We believe that no dish can be better than its ingredients, and that the best ingredients are usually local. Freshness is ephemeral and geography expresses itself in the taste of the foodsometimes subtly and sometimes pro-foundly. The foods and wines of our region share a similar motherhood of soil and weather, making for happier culinary mar-riages than those from dissimilar climates. The Herbfarm believes that chefs who cook with local ingredientsseason by season, year after yeardevelop a more complete understanding of their foods than chefs who do not. This understand-ing can give rise to greater expressions of the food, its preparation, and enjoyment. The Herbfarm believes that support-ing local farmers, foragers, cheesemakers, wineries, and fishermen helps preserve and promote the foundation of regional cuisines.

Therefore, we do our best to secure the finest and most interesting wines from the 900 wineries within a days drive. We define our region as from the Russian River in California to British Columbia to the north, and from Puget Sound and the Willamette Valley in the west to the high vineyards of Idaho to the east.

And partake of Rare Treasures from throughout the World!Our cellar of more than 23,000 bottles encompasses what is most likely Americas largest selection of Northwest wines, as well as many rare and hard-to-find bottles from throughout the world. Explore the best the world has to offer. Our sommeliers are pleased to offer advice as well as to fulfill your requests. To the best of our knowledge, the wines in our col-lection have been kept under controlled temperatures and humidity since their release. Though we believe our older bottles to be sound, each wine has its own history. For some wines of this age, there are often no good wines or vintages per se, just good bottles.

Enjoy cellar-aged wineSadly, most wine in America is consumed within a few hours of its purchase. Similarly, most res-taurants deal with current vintages and releases to optimize inventory turns. The result is that many people have not experienced the pleasure of well-aged wine with complex organic and earthy aromas and flavors. The Herbfarm offers not only current releases, but great depth of mature wine for you to explore.

Corkage for your bottleWe will gladly open any standard-size bottle not on our list for $35 per bottle. We ask that you make advance arrangements for bringing your special bottle. One bottle per couple; two bottle per party maximum.

Take some wine home, tooThe Herbfarm is rare among Washington State res-taurants in that our liquor license also allows us to sell bottles for you to take home. If you see some-thing youre interested in for your home cellar (or as a great gift), let us know. Many of the bottles on this list are, to the best of our knowledge, available nowhere else.

St. Innocents Mark Vlossak was reading an article in Esquire magazine years ago. Andr Tchelistcheff said that Oregon might one day produce Americas best sparkling wines. Inspired, Mark came to Oregon. Unfortunately, the time and economics of sparkling wines mean that these are the last St. Innocent sparklers. Enjoy them while they last!

Argyle Winerys Roland Soles has a masters degree in enology from UC Davis. He crafts some of the finest sparkling wines in America. Theyve been served on a number of occasions at the White House.

Bollinger, founded in 1829, is one of Champagnes few remaining family-owned Grande Marque houses. It is renowned for the high percentage of Pinot Noir and for the extra aging on the lees (spent yeast) that its Champagnes receive.

Though the best-known names in Champagne are still the venerable Houses, theres a growing trend for the grape growers themselves to make Champagne. What is the difference? The big houses tell us that the greatness of Champagne comes from the ability to blend, to create a distinctive house style that can be experienced bottle after bottle, year after year. The growers counter that they are expressing terrior, a sense of place, in their bottles. Is one right and the other wrong? Not at all. Northwest Chardonnays run a range of styles. Washington State Chardonnay tends to be a fuller style than those from Oregon, but the best Oregons can be very sophisticated indeed. We especially like Washington Chardonnay whose fruit has come from the Celilo Vineyard and Cold Creek Vineyards, though there are some other great sites, too. In Oregon, the new Dijon Chardonnay clones are now expressing themselves. These clones make a huge difference, allowing good producers to make Chardonnays very reminiscent of white Burgundy.

Myron Redford founded Amity Vine-yards in 1976. He is a leading proponent of Oregon Pinot Blanc. His version expresses beautiful fruit and a zesty, mineral-like backbone which makes it one of the most food-friendly wines for the table.

Melon what?Melon is the Melon de Bourgogne grape. It was a native of Burgundy until it was all uprooted in the early 1700s. From there it was introduced in the Loire Valley where today it makes the famous Muscadet wines. Oregon Melons tend to be a bit fuller-bodied and fruitier than those of the Loire in France. They are a nice accompaniment to lighter seafoods and sum-mer vegetables.The best of them can age for some years.

The 1975 Eyrie Vineyards South Block Pinot Noir

In Paris in 1979, the French food and wine maga-

zine GaultMillau sponsored an Olympics

of the Wines of the World. Thirty-three of

the worlds wine regions entered 586 wines.

In the final blind-tasting competitions, the

Eyrie Vineyards 1975 Oregon Pinot Noir

placed third in the Burgundy category.

For the French, there was a good deal of

consternation regarding the number of

foreign wines that had outscored the home

team in the Olympiads. Twelve of these

winners were challenged to a rematch to

take place in the heart of Burgundy itself.

On the 8th of January, 1980, 20 French,

English, and American wine judges gath-

ered in Beaune at the 1,000-year-old Hall

of Justice of the Dukes of Burgundy. The six

top-scoring foreign Pinot Noirs and Char-

donnays from the Olympiads were judged

again, this time against the finest Burgun-

dies of the best vintages.

The Eyrie Vineyards 1975 South Block

Pinot Noir finished just two-tenths of a

point behind the 1959 Joseph Drouhin

Chambolle-Musigny. The result was seen (at

least at the time in America) as a far-reach-

ing victory for the vision of Eyries founder,

David Lett, who moved from California to

Oregon to pursue his controversial plan to

grow Pinot Noir in cool climatic conditions.

As a result of these Wine Olympics,

others took notice, and the seeds of the

modern era in Oregon viticulture were

planted. With the help of David Adelsheim

Myron Redford is a native of Seattle. He worked as a cellar rat at Associated Vintners (now the Columbia Winery in Woodinville) before relocating to Oregon. There he made his first barrel of Pinot Noir in 1976. Myron does things his own way, typically using little or no new oak on his Pinot Noirs. He believes that this approach lets the grape better speak for itself.

Michael Etzel crafts a large and elegant version of Pinot Noir. His beaux frre (brother-in-law) and partner is the wine critic, Robert M. Parker, Jr. As the years have passed, Michaels hand has lightened on the wine and they are now even more balanced and expressive. The wines of the mid-and-late 90s are drinking particularly well.

The decomposed volcanic soils of the Red Hills of Dundee really are red. This region was the first planted to Pinot Noir in Oregon and still remains the most densely planted in the state.

From his first planting in May of 1990 until today, former CBS newsman Doug Tunnell has relied on the basics. All his fruit is estate grown and certified organic. All Brick House wines are produced and bottled by hand, and theyre begun with indigenous (or wild) yeast fermentations.

Vronique Drouhin-Boss crafts some of the most classic Pinot Noirs of Oregon at Domaine Drouhin Oregon. Veronique is the daughter of Robert Drouhin of the venerable Maison Joseph Drouhin in Beaune, France. DDO Pinot Noir shows a remarkable continuity of style across vintages. Like most fine Pinot Noir, the wines give their full potential with a few years in the cellar. Laurne and Louise are barrel-selected cuves named after Vroniques daughters. The DDO Chardonnay is named after her son, Arthur.

David Lett of the Eyrie Vineyards was essentially the founder of the modern wine era in Oregon. David died in October 2008. He had strong opinions and did not believe that Pinot Noir should be a big wine. His versions were always elegant, long-lived, and really shine when combined with food in a fine mealwhich is what Pinot Noir is all about.
