Conclusions and Future Prospects

Although bioactive peptides, such as ACE inhibitors, have not yet been utilized in the meat industry, meat product with such activity could open up a new market. Because several food products containing antihypertensive peptides, such as sour milk and soup products. have been marketed for hypertensives in Japan.

In the dairy industry, the main approach for improving the beneficial physiological properties of products has been discussed in the field of meat science and industry.
