Okay, I admit this photo is not really of me sledding in
Alabama, but it could have happened! The arctic blast and
lovely coating of ice had everyone slip-sliding around
Enterprise. Luckily, it will not last and things will soon be
back to normal...it has certainly been a fun change of pace
for the South, but I am very much looking forward to
warmer weather and trips to the beach.
I am also excited about all the FRCSC’s upcoming
activities. Our February luncheon on the 6th will be an
informative financial presentation from our friends at First Command directed towards financial planning
for women in all phases of life.
February 25th is our annual SWEETHEART BINGO where we offer up some food and fun to over 300
senior citizens, and then on March 13th we will be playing Bingo and fare-welling Mrs. Angel Mangum
and Mrs. Jen Thomson.
Fairy Godmother will be on March 8th - if you can help, whether by donating a gown/shoes/jewelry or
the day of, please let Katrina Steddum know at [email protected].
Also, for parents of high school seniors or military spouses going to college, our scholarship application is
now available! We will be granting, on behalf of the club and it’s sponsors, around $24,000 in scholarship
funds, and the Fort Rucker Thrift Shop will be granting approximately $30,000—that is over $50,000
that is available to scholarship recipients. The application can be found on our webpage
www.fortruckercsc.com.
And while this may seem really early, the FRCSC has about eight weeks until we have to prepare our
voting slate for next year. If you are interested in working with the club, please contact me at
[email protected]. I can fill you in on positions that will be available - please consider offering up
your talents!

Greetings everyone,
The Retired Officers’ Wives Association appreciates the time and work given in the efforts of the Board and members of the Community Spouses Club to support the military family and Wiregrass community while also providing opportunities that benefit others from social events to scholarships. We understand and commend you for the dedication involved in managing all the responsibilities while attending to your active duty families and commitments. Our organization has a close connection with the CSC as some of our members are also CSC members. We have the opportunity to contribute to the CSC programs such as scholarships and participate in various activities with volunteer service. As we entered into the new year of 2014 many memories accompanied us from last year and beyond. Last May marked the completion and celebration of a three year leadership period with long term goals met which included attaining a membership of over sixty. ROWA also began the 41st year in existence in 2014 after celebrating the 40th anniversary recently. We even have charter members who are faithful and active in attendance today. The history continues as new members arrive. Surprises also enter into our diverse membership. One such came during this January at a Twelfth Night celebration hosted by a newer member of ROWA and her husband. While enjoying the occasion my husband and I realized that the host, Lt. Col. John Newton, (Johnney to us) was an elementary and high schoolmate with us in our hometown! The men had played football together! We had not seen each other after he graduated until that day. It is truly a small world in the military! There are many experiences to share in our fellowship as ROWA members enjoy luncheons and brief programs on a monthly basis. Along with reflections we look forward to accomplishing future plans and discovering fresh possibilities. Our February 11 luncheon will include a musical program presented by Mr. Ben McKee who is the Chaplain for the Ft. Rucker Chapter of the Military Officers Association. Guests are welcome. Scholarship awards are based on academic and personal achievement, community, volunteer involvement and an essay. Financial need will also be considered.
Scholarships will be awarded in the following categories:

Book Review: A Tree Grows in Brooklyn by Betty Smith
Reviewed by Rachel Yorgey Good Reads Score- 4.2 out of 5 Barnes and Noble Score- 4.5 out of 5 This month the Book Club read A Tree Grows in
Brooklyn by Betty Smith. She has also written three
other novels. This book written in 1943 was later turned
into a movie 2 short years later. Set in 1912 this classic is
divided into 5 “books” each covering a different time
period in the characters’ lives. The story focuses on an
impoverished but aspirational third-generation-
American adolescent girl and her ethnically-blended
family who live in Brooklyn, New York City during the
first two decades of the 20th century. There are many
themes and metaphors that can be found in the book
making it a good book for anyone.
A Tree Grows in Brooklyn is a quiet, gentle, understated and yet at the same time
unexpectedly scathing at times book that offers a window (or a view from a fire escape,
if you please) into a little corner of the world a century ago, and yet still has the power
to resonate with readers of today. We enjoyed reading it and were able to bring up a lot
of topics that related to the book but were current in today’s society. We would
recommend this book to others with the note that it may be a slow start to get into the
book, but it is worth it.

