The word “obedience” inNew Testament Greek is a
combination of a prefix meaning “under” and a verb that means “tolisten”. The idea is to place yourself under what you are listeningto. Hence, the word came to mean obedient.
Ever hear a parent say to their kid, “Are you listening to me?”Then the rebel says “I heard you!” But “I heard you!” is not the sameas “I am listening to you.” The difference is in the consideration ofwhat is being said. There is a mental aspect to this that does notjust affect the ears. It is also a component of the will and attitude.The mind may be engaged but it is not dispositionally favorable toward what is being said.
Many years ago in the lunch room of a police station an officerwas relating a conversation he had with a parent who was dealingwith disrespect and abuse by a 19-year-old daughter. He explainedin detail the “get tough” approach he outlined for her. When he andI were alone I asked him how many times he had given that lectureto a parent. “Many times”, he said. “How many times have they listened?” I asked. “Never” he said. “Thanks,” I replied. “I justwanted to know if I was the only one.”

opportunity to focus on your cardiovascular health. According to the American Heart Association, cardio-vascular disease accounts for about one of every threedeaths.
Taking care of your heart starts with your diet andmaking healthy changes. Cutting down on sugar, whichexperts say most Americans consume far too much ofon a daily basis, is the perfect place to start. Processedsugars add empty calories to your diet and can disruptyour metabolism, making weight loss or maintenancedifficult and posing serious health risks.
Americans on average get about 16 percent oftheir daily calories from added sugars, according to anFood and Drug Administration report, but the USDA’sdietary guidelines recommend less than one-third ofthat amount. And it’s not just the usual suspects likecandy, cookies and cake that can cause the sugar surplus.
“Foods like white bread and bagels break down thesame as added sugar, so, it’s about the types of carbsyou’re eating, too. In fact, I would say fats aren’t makingus fat, sugar is.” says Dr. Arthur Agatston, founder ofthe South Beach Diet.
To avoid extra sugar in your diet and get on a pathto greater health, consider these simple strategies.
• Shop the Perimeter. Sticking to the perimeter ofthe grocery store is a good rule of thumb, as this tendsto be where you’ll find the least processed foods, suchas vegetables, fruit, dairy, meat and seafood, most ofwhich are free of added sugar.
• Read Food Labels. Seek out foods containinglittle to no sugar, being careful to read labels. You mayhave to look hard though, as sugar is ubiquitous inAmerican foods. Bear in mind that ingredient listingson packaged foods are in order of volume.
• Learn Sugar’s Other Names. “Pretty much anything ending in ‘ose’ is a sugar. And whether it’sfructose, dextrose or sucrose, it will end up as a sugar
in your body,” says Mandi Knowles, Registered Dietitian at South Beach Diet. Avoid them if you wantto eat less sugar.
• Buy Unsweetened Foods. Look for food labelsthat say the food is unsweetened. Not “naturally sweetened.” Unsweetened. That means there won’t beanything lurking in there that could throw you off.
• Make Sugar Swaps. Simple swaps can help yousave on sugar. Swap soda for unsweetened iced teaand save 31 grams of sugar. Swap non-fat flavored yogurt for Greek yogurt with fresh strawberries andsave 19 grams of sugar. Swap your favorite vanilla lattefor black coffee with a splash of cream and save 35grams of sugar.
• Try Something New. Consider a diet plan thatfocuses on good carbs, good fats, healthy protein andhigh fiber, such as the South Beach Diet, which isproven to have a positive impact on heart health,weight loss and belly fat. Delivering on average just 1percent of calories from added sugars, it was the firstplan to propose dieters focus less on cutting out fatsand carbs and focus more on considering the qualityof the fats and carbs they’re eating.

Valentine’s Day is synonymous with many things,including chocolate. Many sweethearts exchangechocolate on Valentine’s Day, making chocolate confections as essential to a successful holiday asflowers and romance.
Men and women who want to make thisValentine’s Day extra special can forgo store-boughtchocolates in favor of homemade confections. Thefollowing recipe for “Swiss Mountain Ice Cream” fromMaxine Clark’s “Chocolate: Deliciously IndulgentRecipes for Chocolate Lovers” (Ryland, Peters &Small) is a great way to end a romantic holiday dinner.
Swiss MountainIce Cream
Makes about 2 quartsWhite Chocolate
Sauce (see below)2 cups whole milk1 cup sweetened
condensed milk3⁄4 cup granulated sugar2 tablespoons unsweetened cocoa14 ounces premium milk chocolate
(over 32% cocoa solids), chopped1 teaspoon pure vanilla essence1-1⁄2 cups whipping or heavy cream, chilled6-1⁄2 ounces white nougat, roughly chopped1 ice cream maker (optional)1 freezer-proof tray or container1 mountain-shaped mold (optional)
Put the milk, condensed milk, sugar, and cocoain a pan, bring to a boil, then simmer gently for 5 minutes, stirring constantly. Stir in the chocolate andlet melt, stirring occasionally. Let cool completely,then add the vanilla essence and refrigerate forabout 1 hour.
Stir the cream into the mixture, then churn-freezein an ice cream maker in two batches. This will take20 to 30 minutes. It will increase in volume as it thickens and freezes. Stop churning when thick andsmooth, add the nougat, and churn to mix, thentransfer to a chilled freezer-proof tray, cover, andfreeze. If you don’t have an ice cream maker, put themixture in a freezer-proof tray or container and freezeuntil it is frozen around the edges. Mash well with afork and return to the freezer. Continue mashing witha fork and freezing the mixture until thick andsmooth, about 2 hours. Stir in the nougat. At this
stage, you can pack it into a mold and return to thefreezer.
If the ice cream is in a mold, remove from thefreezer and dip briefly in hot water to melt the outside. Invert onto a chilled plate, lifting off the mold.If the ice cream is in a container, transfer to the refrigerator to soften for 20 minutes before serving inscoops. Drizzle with White Chocolate Sauce andserve.
White Chocolate SauceMakes about 21⁄2 cups
1 cup light or heavy cream6 tablespoons milk8 ounces white chocolate
(over 25% cocoa butter), choppedPut the cream and milk in a small pan and bring
to just below boiling point. Remove from the heat andlet cool for 2 to 3 minutes. Add the white chocolateand stir until completely melted. Serve warm.
If reheating, do so over gentle heat. Do not allowto boil or the sauce can thicken and seize.
