Listing CriteriaSeacoast Harvest is a tool to help consumers fi nd sources of local food. The farms listed are located in Rockingham, Strafford, or York Counties and produce edible, agricultural products. All the growers listed in Seacoast Harvest either sell their products directly to consumers, or their products are explicitly identifi able and are available for purchase by consumers in the secondary market.

Information listed in this guide is submitted directly by the farmers and producers on an annual basis. Seacoast Eat Local is not responsible for omissions or errors. Consumers should call ahead when visiting farms to check hours and product availability and to speak with the growers for the most accurate and up to date information.

Seacoast Eat Local presents the eighth edition of the Seacoast Harvest local food guide! This is certainly reason for celebration as we find ourselves living in one of the best communities for local foods in the nation! Every year Seacoast Harvest delivers the most up-to-date local food information. Dive into our extensive list of local farms, farmers’ markets, community supported agriculture programs, and sustainable fisheries.

Local food represents not only tasty and nutritious ingredients and products, but also a community committed to sustainability, passionate about supporting family farms, and dedicated to the eating of and access to wholesome foods. It also signifies a devoted group of farmers, producers, restaurants, and generous sponsors and consumers that take on the challenge (and rewards!) of locally produced foods with open arms.

The evolution of this guide is a testament to how the Seacoast region embraces the idea of local foods. Each year new farms open their doors, CSAs expand and offer more diverse products, and farmers’ markets get larger with more weekly customers. Our local food system is also transforming to better serve everyone in our community. Every year more and more food pantries and soup kitchens accept fresh foods for their patrons, and gleaning programs harvest and transport leftover produce from local farms to those in need. Farmers’ markets and organizations such as Seacoast Eat Local are also making it possible for customers to use SNAP (food stamps) benefits to buy locally grown food.

I sincerely hope this guide gets you inspired. As the season progresses we all must take a role in preserving and supporting the resources around us. We do this by shopping at the local farm store, attending the farmers market weekly, joining a CSA, dining at a locally sourcing restaurant, and by using and sharing the Seacoast Harvest guide. Eating is not only an agricultural act, as Wendell Berry so brilliantly observed, it is also a family act, a community act, and a personal commitment to wholesome healthy food. Taste. Smile. Enjoy.

Support the work of Seacoast Eat LocalEach year, Seacoast Eat Local distributes Seacoast Harvest as a free guide throughout the Seacoast region of New Hampshire and Maine. The guide is a resource used by thousands of area residents to find specific products, locate farmers’ markets and food pantries, access information about locally produced food, learn about CSAs, and become educated about seafood.

Seacoast Harvest is just one of several key services that Seacoast Eat Local provides to the region. In addition to this annual free guide, Seacoast Eat Local provides the following services:

• Organizes and orchestrates Winter Farmers’ Markets in Rollinsford and Exeter, NH, keeping local food easily accessible to consumers year round• Operates a program offering SNAP/EBT redemption, with a matching dollar program, at area farmers’ markets• Conducts outreach to bring awareness of our services to local food pantries and social service agencies• Provides coordination of gleaning projects, connecting farmers who have an abundance of post-harvest food with volunteers who harvest and deliver the produce to local food pantries• Hosts workshops and events for farmers and consumers, advocating the importance of eating locally for the health of our environment, community, culture, and economy.

These services are all free to farmers, food producers, and consumers in the area and are made possible by grants, sponsorships, and private donations. CSA: Community Supported AgricultureCSA is a partnership between consumers and farmers in which members buy shares of the farm’s harvest and enjoy regular allotments of food throughout the growing season. A CSA share provides lots of great food all summer long, as well as a chance to make a meaningful connection with a farm. For farmers, this provides much-needed cash flow at the beginning of the season, as well as a ready market and community of supporters. Shareholders join in the risks of the growing season and reap the benefits of the harvest. Each CSA farm has its own pricing structure, disbursement schedule, and some have work requirements. Increasingly common are market style or flexible choice CSAs, where the shareholder pays up front and then receives a credit from which to shop during the season. This model allows the CSA member to take the amount of produce and products they can use at any given time.

