All food should be comforting in some way, but for every culture there are those special dishes, some from our own childhood, some associated with friends or family, which we like so much we’d like to share them with the world (”my recipe for mac and cheese ? Sure, here.”) In this one day workshop, we will demonstrate 4 “exotic” yet comforting main dishes with 2 accompaniments. ese are basically one-dish meals combining some meat with interesting vegetables and spices, and which like your neighborhood bistro can all be made ahead-of-time, allowing flavors to develop, then finished at the last minute, allowing you to better enjoy family or friends. Terrific winter fare. A Moroccan Meat-ball Tajine with Carrots & Spinach over Flavored Cous-Cous A Chicken and Potato Tajine with Green Olives and Preserved Lemon A Pork Stew with Leeks Cinnamon and Olives over Oven-Baked Polenta A Traditional French Chicken Fricassee with Celeriac and Mushrooms from Chef Daniel Boulud. Classes take place in Sal Fiorito's spacious kitchen in NW Washington, with a max. of 7 students (5 student minimum.) Class includes tasting/discussion, essentially a dinner, with a glass of red or white wine and Sal’s Baguettes. Fee: $95.00 2 SESSIONS offered: SUNDAY DECEMBER 8th, or SATURDAY, JANUARY 25th.
