Dubai continues to astound the
world, with the widely anticipated
completion of Burj Dubai — the
world’s tallest building — on
schedule to open on 9 September
2009. As well as housing luxury
hotels and apartments, the building
will feature an impressive public
viewing tower. And surrounding it,
Downtown Burj Dubai will be the
site of the new Dubai Fountain — an
incredible water feature spanning
the length of two football fi elds!
Dubai’s new metro system also
opens in September, making it
easier to see the city’s attractions.
MIDDLE EAST
As the far eastern island of Taiwan
gears up to host two major summer
sporting events, why not look to
holidaying somewhere different
this year. The World Games, under
the patronage of the International
Olympic Committee, kicks off in
Kaohsiung on 16 July, featuring
non-Olympic sports such as
orienteering, water-skiing and
squash. The island also hosts the
21st Summer Deafl ympics in the
capital Taipei (5-15 September),
showcasing sports such as
basketball, beach volleyball,
wrestling and athletics.

Bird twitchers will be happy to
hear that after a 100-year absence,
one of New Zealand’s nationally
endangered bird species — the
South Island tieke or saddleback
— has found its way home to South
Island’s mainland. A population of
40 birds have been released into the
Orokonui Ecosanctuary, one of New
Zealand’s newest wildlife projects.
Orokonui hopes to reintroduce
other species including kiwi.

Why: One of the world’s most visited capital cities, London is packed with bags of royalty, pageantry and history. And with more than 200 free attractions, you can see a lot for very little.
Stay: In a leafy riverside spot, the bright and airy Chiswick Moran Hotel is quiet and close to the Underground. But Bayswater’s good value Byron Hotel, originally two Victorian houses, is a great location for exploring.
See: Buckingham Palace, the Queen’s offi cial residence, where

Why: Th e watery city home of gondoliers, the Grand Canal, Bridge of Sighs and St Mark’s Square has been a legendary destination for centuries.

treasures — it’s a land of swarming souks, ancient mosques and spice-scented mysticism, and while the bustle of the street and colours of the market are integral parts of the overall experience, so too are the treats of the dining table.
Nowhere are the country’s traditions more in evidence than in its famed national cuisine. When you fi nish a long lunch and fi nd yourself immediately looking forward to the evening meal, you know you’re somewhere that takes its food seriously.
Like all aspects of Moroccan life, its cooking is brimming with diverse infl uences, a fact stemming from the nation’s eventful history. Over the generations royal cooks have perfected the use of herbs and spices — saff ron, cumin, ginger, turmeric and coriander all still fi gure prominently.
Today’s menus incorporate Arab, Middle Eastern, Jewish, Berber, African, French and
Mediterranean fl avours, among others. Meals will often start with a selection of soups or hot and cold salads, before moving on to a heartier main course. Dessert usually comes in the form of sweet pastries or seasonal fruit, while mint tea is the drink of choice.
Th e most famed dish is the tagine, an aromatic stew, steam-cooked in an earthenware dish. Found across the country, it has its origins in the portable clay ovens carried by nomads and remains a staple of the local cuisine. Classic tagines include chicken with lemon and olives and lamb with prunes and almonds — the thick, spicy sauce is served with couscous, or mopped up with bread.
A tagine in a good traditional restaurant, complete with rich decor and low ornamental tables, has become a quintessential part of the Moroccan holiday experience. Many other popular dishes are also based on a similar blend of meat, spices and fresh vegetables.

carrots and squash. Mechoui: Popular at festivals, mechoui is a roasted leg of lamb, historically cooked on a slowing-turning spit. The Arabic word means ‘to roast on a fi re’. The meat is heavily spiced before being served.
Pastilla: Served as a succulent savoury pie, pastilla consists of puff pastry stuffed with squab (pigeon) meat, fl avoured with assorted spices like cinnamon. Harira: A thick spicy soup, usually based on chickpeas and lentils. Popular over Ramadan, harira can be served as a starter or as a meal in itself.
Djaja Mahamara: Chicken stuffed with almonds, raisins and couscous. It can be found in most parts of the country, usually in traditional restaurants. Fez-style couscous: An aromatic dish of couscous served with a stew of lamb, chicken or beef, together with a multitude

Serves 10 Heat oil in large pan. Add onions,
then gently fry until softened. Stir in
the ginger, add the meat in batches.
Fry until meat lightly coloured.
Return all the meat to the pan, stir
in the spices and cinnamon sticks,
then cook for 1min.
Add the passata and 800ml
water, bring to the boil, stirring.
Season well. Cover and simmer for
1½hrs, until lamb is tender.
Add sweet potatoes, stir well,
cover again, then cook for 20mins
or until the potatoes are just tender.
Stir in the dates and heat for
5mins. Season if necessary. To
serve, spoon the tagine into a dish
and scatter with almonds and fresh

SWAPPING BAREFOOT LUXURY
in favour of some good, old honest camping was a liberating experience. Yes, it was pitch black and raining, with probably all manner of indigenous creepy crawlies lurking outside, but what better way to spend my fi rst night in Australia than sleeping outdoors under the stars — even if I did get a little wet.
Luckily, this was New South Wales in the Australian summer and although the fi rst night proved to be a wet one, the following morning dawned sunny. With only a piece of canvas between me and the great outdoors, I woke to a dawn chorus of native birds that included the melodic kookaburra and whip-crack call of the eastern whipbird. I trotted down to the beach in time to watch the sun rise over a butter-curl white bay.