Sign-ups for CSA shares often begin in February by directly contacting the farm. Each year in February, Seacoast Eat Local hosts two CSA Days at the Winter Markets. At CSA Days, you have the opportunity to meet dozens of farmers who have CSA shares available for the summer season, ask questions of the farmers, and find the right CSA for you. In 2015, CSA Days at the Winter Markets will take place on February 14th in Rollinsford and February 28 in Exeter.

Each CSA is unique, offering different pick up locations, diversity of products, and experiences. CSA is a smart choice for people looking for a wide variety of produce and a closer connection to a farm. CSF applies this concept to seafood, providing fishermen the benefits of a consistent customer base and shareholders a direct connection to our local fisheries and an opportunity to support sustainable fishing practices.

Whole pigs and half cows

An economical and effi cient way to purchase locally raised meat is by bulk order of a quarter, half, or whole animal. Some farmers refer to these as “freezer orders” or by the amount of the animal you are purchasing. Freezer orders are most common for larger animals, such as pigs, cows, goats, and sheep. Although your order may be called a half pig, it will not arrive as one big piece! It will be butchered normally or to your specifi cations, and will come in individually wrapped pieces. A typical beef order will contain various steaks, roasts, short ribs, stew meat and hamburger. A typical pork order will contain ribs, tenderloin, pork chops, roasts, bacon, sausage, ham, and salt pork. Ordering is usually customized so that you may have more or less of particular cuts.

Seventy-fi ve pounds of meat will take up 3.5 cubic feet of freezer space. The freezer compartment of a typical home refrigerator is 4.8 cubic feet. A half hog might produce 75 pounds of meat, and a quarter beef might produce 125 pounds. Many people choose to go in with a friend on buying meat in bulk, or invest in small freezers to store not only meats but other locally procured foods year-round.

Cost can be calculated by live weight (before the animal is butchered), hanging weight or carcass weight (after it is slaughtered but before it is cut into individual cuts of meat), or the actual weight of your packages of meat, called fi nished cut weight. At each step of processing, some weight is lost as inedible parts such as bone, the hide, feet, and most of the innards are removed. Some farmers include the cost of processing in their per pound price, others itemize this cost separately. The value of various cuts of meat are averaged for meat purchased by hanging weight, typically making this the most common and economical option.

FARMSStoring Vegetables and Fruit

Without Plastic

Apples: Store on a cool counter or shelf for up to two weeks. For longer storage, keep in a cardboard box in the fridge.

Asparagus: Place stalks loosely in a glass or bowl, upright with the cut ends in water, at room temperature. Will keep for a week outside the fridge.

Beets: Cut the tops off to keep beets firm (but keep the greens!); tops left on root vegetables draw moisture from the root, making them lose flavor and firmness. Beets should be washed and kept in an open container with a wet towel on top.

Cucumber: Wrap in a moist towel in the fridge. If you’re planning on eating them within a day or two after purchasing, they should be fine left out in a cool room.

Greens: Remove any bands, twist ties, etc. Most greens must be kept in an airtight container with a damp cloth to keep them from drying out. Kale, collards, and chard also do well in a cup of water on the counter or in the fridge.

Peaches: This includes most stone fruit—refrigerate only when fully ripe. If firm, ripen fruit by leaving out on the counter.

Spinach: Store loose in an open container in the crisper. Cool as soon as possible. Spinach loves to stay cold.

Strawberries: They do best in a paper bag in the fridge for up to a week. They don’t like to be wet, so check the bag for moisture every other day.

Sweet peppers: Only wash them right before you plan on eating them, as wetness decreases storage time. Store in a cool room to use in a couple of days; place in the crisper if longer storage is needed.

Tomatoes: Never refrigerate—doing so will ruin their flavor and texture. Depending on ripeness, tomatoes can stay on the counter for up to two weeks. To hasten ripening, place in a paper bag with an apple.

