ON-OFFTurns on control panel, activates self-diagnosis.

SCROLLERSetting/selection knob. To personalise oven parameters, turn scroller to move between menus. To confirm selection press the scroller.
RAPID COOLINGThis function only works with door open. Pressing the button activates the fan, which rapidly lowers the oven temperature to 50°C.
OVEN LIGHT This switches on the internal oven light, allowing the user to check cooking progress. The light goes off automatically when the door is opened. When door is closed, press button again to switch off.
PROBE CONNECTORConnect probe to appliance for core probe cooking.
VENT OPENING This function is only activated in convection mode. Pressing the button opens cavity vent, allowing the escape of moisture from the cavity. It should then be closed manually (LED on = vent open; LED off = vent closed; LED flashing = vent in operation).
OVEN MOISTURE INLET This function is useful for foods that require added humidity when cooking. Press and hold button for as long as desired to allow moisture into oven.
START-STOPTo start and stop cooking progress.Light on: START - cooking startedLight blinking: TEMPORARY STOP - obtained by opening the door. Cooking and remaining time is stopped. Closing the door restarts cooking. Light off: FINAL STOP - obtained by pressing the button. Cooking stops as if cooking time has been completed.

PRE-HEATING - heat oven before a cooking cycle.
TEMPERATURE - adjust temperature in the oven chamber.
TIME - adjust cooking time.
CORE TEMPERATURE - for adjusting core temperature of food.
∆T - temperature difference between product core and oven chamber.
FAST DRY - for fast removal of humidity in oven chamber.
AUTOCLIMA - the humidity control system ensures a consistent humidity level in the oven.
CYCLES - for adding or moving between various cooking stages.
PLUS - enables access to various special cooking modes, such as Just in Time, ∆T (Delta T Cooking), Vent or Fan Management etc.

SWITCHING THE OVEN ONPress “ON” key to start the oven - the light will stay on.
PRE-HEATING THE OVENPress “PRE-HEAT” button on touch screen. Change temperature by pressing temperature symbol and turn scroller to change temperature to desired value. Press scroller to confirm value. Pre-heat begins automatically.
STARTING TO COOKSelect “MANUAL” button.
Select desired cooking mode (convection, steam or combined) by pressing appropriate symbol.

Switching the Oven On
Press “ON” key to start oven - the light will stay on.
Wait 40 seconds for oven to start.
Pre-heating the Oven
Before cooking it is essential to pre-heat the oven while empty in order to reduce the cooking time and ensure good results.
The pre-heating temperature depends upon type of product, size and quantity. A good rule of thumb is to set temperature 20% above the required cooking temperature.
To pre-heat the oven:
Press pre-heat button on touch screen. The pre-set temperature will be displayed (value will be displayed under the wording “SET”)
To personalise the pre-heating parameters:Select desired pre-heating mode (convection, steam, combined) by pressing appropriate button on screen.
Change temperature by pressing temperature symbol and turning scroller to change temperature to desired value.
This setting may then be stored by pressing “Save new setting” button.
To save the HACCP log, press the “Download log” or “Download monthly log” button.
You will then be instructed to insert a USB into the connection port.
Insert USB and press “Yes” when asked if a USB has been inserted.
Once the information has been saved, remove USB and replace safety cap.
NOTEWhen oven is switched on for the first time each day, it will prompt the operator to save the Hazard Analysis and Critical Control Point (HACCP) Log on to a USB.
See sidebar for instructions on how to save the HACCP information. If you decide not to save the information, press “No” and data will not be stored.

