Juicing has been getting a lot of media attention in the UK which has lead to a dramatic rise in the number of juicers being sold. For example, Lakeland, the UK kitchenware retailer, reported that juicer sales shot up by 4,000 per cent in a week following the screening of “Fat, Sick and Nearly Dead” on Channel 5 and John Lewis reported that sales have risen by 2,600 per cent compared with the same period last year.

So, what should you do if you would like to try juicing and what equipment will you need?

We all know that vegetables and fruits are good for our health, yet UK government figures published in 2012 suggest fewer than a third of adults and only one in 10 children are eating the recommended “five-a-day” of fruit and vegetables. Did you know that in Japan the recommendation is 17 portions of vegetables and fruits per day? Based on current eating habits I think the western world has little chance of hitting that target, but what if there was an easy way to get to all that plant-based goodness?

Freshly extracted juices are a quick and easy way to increase your intake beyond “five-a-day” and deliver concentrated nutrients to your cells in around 15 minutes – a tiny fraction of the time it takes our bodies to digest a typical meal. When we eat solid foods it takes our bodies a number of hours to separate the vitamins and minerals from the fibre and this requires a lot of effort from our digestive system.

Whilst the fibre acts as a kind of broom, to sweep clean our intestines and colon, there is no nourishment in the fibre. Fibre is important to ongoing health, but high levels of dietary fibre are not required in every meal. Also, the juice of various fruits and vegetables includes soluble fibre, such as pectin, which is found in a range of produce including apples, pears, oranges and carrots.

One of the father’s of modern juicing, Jay Kordich, is famous for saying it is “the juice of the fibre that feeds you”. Put another way, it is not strictly true that we are what we eat. We are, in fact, what our cells manage to absorb from what we eat. When we juice we separate the nutrient rich water from the fibres of the food.

The condition of our bodies is inextricably linked to how we feed them. Our bodies are constantly changing with 98% of the atoms in the body being replaced in less than a year. It is the nutrients we absorb from our food that are used to build and repair our bodies with new cells.

The first thing I think it is important to know is that bottled juices and smoothies are not the same as freshly extracted juices that you make yourself. Almost all bottled juices and smoothies that you can buy will have been heated and pasteurised. In other words, they are cooked. It is well documented that cooking fruits and vegetables reducing their nutritional value and pasteurising juices is no different. Pasteurisation denatures the juice, killing off ALL its natural enzymes and massively reducing its vitamin and mineral content. Many bottled juices will also have preservatives, colours and artificial and refined sugars added to them. To get the true benefits juicing can provide you will need to either make your own juices or purchase freshly extracted juices from a juice bar. There are also an increasing number of companies offering fresh or frozen, non-pasteurised, juices delivered to your door.

In order to complete the 3 Day Juice Detox you will need both a juicer and a blender. It is important to note that a juicer and a blender are not the same thing. A blender simply chews the fruits and vegetables – a bit like letting a machine replace the function of our teeth. A juicer, however, separates the juice from the fibre of the fruits and vegetables, similar to the way our digestive systems work, providing liquid nutrients directly to our cells.

Cold press juicers (also called slow juicers or masticating juicers) make a higher quality juice and also give a higher yield. For example, If you spend £50 a week on fresh vegetables and fruits for juicing, using a cold press juicer you could save between £17.50 and £25 each week through increased yield when compared to traditional centrifugal models (35% to 50% high juice quantity). This results in an annual saving of between £910 and £1,300!

This is due to cold press juicers producing a much dryer pulp than traditional centrifugal juicers, giving the highest possible amount of nutrients and less waste.

• A large handful of fresh mint• 3 whole limes (wax free and skin on)• 1 apple• 1 litre of sparking water

How to Make It

1. Wash / clean all the produce2. Juice the mint3. Juice the limes4. Juice the apple5. Pour into glasses until approx 1/3 full6. Add ice7. Top up with sparkling water8. Add 1-2 sprigs of mint

• 6 apples• 1/2 lemon• 300ml water• 1/4 tsp ground cloves• 1/2 tsp ground cinnamon• 2 tsp ground mixed spice

How to Make It

1. Wash / clean all the produce2. Juice the lemon3. Juice the apples4. Blend the juice with spices and water5. Transfer to saucepan6. Gently warm using a medium heat

Juicy Ingredients (3-4 servings)

• 2 mug of cashew nuts• 12 mugs of filtered water• 4 teaspoons of cinnamon• 2 tablespoon coconut nectar• Pinch of Himalayan salt

How to Make It

1. Soak the nuts in 6 mugs of filtered water for 2-3 hours2. Drain the nuts3. Add a fresh 6 mugs of filtered water to the nuts4. Using a masticating juicer (such as the Optimum 600),

ladle the nuts and water in to the feed chute of the juicer5. Place the nut milk from the juicer into a blender with the

cinnamon, coconut nectar and salt6. Blend and serve

• 6 large oranges (peeled)• 12 carrots• Chunk of ginger• 2 small beetroots• 1 lemon (wax free and skin-on)

How to Make It

1. Wash / clean all the produce2. Juice the oranges3. Juice the ginger4. Juice the carrots5. Pour into large glasses

6. Juice the lemon7. Juice the beetroot8. Pour into shot glasses

9. Serve as 2 separate glasses - gently pour the shot into the large glass for a “sunrise” effect

Juicy Ingredients (10 - 12 Balls)

• 100g Carrot, Orange and Ginger Pulp (save from Sunrise recipe)• 8 dates (soaked for 2-3 hours)• 40g cacao powder• 50g cashews (soaked for 2-3 hours)• 40g desiccated coconut• 2 tbsp coconut oil• 2 tsp coconut nectar• Pinch Himalayan salt

How to Make It

1. Drain the cashews and  blend for 1-2 minutes or until broken down into fine pieces

2. Add the cacao and dates to the blender and blender into a paste

3. Add the juice pulp to the blender and blitz until mixed4. Add the coconut oil, coconut nectar and approx 3/4 of the

desiccated coconut. Blend until smooth.5. Remove the mixture from the blender and roll into equally sized

balls6. Roll the balls in the remaining desiccated coconut7. Place the finished chocolate truffle bliss balls in the fridge to set
