Hello Again,
This is America.
America — the land of common
dreams and threads. Where
Native Indians lived as tribes and
believed no one owned the land —
their common thread — freedom
to direct their tribal way of life.
A land which people all over the
world dreamed of — sacrificed,
left their homes, friends, and
families to travel on wooden wind-
driven sail ships and later even
millions more by coal fired steam
ships to claim a new life of free-
dom. The common thread — free-
dom — where a man could be his
own man, not a possession of a
king.
A thread they all shared — the
right to own their own land, free-
dom of religion, and
eventually freedom to establish
their own government, and what a
government they built. The thread
which has shared in and helped
shape democracy throughout so
much of the world. This govern-
ment was of the people — owned
and managed by the people, not a
huge central government — which
will eventually control the people.
Are we not a society of common
threads? There is one thread
more common than most.
That thread is the love of home-
made apple pie with a slice of old-
fashioned cheddar cheese.
Now we have a local prize win-
ning cheddar cheese plant right
here in Palatine Bridge. The
Palatine Cheese Company. If you
haven’t tried their famous 1st
prize winning cheddar cheese, you
are truly missing out. A special
treat. I refer to Palatine Cheese
as ‘our cheddar’ as it is made
right here in ‘our valley’.
When we travel to Florida we
take New York State products as
gifts to our friends. Naturally
these gifts include apples, apple
cider, honey and Palatine Cheddar
Cheese. The biggest hit is the
cheddar cheese. The next time
you intend to visit friends, take
along a pound or two of our ched-
dar cheese — the Palatine
Cheese Factory cheddar. Your
friends will know you really care.
Are we not complaining that
everything is made in China? Why
not support a movement to pur-
chase and use American made —
Palatine Cheese is as American
as Paddy’s Pig is to Ireland. Try it,
you may like it — no, you’ll love it
or I promise not to give your
money back.
You know how I hate to chatter
about my friends unless I get a
chance, but I can’t help myself
with this little bit. See if you can
believe, I have a camping friend
who lives near the Tappan Zee
Bridge — that is about four
months of the year. Three — four
months is at the St. Johnsville
camping grounds and the remain-
der of the year either on the road
or in Florida.
He claims he was in the United
States Marine Corps and retired
as a police officer from the Big
Apple Police Department. See if
you can believe this — he claims
he never heard of eating apple pie
with cheddar cheese.
In my opinion if the good Lord
had inspired writers to write, the
Holy Bible since the Declaration
of Independence, he would have
made it a sin to not eat apple pie
with cheddar cheese — especial-
ly New York, Herkimer
/Montgomery County, cheddar
cheese.
History claims that Little Falls
in Herkimer County was the world
headquarters for the production
of cheddar cheese. It has been
written that Little Falls —
Herkimer County cheese estab-
lished the price for cheddar
cheese all over the country and
maybe the world. Herkimer
County cheese was known by
cheese lovers worldwide. In Little
Falls — Cheese Day — was every
day. Hundreds of wagons of cans
filled with farm fresh milk were
delivered by horse and wagon to
the cheese factories.
This chatter is not blarney. It’s
the truth about cheddar. For the
New York World’s Fair, a 34,951 lb.
block of cheddar cheese was pro-
duced. It was estimated that
size would use the equivalent of
the daily milk production of
16,000 cows.
In 2010, the United States pro-
duced 3,233,380 lbs. of cheddar
cheese. I wonder, has any pizza
maker ever tried cheddar cheese
instead of mozzarella?
Square dancing on Friday
nights at the local Grange Hall
and apple pie with cheddar
cheese are woven into our early
American rural culture. I can still
hear the fiddlers,
accordion players, saxophone or
clarinets, drums, and even the
piano. A good banjo player really
added to the country sound.
Naturally, the square dance
caller set the tempo for every
dance. We should have recorded
bands such as Ken Haith with his
band and caller Harold Brazee. By
profession, Ken Haith was the
postmaster in Cherry Valley. Yet,
by his heart was a square dance
bandleader. In Otsego and
Delaware counties, Ernie Russ
with his band was the man.
Two boys, Pat and Mike, from
Ireland by the way of Arizona
snuck over the state line into
Texas and were caught rustling
cattle. After a short trial, both
were sentenced to a
hanging. They strung up Pat with
a loose rope which slipped and he
fell free into the river below and
escaped. Mike said, “Boys be sure
you tie a better knot. I can’t
swim.”
“How could you swindle those
honest people who trusted you?”
the justice asked. “Your honor,”
the conman answered, “It’s near-
ly impossible to swindle someone
who doesn’t trust you.”
A blindfolded prisoner, standing
20 paces in front of the firing
squad, was asked if he’d like one
last cigarette. “No thanks,” he
replied. “I’m trying to quit.”