Basic Operations
Pre-heating starts automatically. On reaching the set temperature an alarm sounds to alert user that the oven is fully pre-heated.
The display will then return to main screen, with the message “Pre-heat OK” inside the pre-heat button.
Manual Cooking
Select “Manual” button.
Select desired cooking mode (convection, steam or combined) by pressing appropriate symbol.
Personalise parameters (temperature, time/core temperature, fast dry/CLIMA, fan speed) for initial programme cycle by pressing each symbol and turning scroller to desired value then pressing scroller to set.
To add a cooking cycle, press “Cycles” button and turn scroller until the next cycle number appears. Select by pressing scroller. A maximum of 15 cycles can be set.
Modify parameters as before.
Add new cycles if necessary until the recipe is complete.
Preheat oven by pressing “Pre-heat” button (see section on pre-heating). If oven is already pre-heated, place food into oven and press “START/STOP”
NOTETo see all cooking cycles for a recipe together, press “View Grid” button.
SAVING A RECIPETo save recipe into user programmes, press “Save” button then input the name of new recipe and confirm by pressing “ENTER”.

Basic Operations
Cooking with Core Probe
The core probe allows cooking to be regulated by monitoring temperature at the core of product. This device overrides the time setting. Cooking stops as soon as the core temperature of the product reaches the selected value.
Using the supplied multipoint core probe with four sensor points will ensure desired temperature is achieved. The end of cooking is signalled when all probe temperature sensors have exceeded set value.
Positioning the Probe
Connect probe to connection and insert needle into product to be cooked.
Set oven temperature and desired core temperature then press “START / STOP”.
During cooking, product temperature increases gradually, and when it reaches 5 degrees below desired core temperature an information window appears indicating this, allowing the operator time to prepare.
On reaching the set core temperature an alert will sound and an information window on the display will signal the end of cooking.
Advantages of core probe cooking:• Eliminates risk of loss and waste by improving control over cooking process• Enables accurate cooking regardless of quality or size of any food item being cooked• Saves time as cooking control is automatic• Guarantees strict hygiene as no need for food to be handled, poked or pierced• Ideal for large food items• Perfect for cooking delicate foods as cooking accurate to within one degree• HACCP requirements are always respected
NOTEWait for a few seconds after inserting probe before starting to cook. This will allow the controls to identify probe. If probe is not identified, a warning will appear on the screen. In this case, press “BACK”, wait a few seconds then start cooking by pressing “START / STOP”.
NOTEWe recommend positioning food in the centre of oven.

Programmes
X models can store up to 400 programmes (recipes). These can be created from new or transferred from other Falcon combination ovens via USB. Programmes can be added, amended or deleted at any time. This section provides information on these functions.
Creating a New Programme
Press “Programs” button to access Programs menu.
Turn scroller to highlight “New program” and press scroller.
Enter name of the new programme and confirm by pressing enter.
Select cooking mode by pressing appropriate symbol.
Personalise temperature, time/core temperature, fast dry/CLIMA and fan speed parameters for the initial programme cycle by pressing relevant button and turning scroller to select desired value. Press scroller to set.
To add a cooking cycle, press “Cycles” button and turn scroller until next cycle number appears. Select by pressing scroller. A maximum of 15 cycles can be set.
Modify parameters as before.
Add new cycles as necessary until recipe is complete.
Press “Save” button to store recipe in User Programs.
An information window will appear, confirming that programme has been saved. Press “OK”.

Programmes
Uploading/Downloading Programmes
It is easy to transfer programmes between Falcon combination ovens. All that is required are some exisiting programmes and a USB.
Saving Programmes to USB
Press “Settings” button.
Select “User setting” then “Recipes”.
Select option “Copy recipes onto USB stick” (under this will be displayed how many recipes are stored in the memory).
The user can then choose which recipes to save by highlighting and selecting those they wish to copy, or save all by pressing “All” button.
You will then be prompted to insert a USB into the USB port. Remove safety cap and insert USB.
Confirm that you wish to save the data by selecting “Yes” on the touch screen.
Uploading Programmes from USB
Press “Settings” button.
Select “User setting” then “Recipes”.
Select the option “Load recipes”.
You will then be prompted to insert a USB into the USB port. Remove safety cap and insert USB.

