Dr.Judy Walsh is the Tenant Relations Manager for the Buttertubs Place Seniors Housing Project operated by Nanaimo Affordable Housing Society. She has written policy and procedure manuals for many organizations and has presented at provincial and national conferences. She has also facilitated many training sessions and is a certified instructor for BC Non-Profit Housing Association. She has been a sessional instructor at UBC Okanagan College, Vancouver Island University and North Island College. She completed a research study on the barriers to food security as part of her Doctoral degree from the University of Victoria which was completed in June 2016.

Dr. Agnieszka Jackowska-Tracz , DVM, is assistant professor in Department of Food Hygiene and Public Health Protection, Faculty of Veterinary Medicine, Warsaw University of Life Sciences – SGGW (WULS-SGGW), Warsaw, Poland. She conducts research on the impact of various factors on the ability to reduce pathogens in food of animal origin, and studies on the potential use of nanotechnologies to improve the hygiene of the production environment. Her field of specialization is hazard analysis and improvement of HACCP systems.

Dr. Alessandro Di Cerbo obtained the bachelor degree in Medical and Pharmaceutical Biotechnologies at University Vita-salute San Raffaele (Milan, Italy) in 2005. In 2007 achieved the Master degree in Medical Biotechnologies at University of Modena (Italy), in 2011 obtained the title of PhD in Nanoscience and Nanotechnology at the same University and in 2016 he got the Specialization in Clinical Biochemistry at University “G. d’Annunzio” of Chieti (Italy). His scientific activities are highly interdisciplinary, ranging from nanotechnology to nanomedicine, microbiology, nutrition and translational medicine. Dr. Abdeen Mustafa Oer is an Associate Researcher at Energy Research Institute (ERI). He obtained both his PhD degree in the Built Environment. His previous experience involved being a member of the research team at the National Council for Research/Energy Research Institute in Sudan and working director of research and development for National Water Equipment Manufacturing Co. Ltd., Sudan. He has been listed in the book WHO’S WHO in the World 2005, 2006, 2007 and 2010. He has published over 300 papers in peer-reviewed journals, 200 review articles, 7 books and 150 chapters in books.

Dr. Xinwei Jiang got his Ph.D. degree in 2015. He is currently working as a Postdoc researcher in Jinan University, Guangzhou, China. Dr. Jiang has published more than 10 research papers on the chronic disease prevention with the treatment of dietary nutrients, such as anthocyanins, folic acid, coenzyme Q10, fish oil and so on. He won an award of Technology Innovation Awards in Sun Yat-sen University in 2014. Additionally, Dr. Jiang is a director of 3 funding that from national and provincial source.

Ms. Melody Ge is a Senior Consultant with Kestrel Management. She supports clients in developing and implementing GFSI schemes and supplier approval programs. Melody started her career in product development of a vegan “chicken meat” product. She then transitioned to a Compliance Specialist at SQF Institute, where she served as part of the technical team; established and developed the SQFI Compliance Program. Immediately prior to joining Kestrel, Melody served as deputy quality director at Lidl US, overseeing suppliers, food safety control, CSR and product quality monitoring and management.

Sunita Bois-Singh is a PhD candidate at the School of Law, Queensland University of Technology (QUT), Brisbane Australia. She is a Barrister & Solicitor in Fiji and Vanuatu with experience in civil litigation. Sunita held positions of Legal Advisor to the Ombudsman of Vanuatu and Manager of the Community Legal Center before joining the Law faculty (currently on study leave) at the School of Law, University of the South Pacific (USP), Emaalus Campus Port Vila, Vanuatu. Her research interests include trade and public health issues relating to diet-related NCDs in small island developing states (SIDS), contracts, corporate and commercial law.

Christelle Bou Mitri received her PhD in Food Science and Biotechnology from McGill University in Canada. After 5 years of experience in Research product Development, she is currently an Assistant Professor in Food Safety and Quality Management at Notre Dame University Louaize, Lebanon. Her research interests are at the interface of multidisciplinary skills combining food chemistry, enzyme technology and applied food science. Her main goals are to improve the Lebanese food safety and quality in order to address the needs of the Lebanese government and industries, and improve the food trade as well as protect the public health.

