toys and clothes for kids, baskets for moms, and gift-wrap

Volunteer: Help set up the bazaar on Tuesday, December 10th from 6 p.m. – 8 p.m. Serve as a “personal shopper” for mothers and children at the bazaar on December 14th.

Treat your family to something new this holiday season

Chocolate Pots de CrèmeIngredients:6 oz bittersweet chocolate1 cup heavy cream1 cup half and half1/3 cup sugar2 eggs4 egg yolks1/4 tsp fleur de sel with Piment d’Espelette plus a little for sprinklingWhipped cream, for on the sidedrizzle of orange olive oil

Directions:Preheat oven to 300 degrees. Put 6 one half cup ramekins in a baking

dish with sides.

Heat cream and half and half in a saucepan until it bubbles. Add chocolate and stir until melted. Add sugar and stir until dissolved.

Whisk together the eggs and egg yolks. Whisk vigorously and slowly add chocolate mixture. Stir in the salt. Strain the custard into a pitcher or bowl and divide evenly among the ramekins. Bake for 30 minutes until the sides are set, but the middle still jiggles slightly. Cool to room temperature then chill at least 3 hours. Serve with softly whipped cream and a drizzle of orange olive oil. Sprinkle lightly with more salt.

Directions:Heat a marshmallow over the flame until it begins to brown and melt, then place on top of a Goodness Gracie Toffee Cookie.

Break your selected Wild Ophelia chocolate bar into squares, and place one piece on top of the melted marshmallow. This will melt the chocolate.

Place another cookie on top, sandwiching everything together.Repeat!

Ingredients:5 Tbsp butter5 Tbsp flour1 tsp Dijon mustard1½-cups milk2 piquillo peppers, minced and blotted dry5 egg yolks6 egg whites6 oz. sharp Cheddar cheese, finely grated¼-cup Parmesan cheese, gratedsalt and pepper to taste

Directions:Melt butter in a 3-qt saucepan, then stir in flour and mustard. Cook 2 minutes,

stirring. Using a wire whisk, stir in the milk and cook, whisking, until mixture comes to a boil. Reduce heat and simmer, stirring, for 2 minutes. Add the peppers.

One-by-one, beat in the egg yolks, whisking well after each addition. Turn off heat.

Stir the Cheddar cheese into the mix. Taste and add salt and pepper as needed.

Thoroughly coat ramekins with butter. Sprinkle the inside of each ramekin (bottom and sides) with Parmesan cheese. Set aside.

Whip egg whites with a pinch of salt until they form definite peaks.

Thoroughly stir ¼ of these whipped egg whites into the cheese mixture. Gently fold the remaining whites in, but only until you can no longer see white streaks in the mixture.

Spoon soufflé evenly into the prepared ramekins and bake at 325° for 25 to 30 minutes.

Remove soufflé from the oven and serve immediately

Pimeto Cheese Souffle Lazy Girl Berry CobblerIngredients:1/2 cup unsalted butter1 cup Southern All-Purpose Flour1 1/4 cup buttermilk1 cup paked light brown sugar1 tablespoon baking powder1/8 teaspoon salt4 cups fresh blackberries

Directions:Preheat oven to 375 degrees

In a 10-inch cast-iron skillet, melt the butter in the oven while it is preheating. Once the butter is melted, remove the skillet from the oven.

Meanwhile, whisk together the flour, brown sugar, baking powder, and salt in a medium mixing bowl. Whisk the buttermilk into the flour mixture.

Pour the batter over the melted butter in the hot skillet. Sprinkle the blackberries evenly over the batter.

Bake for 50 minutes. Serve hot, warm, or at room temperature.