I usually avoid driving on holiday, but on this trip Down Under I’d decided to ‘do as the locals do’ and travel by campervan. Despite my baptism of water, getting behind the wheel proved a lot of fun and I found the ‘home on wheels’ concept very empowering.

New South Wales is a remarkable state. Not only does it house some of Australia’s biggest icons, it also boasts rich tablelands, eucalypt-fi lled valleys, mountains clad in sub-tropical rainforest, islands rich in marine life and wilderness areas jumping with wildlife.
SEDUCTIVE SCENESTh e beauty of New South Wales’ southern coast unfolds in a series of bays and coves that truly lends itself to a self-drive. Drive an hour south of Sydney and you come to one of the world’s oldest national parks, the Royal National, one of 39 national parks and reserves this region off ers along with a handful of wine regions and two World Heritage areas — the Greater Blue Mountains and Lord Howe Island.
Jervis Bay and neighbouring Booderee National Park were my fi rst stop but the drive through the Royal National Park and along the sinuously seductive Sea Cliff Bridge was a treat in itself.
Flanked by the Tasman Sea on one side and forested Illawarra escarpment on the other, the route meanders through rainforest, dips into villages and whisks you along a sensational stretch of coast. So sensational, in fact, you might lose track of time in its countless beachside cafes and arrive at your campsite two hours later than you had planned.
Booderee is an Aboriginal word
meaning ‘bay of plenty’. Current statistics indicate more than 206 species of bird, 27 species of land mammals, 15 frog species, 23 reptile species and 650 species of plants inhabit the park — among them blue cockatoos, eastern rosellas, penguins and kangaroos.
Its hinterland off ers waterfalls, creeks, bush walking and 55 miles of beaches. Part of this coastline is made up of the Jervis Bay Marine Park, boasting 216 species of fi sh as well as whales and dolphins. According to the Guinness Book of Records, the world’s whitest sand is also found here and when you’re dazzled by the sand at 7am, it’s not hard to believe.

Th e evocative sounding Green Patch, where we stayed for two nights, lives up to its reputation as one of Booderee’s most sought-after locations. Book early to secure a spot; more than 450,000 visitors, many regulars, stay here each year and with good reason.
Th e site gives access to the stunning sheltered beach with crystal-clear waters, where you can walk for miles, scrunching the world’s whitest sand between your toes, and gulp bellyfuls of tea-tree and eucalypt-scented air.
BBQ IN THE BUSHOur second (drier) evening was spent chatting with a couple who have been coming to Jervis Bay since the mid-1980s. Hanging out with the locals has its advantages as not only did the pair possess the world’s most powerful gas lamp — useful for fi nding our way at night — but we also got to dine on their freshly caught snapper. “Yep, she’s a beauty,” confi rmed Dale as he fl ipped the fat fi sh on the barbie.
Under brooding skies next morning, I drew comfort in the knowledge that today I was moving on to a campsite with a diff erence. In Paperbark Camp, a 20-minute drive away, I’d found the perfect foil for the capricious weather.
Located in a natural bush setting, Paperbark is Australia’s fi rst luxury tented camp. My safari style ‘tent’, named Gang Gang after the eponymous cockatoo, sat on a timber platform beneath a canopy of gums and paperbark trees.
Th e carbon footprint here is minimal: lights and hot water are solar powered and there are no phones or TVs. Eco-tourism is taken seriously and the owners employ a tree doctor to perform regular ‘medicals’. Th ere are canoes for paddling on the Currambene Creek and bicycles for bush forays.
Locals come for gourmet treetop dining at the Gunyah restaurant, a
stilted eyrie set in the tree canopy. Th e Gunyah doubles up as the camp’s nerve centre, a place to chat by the fi re. Dining on the balcony was like camping ‘a la carte’, with a menu featuring kangaroo kebabs with lemon and myrtle yoghurt, salmon baked in paperbark and kaffi r lime, and ginger sorbet with lychees and Bacardi.
Dinner over, I padded back through the bush, eyes peeled for wombats, kangaroos and possums — the latter having a penchant for sticking their noses through unzipped tents. Fond as I had become of my rooftop tent, I admit I preferred the sound of torrential rain lying in Gang Gang. Roughing it, without roughing it.

Be prepared: kids have to be a certain height for many rides. Beat the crowds by working backwards through a park instead of starting at the front. Booking an ‘on-site hotel’ has its perks. THE GLACIER EXPRESS between
St. Moritz and Zermatt in
Switzerland is by far one of the
most scenic railway journeys in
Europe and regularly touted as one
of the things you should do before
you die. Crossing 291 bridges,
passing through 91 tunnels and
mastering the 6,670 ft-high Oberalp
pass, the Glacier Express offers
landscapes on a grand scale — the
kind of views that keep you gazing
out the window for hours.

Panoramic coaches have clear
glazing from below waist height
right into the roof so you can
appreciate the spectacular views,

commentary, in eight languages,
explains all the sights of interest.

train begins its 7hr 30min journey.