Seacoast Eat Local’s SNAP/EBT Farmers’ Market Program is growing and expanding. In 2014, SNAP/EBT customers can use their benefits at the Greenland Farmers’ Market and the Dover, Exeter, and Portsmouth farmers’ markets hosted by the Seacoast Growers’ Association. In the winter, Seacoast Eat Local offers this program at our own markets in Exeter and Rollinsford. Additional markets in our area also welcome SNAP/EBT; see pages 30-31 for information.

The Supplemental Nutrition Assistance Program (SNAP) is the new name for the Food Stamp Program, and requires recipients to use an Electronic Benefit Transfer card (EBT), similar to a debit card, in order to redeem their benefits. This program allows SNAP recipients to use their federal benefits to buy fruits and vegetables, meats, eggs, milk and cheese, honey, breads, baked products, and even seeds or seedlings for food-producing plants.

How it worksWhen customers arrive at the market, they first visit the booth with the “Buy your SNAP/EBT tokens here” sign. Customers purchase as many $1 wooden tokens as they’d like with their EBT card. Then they use the tokens like cash to purchase locally grown, fresh and healthy food from participating vendors. Market Match provides incentives for SNAP/EBT recipients to be able to purchase additional fruits and vegetables. Customers receive up to an additional $10 free each visit.

To provide you with more information about where our food comes from and how it is grown, Seacoast Harvest asks farmers to describe their agricultural practices by selecting from the terms listed below. These terms and their definitions are intended to provide some clarity for both producers and consumers in an area that is often confusing given the growing number of terms used to describe farms and their products and the lack of legal definitions for many terms.

While our list of agricultural practices is not exhaustive, it includes working definitions for many of the practices commonly used on area farms. Some terms that are open to interpretation (e.g. “sustainable”) are not included. We hope this glossary helps you better understand the practices farmers choose to use on their farms, but this list is just a start. The best way to get more information is to talk to your farmers. They are happy to answer your questions about their practices.

Fruits & VegetablesCertified Naturally Grown: The farm is certified by the nonprofit Certified Naturally

Grown, an alternative to the USDA’s National Organic Program. The standards and growing requirements are no less strict than the NOP rules.

Certified Organic: The farm is “Certified Organic” by a USDA-approved certifying agency, and growing practices meet the standards of the National Organic Program (NOP). Organic farming is based on a system that maintains and replenishes soil fertility and limits the use of toxic and persistent pesticides and fertilizers. Organic meat and poultry must be fed only organically grown feed (without any animal by-products) and cannot be treated with hormones or antibiotics. The NOP standards do not allow the use of genetically modified seeds.

Conventional: The farm uses synthetic inputs such as chemical fertilizers, pesticides, and/or herbicides.

IPM: Integrated Pest Management: The farm uses a pest management strategy that includes a combination of biological, cultural, and chemical tools to reduce crop damage from insects, diseases, and weeds. Pesticides are used as only one part of the pest management strategy.

Low Spray (fruit): The farm uses a reduced synthetic pesticide spray program relative to the region’s conventional spray practices.

No GMO Used: The farm does not use any genetically modified organisms, including plant seeds and animal feed..

No Synthetic Chemicals Used: The farm does not use any synthetic chemical fertilizers, pesticides, or herbicides.

Exempt Organic: The farm’s practices meet the standards of the National Organic Program, but the farm is not required to be certified because annual gross sales are less than $5,000.

GAP: Good Agricultural Practices. A voluntary USDA program offered to the fruit and vegetable industry to verify an operation’s efforts to minimize the risk of contamination of fresh fruits, vegetables, and nuts by microbial pathogens.

Meats & Dairy100% Grassfed: Animals only eat grasses from start to finish.Free Range: Animals are given daily access to the outdoors but are not raised primarily

on pasture.Grassfed with Grain Supplement: Animals are raised on pasture, and a controlled amount

of grain is eventually introduced into their diet.Heritage Breeds: The farm raises rare and endangered breeds of livestock to reintroduce

genetic diversity and prevent extinction.No Added Hormones: Animals are raised without added growth hormones.No Antibiotics Used: No antibiotics are administered to the animals during their lifetime.No Routine Antibiotics Used: Antibiotics are not given to the animals to prevent disease