Greetings one and all! I am only putting 2 recipes on here this month because these 2 are a little
lengthy. Now, with that being said, they are also relatively simple AND heart healthy too, which is
great for February since it is Valentine’s Month! The Cauliflower Crust Pizza can also be used for
a low fat, no carb breadstick too! And if you are a fan on PF Changs lettuce wraps…these are
the bomb! Now, if anyone is on the Advocare 24 day challenge, omit the mushrooms in the wraps
for your first 10 days, otherwise, all bets are off! Enjoy and we will see you in the kitchen next
month!
Cauliflower Crust Pizza
Ingredients:
1 cup cooked, riced cauliflower ½ tsp crushed garlic
1 cup shredded mozzarella cheese ½ garlic salt
1 egg, beaten olive oil (optional)
1 tsp dried oregano pizza sauce
shredded cheese your choice of toppings*
Directions:
To "Rice" the Cauliflower:
Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into
chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will
puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater).
Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes (some micro-
waves are more powerful than others, so you may need to reduce this cooking time). There is no
need to add water, as the natural moisture in the cauliflower is enough to cook itself. One large
head should produce approximately 3 cups of riced cauliflower. The remainder can be used to
make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.
To Make the Pizza Crust:
Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray. Or use a sili-
cone mat. In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano,
crushed garlic and garlic salt, stir. Transfer to the cookie sheet, and using your hands, pat out
into a 9" round. Optional: Brush olive oil over top of mixture to help with browning. Bake at 450
degrees for 15 minutes. Remove from oven. To the crust, add sauce, toppings and cheese.
Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).

Chicken Lettuce Wraps
25 mins to make, Serves 6
Ingredients
11/2 lbs Boneless, skinless chicken breasts, cubed
1 T reduced sodium soy sauce
1 T plus 11/2 tsp peanut oil, divided
½ tsp garlic powder 3/4 cup chopped fresh mushrooms
¼ tsp crushed red pepper flakes
1 can (8 ounces) water chestnuts, drained and diced
1 ½ cup shredded carrots
1 T minced fresh gingerroot
½ cup julienned green onions
2 T rice vinegar
12 Bibb or Boston lettuce leaves (we’ve even used iceburg)
2 T reduced-sodium teriyaki sauce 1/3 cup sliced almonds, toasted (we typically omit these)
Directions
In a large nonstick skillet coated with cooking spray, cook chicken in 1 tablespoon oil for
3 minutes; drain. Add the mushrooms, water chestnuts and ginger; cook 4-6 minutes longer
or until chicken is no longer pink. Drain and set aside.
In a small bowl, whisk the vinegar, teriyaki sauce, soy sauce, garlic powder, red pepper
flakes and remaining oil. Stir in the carrots, onions and chicken mixture.
Spoon onto lettuce leaves; sprinkle with almonds. If desired, fold sides of lettuce over fill-
ing and roll up. Yield: 6 servings.

Reservation Policy
Reservations should be made by the Friday prior to the Luncheon/ Dinner.
Please email [email protected].
A monthly “Evite” will also be sent out to our members and you may reply through
that to make your reservation. You may also log onto http://www.fortruckercsc.com
and RSVP through there as well. Please do not call the event location as they do not
handle FRCSC reservations.
Reservations made after the deadline will be placed on a waiting list and seats will be
filled on a first-come, first-serve basis should there be cancellations or no shows. If
you arrive at any luncheon without a reservation you will be required to wait until a
seat becomes available. We will make every effort to seat you. Cancellations must be
made by 4pm on the Friday prior to the event. Members not meeting this deadline
will be responsible for luncheon/dinner fees. No-shows will also be responsible for
luncheon/dinner fees. Members with outstanding fees will be unable to make
reservations for subsequent luncheon/dinner events.
Payments may be made the day of the event with Cash, Check or Credit Card. Please
be aware if payment is made through a credit card there will be a convenience fee.
Permanent reservations are available for your convenience. The main meal is
automatically selected each month. Should you need an alternate meal, please call or
email by 4pm on the Friday prior to the event.
Guests are welcome to attend FRCSC functions. If a guest is eligible for FRCSC
membership, he or she may only attend as a guest to one event, but may join at any
time. Guest reservations must be made by the Friday prior to the event.
Children under the age of six months are welcome at the luncheon/ dinners, but we
ask that you make child care arrangements for children six months and older.
