Mussels and other farmed bivalve shellfish are among the most sustainable aquaculture products because they don't require aquafeed and have a low environmental impact. We source through a long established cooperative composed mostly of family-owned mussel farm members in Shetland and the west coast of Scotland. Some non-members also supply us. All cooperative members are Friend of the Sea certified and Marine Stewardship Council (MSC) certified.

We source from a large vertically integrated shrimp farming business in Sumatra. Here the company supplies shrimp larvae and aquafeed from its own hatchery and feed plant, provides ponds and other farming infrastructure, oversees the farming operations and it processes all the shrimp. But the small and multiple shrimp farms within the estate-type operation are operated by private farmers working for themselves.

Farming Method List Description
Floating net pen farming Cage or net pen farming refers to a method of aquaculture used for finfish. Large cages are suspended in Lochs and offshore and inshore areas. They are attached to floats on the surface which keep them suspended and weights which anchor the cages to the seabed.
Freshwater pond farming Fish are reared in ponds under carefully controlled conditions operating to specific standards for management of farms and farming practice. Feed is very strictly controlled from a single source. Fish are harvested from the ponds using nets.
Hand dived This is a traditional method of harvesting molluscs such as scallops and clams, in which a diver collects the target species by hand. Hand tools may be used to gather molluscs, such as tongs or rakes.
Lantern net grown Lanterns are a type of mesh cage suspended from lines which are floated by buoys. This is a very low-impact farming method and can be used for cultivating scallops. The scallops are placed in the lanterns and suspended in the water column. Feed is not required because scallops are filter feeders, which means they filter particles of food from the water column.
Seawater pond farming Our warm water prawns are cultivated in large ponds situated in coastal regions of Indonesia, Honduras, Madagascar, Belize and Vietnam. The pond is a controlled environment where water quality and feed inputs are carefully monitored to ensure the optimum conditions. When the prawns are ready to harvest, the water is drained from the pond and the prawns are captured using nets.
Seawater tank farming
Tank farming systems can be used for finfish or shellfish. Within these closed systems water can be obtained and treated in either one of two ways:
1. Pumped from a nearby water source such as a river or the sea, filtered, used in the system, filtered and treated to remove any waste or contaminants and then pumped back or
2. As above but where the water is not pumped back to the source but remains in the system using re-circulation technology.
Suspended rope grownMussels, which feed on plankton and organic particles in the surrounding water, are grown on ropes suspended from floats on the surface of sea Lochs and offshore and inshore areas. The mussels use their byssus threads to attach themselves to the ropes. Once they have reached their optimum size, the ropes are hauled on board a vessel, and the mussels are removed from the ropes. Rope grown systems do little to disturb the ecosystem and they can even improve water quality – because molluscs work as filters.