A mother asked her son why he
lied so much. He answered, “I’m
practicing to become a lawyer or
a weatherman.” Mom replied, “You
already qualify to be a politician.”
It’s about noon Thursday. The
weather report is that we are
going to be hit with a major snow
storm. If you are reading this, it’s
probably Saturday or Sunday.
Now you know if the weatherman
was accurate, helping the truth
out a little, or still practicing his
profession of being a well-paid liar
— maybe running for a local
office.
Sunday is known as the day of
rest — the perfect day to go to
church with your family or a
friend. Give thanks unto the Lord
and enjoy a dinner. The Bible says
we should pray without ceasing. I
take that to mean we should
always be grateful, neighborly,
and willing to obey and serve the
Lord.

So instead of dashing throughthe snow in your four-wheeled “sleigh” and ending upo’er the hills, it may be best to simply drive with cau-tion and focus, to stay on the road this winter.
Before heading out to the ski lodge or embarking ona winter road trip, take the proper precautions to en-sure the safety of yourself, your friends and your fam-ily, as well as others on the road. According to Han-kook Tire’s latest Winter Gauge Index, 68 percent ofthose surveyed are worried about skidding across win-ter’s icy roadways. Try these simple tips for stayingsafe while driving in winter weather:
Put distractions on ice: Despite many recent publicservice announcements and news articles on the dan-gers of texting and driving, drivers between the ages of18 and 35 say texting is their top distraction while onthe road, according to the Hankook Tire 2012 FallGauge Index. Other distractions include talking on thephone, talking to other passengers and eating whiledriving. Whether driving to a New Year’s party, head-ing back to school after winter break, or road trippingwith a group of friends on a ski trip, it’s important tokeep your eyes on the road so you can reach your des-tination safely.
Check your tire tread to prepare for snow: Worntread is the No. 1 cause of skidding during the winterseason, so it is important to make sure your tires areup to the task before hitting the road. A quick way todo this is to check your tires’ tread depth indicators.Tread depth indicators are small raised bars that runin-between a tire’s tread grooves. When a tire’s treadis worn down to these indicator bars, it’s time tochange to a new set of tires.
Check your tire pressure: Every 10-degree drop inair temperature can actually cause a vehicle’s tires tolose up to 2 pounds per square inch (psi) in tire pres-sure. Improper tire pressure can result in increasedtread wear and lowered performance, factors that arehighly detrimental to one’s safety in undesirableweather driving conditions.
Be prepared and stock up: Getting stuck on the roadis also a major concern during the winter season. Be-fore heading out, check to make sure your engine
coolant, no-freeze windshield washer fluid and yourgas tank is topped off. Also make sure there are noblockages or obstructions to your heating or windowdefroster vents. Be sure to pack extra water, a sparetire, ice scraper, snow shovel and brush, blanket,booster cables and a flashlight in your car for emer-gencies.
With proper preparation you can keep your slippingand sliding confined to the ice rink and make winterpit stops in front of the fireplace instead of in thebreakdown lane.

My dad toldme to watch out for frozen pipes, buthow do I notice when they’re freez-ing, and what can I do to prevent it?What other problems should I watchfor? — New Guy in Portland, Maine
A: The first advice I received whenI moved to a Northern state was“bend your knees when you’re shov-eling snow.” But there was a little bit
more to know. Fortunately, mosthomes built in the past 30 years orso in the Northeast have higher-grade insulation than homes in theSouth. So pipes don’t typically freezeat the first sign of frost the way theydo in Florida. Still, you’re right to beon your guard.
Here are two common winter prob-lems to look out for:
• Frozen pipes: During long or verylow-temperature freezing spells, keepa tap at the highest level of yourhome dripping, so that water movesthrough the pipes. Inspect the pipesin areas where insulation is low or
nonexistent, such as crawlspaces orbasements. You may need to run ahand along the pipe: if you feel anarea that’s especially cold, or seefrost buildup on a section of pipe, it’sbeginning to freeze.
If the pipe is swollen or alreadycracked, you’ve got a bigger problem.To prevent this from happening,drape towels soaked in hot waterover the freezing pipe. Place a buck-et underneath the towels and pourhot water over the area frequently tothaw the pipes. If the pipes havecracked or burst, shut off water tothat section of the house and call aplumber.
• Ice dams: These form along the
eaves of a house, particularly the cor-ners, during long cold spells. They’resometimes caused by damage or airleaks at the edge of the roof, wherewarm air from inside meets colderair. The bigger the ice dam, the morepotential there is for roof damage tooccur. If you can safely clear the damduring above-freezing temperatures,do so; otherwise, call a roofing spe-cialist for an evaluation.
HOME TIP: Ice melt is a big help inkeeping wintry walkways clear, butto prevent damage to nearby plantsor lawn, be careful not to overapplyit: Read the directions on how muchof your selected product to use.
