Ingredients

8 slices bacon½ cup chopped onion1 ½ lb ground chuck2 tablespoons Worcestershire sauce 2 teaspoons Dijon mustard1 teaspoon prepared horseradish ¼ teaspoon salt, ¼ teaspoon pepper 4 slices Cheddar cheese4 sesame seed hamburger buns, toasted2 cups shredded iceberg lettuce1 (6-oz) can French fried onion rings 6 tomato slices (optional)

Preheat grill to medium-high heat.

Cook bacon in a large nonstick skillet over medium-low heat until crisp; drain on paper towels, reserving drippings in skillet.

Add onion to hot drippings, and sauté over medium heat until tender; drain.

Combine ground chuck, Worcester-shire sauce, mustard, horseradish,salt, pepper and cooked onion.

Shape into 4 patties.

Grill, covered with grill lid, 6 minutes per side or until a thermometer reads 160°F.

Top each patty with cheese; grill 2 minutes or until cheese is melted.

Place burgers on bottom halves of buns with lettuce, onion rings, tomato (if desired), baconand desired condiments.

Cover with top halves of buns.

*Note: You can also cook the burgersin the skillet, if desired.

Ingredients

1½ lb ground beef1 cup finely chopped fresh mushrooms½ cup finely chopped onion1 tablespoon balsamic vinegar½ teaspoon salt4 slices provolone cheese½ cup mayonnaise2 tablespoons pesto4 sesame seed hamburger buns, toasted or sub sliced bakery bread6 leaves lettuce 2 tomatoes, thinly sliced

Preheat grill to medium-high heat.

Combine ground beef, mushrooms, onion, vinegar and salt.

Shape mixture into 4 patties. Grill, covered with grill lid, 6 minutes per side or until a thermometer reads 160°F.

Top each patty with cheese; grill 2 minutes or until cheese is melted.

Stir together mayonnaise and pesto.

Spread desired amount of pesto mixture over cut sides of buns.

Place burgers on bottom halves of buns with lettuce and tomatoes; cover with top halves of buns.

Ingredients

1 ½ lb ground beef3 tablespoons taco seasoning mix3 tablespoons diced pickled jalapeño peppers8 slices pepper Jack cheese1 cup mayonnaise¼ teaspoon minced chipotle chile peppers in adobo sauce (from a can)4 sesame seed (or wheat) hamburger buns, toasted1 ripe avocado, pitted and thinly sliced6 romaine lettuce leaves1 tomato, thinly sliced

Preheat grill to medium-high heat.

Combine ground beef, taco season-ing mix and jalapeño peppers using hands.

Shape mixture into 4 patties.

Grill, covered with grill lid, 6 minutes per side or until a thermometer reads 160°F.

Top patties with cheese; grill 2 minutes or until cheese is melted.

Stir together mayonnaise and chile pepper; spread desired amount on cut sides of buns.

Place burgers on bottom halves of buns with avocado, lettuce and tomato; cover with top halves of buns.

Ingredients2 lb small red potatoes1 tablespoon salt¾ cup mayonnaise3 tablespoons buttermilk3 tablespoons coarse-grain Dijon mustard¼ cup chopped red onion¼ cup chopped celery¼ cup chopped fresh dill*½ teaspoon salt, ½ teaspoon pepper

cooking DirectionsBring potatoes, 1 tablespoon salt and water to cover to a boil; cook 15 minutes or just until tender.

Drain potatoes, and let cool slightly.

Cut potatoes into quarters, and place in a large bowl.

Whisk together mayonnaise, buttermilk and mustard; pour dressing over warm potatoes.

Add onion, celery, dill, ½ teaspoon each salt and pepper, and gently toss together.

Chill at least 2 hours. Serve chilled or at room temperature.

*Note: To pair with Mushroom-PestoBurgers, substitute fresh basil for dill. To pair with Over-the-Border Burgers, substitute fresh cilantro fordill.

Classic Potato Salad

Ingredients1 (28-oz) can home-style baked beans with bacon1 small sweet onion, chopped½ cup ketchup¼ cup yellow mustard2 tablespoons light brown sugar

Stir together beans, onion, ketchup, mustard and brown sugar.

Spoon into a lightly greased 1-quart baking dish.

Bake 45 minutes or until thoroughlyheated.

Ingredients1 cup flour3 cups sugar, divided½ cup unsweetened cocoa1 ½ teaspoons baking powder½ cup butter, melted½ cup canola oil4 large eggs, lightly beaten2 teaspoons vanilla extract, divided1 cup chopped pecans or walnuts2 ½ tablespoons cornstarch3 tablespoons unsweetened cocoa1 tablespoon butterPinch of saltVanilla ice cream

cooking DirectionsPreheat oven to 350°F.

Stir together flour, 2 cups sugar, ½ cup cocoa and baking powder in a bowl.

Stir in melted butter, oil, eggs and 1teaspoon vanilla until well blended, using a wooden spoon.

Stir in nuts. Pour batter into a greased 13- x 9-inch pan.

Bake 30 minutes or until a toothpick comes out almost clean.

Meanwhile prepare the Fudge Sauce: Stir together remaining 1 cup sugar, 1 cup water, cornstarch and 3 tablespoons cocoa in a smallsaucepan.

Cook over medium heat, stirringconstantly, 6 to 8 minutes or until thickened.

Remove from heat; stir in 1 tablespoon butter, remaining 1 teaspoon vanilla and salt.

Cut brownies into 15 bars.

Serve ice cream over warm brownies; drizzle with Fudge Sauce.