Opara Christiana is currently a lecturer at the Federal University Otuoke Nigeria in the Department of Microbiology. My ultimate Interests are to utilize the knowledge, training and skill acquired in molecular techniques which I receive through my Masters Degree and PhD to work in an institution where I will teach students and improve on the techniques. Inyang O. Oyo-Ita is a lecturer with the Department of Pure & Applied Chemistry, University of Calabar and had her university education in the University of Calabar where she obtained her M.Sc and Ph.D in Environmental Organic Geochemistry. Her current research interest are in the use of molecular tracers in understanding paleo-environmental conditions and paleo-climate with the view of predicting future environmental conditions and climate change as well as the use of pyrolyzed biomass (biochar) to facilitate biodegradation of petroleum in contaminated environment. Inyang Oyo-Ita is a fellow of the cooperate administration and has received outstanding national awards in Education.
Boris Kirov has a background in Biotechnology, Biomedical Engineering and Synthetic Biology. Currently, he works in BioInfoTech Lab in the newest science and technology park in Sofia, Bulgaria and he also teaches at the Technical University – Sofia. Dr. Mrs. Mary F. Istifanus has completed her Ph.D. at the age
of 45 years from Abubakar Tafawa Balewa University, Bauchi
state, Nigeria. She is a lecturer with the Plateau state
University, Bokkos, Plateau state Nigeria. She has published
more than 12 papers in reputed journals
Layal Karam is currently an Assistant Professor in Food Safety
and Quality Management, at Notre Dame University. Dr. Karam
has completed her PhD and postdoctoral studies from Lille 1
University in France. She acquired an international and practical
experience through her work for several years with USAID,
UNIDO and EU. She was a Manager of a food pilot plant,
established by ACDI/VOCA (USAID). She participated in
exchange teaching programs in France and Greece, has published
more than 7 papers in reputed journals, attended more than 11
international conferences and received Fulbright award in the US
and communication award in France.

I am Amir, Hosseinvand and Born In 1986. I graduated from
Food science technology major from Tehran. My Thesis was
about Fat replacers. I have 2 articles about food
contamination in Iran caterings. This Present work is my
newest article and hopefully to have this opportunity to
presented in this conference, If God Help Me.

Thaila has her expertise in Fungal Genetics and biotechnology
using Aspergillus as model organism. Main emphasis on
Molecular Genetics of Microorganisms, fungal food spoilage,
sugar sensing and signaling, aspergillosis infection and
antifungal drugs. Nowadays Thaila is CEO at Micro Control
Innovation, a startup focused in development of natural
compounds applied to the control of fungal development in
food.

Silvia Andini is a PhD student at the Laboratory of Food
Chemistry, Wageningen University, under supervision of Dr. Ir.
Jean-Paul Vincken (co-promotor) and Prof. Dr. Harry Gruppen
(promotor). Her PhD research is about exploring novel natural
antimicrobial compounds derived from Brassicaceae plants, with a
particular interest in isothiocyanates (ITCs), the biologically active
form of glucosinolates (GSLs), which are the major secondary
metabolites in this plant family. In her PhD research, she has
developed a novel analytical method to simultaneously analyse
ITCs and GSLs by using LC-MS. Now, her research is focusing on
the quantitative structure-activity relationship (QSAR) of ITCs as
antimicrobials and revealing their mechanism of action.
Dr. Shafika Zaki was born in Egypt, October 31, 1945. She
received Ph.D. in Food Science, Alma Ata Institute, Alma Ata,
Kazakhstan. Her interests include Research field of Food
Functionality, Food Processing and Food Microbiology. She was
the principle investigator of project “Cultivation of mushroom on
agricultural byproducts” Grant FRCU University Linkage with
Penn State University and vice principle investigator of project
“Rural and Bedouin women development in food preparation,
processing and storage” Grant FRCU, University Linkage with the
University of Maryland. She was also a member of the research
team of research project “Formulation and preparation of low cost
high nutritive values diets in UAR funded by the Academy of
Scientific Research”. She has published more than 50 research