Programmes
Opening a Programme
Press the “Programs” button.
Use scroller to highlight “User Programs” then press scroller to select.
Use scroller to move through list of stored programmes. Highlight the one you want to open and press the scroller.
Amending a Stored Programme
All settings of a stored programme can be amended. Simply open the programme, go into the parameter(s) that need to be changed and adjust.
To amend a different cooking cycle, press “Cycles” button and turn scroller until relevant cycle appears. Press scroller to open this cycle, then change parameters as before.
When all changes have been made, press “Save” button. The user can choose from three options - • Save modification - overwrites existing recipe • Save with name - this saves programme with a different name
(meaning you’ll have two versions of the programme)• Rename - only required if you need to change the name the current
programme has been saved as.
Deleting Stored Programmes
Select programme that is to be deleted and press “Delete” button
A window will appear prompting confirmation that the programme is to be deleted. Press “YES” and it will be removed from the stored programmes list.

Cooking Modes
There are several cooking modes that may be of use. Here, we focus on Multilevel and Just in Time cooking.
Multilevel Mode
This mode allows the user to maximise the use of their oven by enabling different foods requiring varying cooking times to be cooked together. The benefit of Multilevel mode is that the oven will alert the user when each menu item is ready, ensuring that food is not left in the oven too long and become overcooked.
To create a Multilevel programme:
Press “Extra” button.
Press “Multilevel”.
Press “New program”.
Press “Cooking settings” and change parameters of the cooking cycle - cooking mode, temperature etc.
You will then have the option of choosing which shelves (levels) within the oven to use and what food will go on each. Press first desired shelf.
Press “Pencil” icon to input name of the food. Press “enter”.
Press “Time” button to set cooking time. (Turn scroller to adjust and press to set).
Press “OK” to confirm details for first shelf.
Repeat steps for subsequent levels. You do not have to use every shelf.
Press “Save” button, input programme name and save to user programmes.

Operating a Multilevel programme:
Press “Programs” button.
Select Multilevel programme that you created previously using the scroller.
Select first level that contains food and press “Play” (triangle) button, then “OK”. This lets the oven know that this shelf will be used in the cooking programme and changes it to orange on the display.
Repeat for all shelves that are to contain food.
Press “Cooking Settings”.
Press “Pre-Heat” icon.
When oven has reached the necessary temperature, the alarm will sound and oven will switch off.
Insert all trays of food into oven. Press start and on screen each tray in use will be coloured green.
The oven will sound an alarm, and the shelf will be coloured red to alert the user when a particular tray of food is ready.
Remove tray of cooked food out of the oven. When food is removed the tray colour will change to orange. If you need to cook more of the same, place another tray onto the same shelf and press the corresponding level on the screen. This will turn from orange to green and the remaining cooking time will be displayed.
When all trays have been cooked, the oven will automatically switch off.

Cooking Modes
Just in Time Mode
This mode allows the user to cook menu items that have different cooking times together so that they are ready at the same time. For example, a kitchen serving breakfast may offer bacon, sausage, hash browns and tomatoes. These all have different cooking times but by programming each individual item’s parameters the oven will alert the user when it is time to put each item into the oven.
To create a JIT programme:
Press “Extra” button.
Select “Multilevel” option.
Press “New program”.
Press “Cooking settings” and change parameters of cooking cycle - cooking mode, temperature etc
You will then have the option of choosing which shelves (levels) within the oven to use and what food will go on each. Press the first desired level.
Press “Pencil” icon to input name of the food. Press “Enter”.
Press “Time” button to set cooking time. (Turn scroller to adjust and press to set).
Press the “JIT” button.
Press “OK” to confirm details for first shelf are ok.

