New Taste of modern Japanese
The Japanese word Kisso means ‘good news’
which is the perfect description of the latest
edition for a restaurant of 20 year. It’s strikingly
contemporary with the use of light wood slid-
ing panels to divide the room yet balanced with
the warm and cosy elements such as the row of
earthenware pots rising high above the wood
flooring.
The concept was created by the much travelled
Chef Shinsuke Yonekawa who became aware
of the truly unique qualities of Japanese cui-
sine working on cruise ships. Then while as
Sous Chef at Hal Yamashitta one of Tokyo’s
finest contemporary restaurants taught him
exciting and new ways to express himself
through his food.
His own restaurant Toki in the Philippines, won
“Best Restaurant Award” by Philippines Tatler
Magazine and received a Gold Award in the
USA Rice Federation Sushi. With that portfolio
he was identified as the culinary talent to over-
see the re-conceptualising of Kisso,
“Having previously re-conceptualised three
Japanese restaurants in Japan and one in the
Philippines,”says Chef Shinsuke,” here I was

given the freedom to design the kitchen, cre-
ate my seasonal menu that changes based on
the availability of ingredients freshly import-
ed from Japan. I even selected the plates on
which my food will be presented, every thing
come from my kitchen is made from fresh raw
ingredients. I have a strong working relation-
ship with my fish suppliers in Japan and I im-
port everything chilled never frozen four times
a week. My sushi rice is grown for me by a
Japanese farmer in Chiang Rai for an authen-
tic taste and texture with a reduced carbon
foot print.”
I started my meal with Shabu-Shabu salad
with a sesame and ponzu sauce that can be
ordered with pork or beef. The lettuce he uses
is delightfully fresh with and audible crunch
as I bit into the leaves. . “I used ponzu in this
dish,’says Chef Shinsuke, “as its sour flavour
helps to refresh the palate.”
The next dish spicy salmon, avocado and
salmon roe sushi is his contemporary take on
the California roll. Again with this dish the
overriding impression was of freshness, made
a la minute, rice was succulently moist with
the perfect texture.
With his assorted Sashimi selection the qual-
ity of the raw fish shone on the plate, perfect
texture, moist and odour free.
The main course was charcoal grilled Canadi-
an snow fish with a four mushroom, shitake,
eringi, enoki and shimeji butter sauce. The fish
had the perfect flakey texture and the sauce

an ideal marriage with the taste of the fish.
”I have just recently introduced a bi-monthly
changing seasonal menu,” he says, “offering
our guests the best of what is in season in
Japan. This month it’s Aii or horse mackerel
as they are now at their best, the water they
swim in is just the right temperature to create
the perfect fat ratio in their flesh. The other
is premium tuna driven by blue fin which to
many is the King of Tuna. In the market the
fish is cut into four pieces. I am most specific
with my buyers that I only buy the section
closest to the head. The tail section due to the
swimming action tends to be too fatty for my
taste. I buy small portions four times a week
to ensure ultimate freshness.”

BEN PETHO
Ben used to be a banker with Citibank in his native Hungary. He has
always had an interest in wine and used to organise wine tours at the
weekend He first came to 10 years as a tourist kept coming back every
year. Five years ago he decided he was ready for a career change,
resigned from the bank, liquidated his assets in Hungary and moved
to Thailand.
As wines weren’t in the Thai market, his original idea was to repre-
sent them and he had no idea about importing he would find and
established player to bring them into the country. When he failed to
convince someone else to import the wines he decided that he would
have to do it himself,
”The easy part was to find out what are the regulations,” he says,
“the part is understand how the system works in reality. Through my
connections in the industry learnt that Hungarian wines alone would
not be sustainable I needed to have a diverse portfolio. The business
work very much on personal connections, to make them I attended
major international wine events such as Vinexpo in Hong Kong. Why
world global wine traders want to talk to a small Hungarian guy from
Thailand? I managed to get their attention and the opportunity to
represent their wines simply because of my passion and enthusiasm
for what I believed in.”
”The key to my success has been the wine selection,” he says. “I exam-
ined each sector of the market to look for what was missing in Thai-
land. I met that need with a balanced selection of wine alternatives.
In the first four years I sponsored over 100 wines dinners, that was
the trend then. I stopped a year ago because they weren’t generating
the return on the investment. The strategy switched to working with
Embassies such as Austria and Argentina to host events at the resi-
dence for focused groups of wine enthusiasts.
Our portfolio now has 150 labels from 30 brands. It’s split be-
tween the necessary and the special wines. International grape va-
rieties are important but at the same time we want to showcase
the best of the grape varieties unique to each country. For example
Argentina torrentes and Bornada, or from Chile we have Carmena-
res. We need to be special and unique at an affordable price.
We have 300 clients, hotels restaurant and corporate clients. Work-
ing with hotels and restaurants helps to build the brand. We have
our own 90+ cellar at Interchange building . All of of our wines are
unique to us. We are Bangkok based but can deliver nationwide
within three days.