Operating a Just in Time programme:
Press “Programs” button.
Select Just in Time programme that you created previously using the scroller.
Select the first level that contains food and press “Play” (triangle) button, then “OK”. This lets the oven know that this shelf will be used in the cooking programme and changes it to orange on the display.
Repeat for all shelves that are to contain food.
Press “Cooking Settings”.
Press “Pre-Heat” icon.
When oven has reached necessary temperature, an alarm will sound and oven will switch off.
The level with the food with the longest cooking time will be highlighted in red. Open door, load and close door. The level will now turn green, showing that the food is being cooked. All other levels will be orange, to signify that food is waiting to be inserted into oven.
When it is time to load another tray, the oven will sound an alarm and the tray in question will be coloured red. Load tray into the oven and the level will change from red to green.
The oven will sound an alarm and switch off once all trays are ready. Press “OK” to turn off alarm.

Cleaning
Washing the Oven
A meticulous cleaning regime is a prerequisite for impeccable cooking results and better yields.
The oven is equipped with 5 washing programmes:• Manual - a simple, thorough clean in a short space of time.• Rinse - fast rinse of the oven. • Soft - removes day-to-day grime.• Medium - removes normal dirt.• Hard - designed to remove tough dirt.
Running a Washing Programme
Press “AWS” key to access the selection screen listing the oven washing options.
Select desired type of washing cycle by pressing touch screen directly. The oven will ask if detergent tank is connected and if there is enough detergent. Ensure this is the case then press “YES”.
Press “START / STOP” button to begin chosen washing cycle.
The oven will then heat or cool chamber to the ideal temperature for this particular cycle.
Once cycle starts, the display will show time remaining until washing cycle is complete.
A window will appear informing the user that washing cycle is complete. Press “ESC” to close the window, then press “BACK” button to return to main menu.
Shut off all utilities (electricity, water and gas if connected). Leave door slightly ajar when appliance is not in use.
NOTEIt is a good rule at the end of the wash cycle to rinse inside of oven again with hand-held shower and wipe the front seal with a sponge or cloth to prevent premature deterioration.

Cleaning
CAUTION• Never use direct or high-pressure jets of water to clean the outside of the oven.• Never use corrosive and/or abrasive substances on steel surfaces. Avoid scouring or scrubbing with
steel wool or wire brushes as this could result in irreparable damage.• Similarly, aggressive detergents of non-alkaline formulation containing high percentages of sodium
and ammonia can soon damage the seals and jeopardise oven efficiency and operation. • The outside of the oven should be washed with a sponge and warm water using an ordinary
detergent suited to the purpose.• Use a specially formulated detergent.
CALOUTThe oven can count the operating hours of the steam generator and therefore can inform the operator when the lime scale cleaning process should be activated through the special CALOUT cycle.
When the CALOUT cycle needs to be run, a window will appear on the display to remind the user to implement the CALOUT by the end of the day.
Press “ESC” directly on touch screen or confirm by pressing scroller to delete window. When oven is switched on, a window will appear on the display reminding user to implement CALOUT cycle as soon as possible.
The message is also displayed at the beginning and end of a cooking cycle unless the CALOUT cycle is run shortly afterwards (for example, by the end of the day or at beginning of the next).
Routine Maintenance
It is necessary to periodically clean the deflector and pan racks. To do this:• Stop and close off all utilities (gas, electricity and water).• Remove pan racks.• Unscrew deflector screws in order to facilitate cleaning of the rear of oven.• Clean deflector then rinse thoroughly with hand shower. Do not use abrasive products or scourers
since these will damage the steel surface.• Dry with a clean cloth.• If there is particularly stubborn grime and dirt, the deflector must be removed. If possible, wash in a dishwasher.• Once clean, replace deflector and ensure that the two fixing screws on the right hand side are properly tightened.
Prolonged Non Use
If oven is to stand idle for any length of time (e.g. holidays or seasonal closing) the appliance must be cleaned thoroughly, leaving no traces of food or dirt. Leave door slightly ajar so that the can circulate inside the oven. Shut off all utilities (electricity, water and gas), if connected.
NOTEIf a CALOUT cycle is not performed at the end of the day, the next day the display will indicate “ONLY CONVECTION” and the steam generator will be disabled, only becoming operational once the CALOUT cycle is performed.
