F u r t h e r m o r e , i n h i b i t i o n o f L . m o n o c y t o g e n e s d u r i n gd r y i n g was e n h a n c e d i n t h e presence o f p e d i o c i n i n t h e t h r e e t r i a l s i n w h i c h L . m o n o c y t o g e n e s c o u l d b e d e t e c t e dt h r o u g h o u t t h e d r y i n g process. T h u s , p e d i o c i n p r o d u c t i o n c o n t r i b u t e d t o a n i n c r e a s e i n s a f e t y d u r i n g b o t h t h ef e r m e n t a t i o n a n d d r y i n g p o r t i o n s o f sausage m a n u f a c t u r i n g .

    F o o d - b o r n e l i s t e r i o s i s o u t b r e a k s h a v e b e e n a s s o c i a t e dw i t h t h e c o n s u m p t i o n o f c o l e s l a w ( 3 0 ) , m i l k ( 8 ) , a n d c h e es ep r o d u c t s ( 2 ) . Two cases o f l i s t e r i o s i s h a v e b e e n l i n k e d t oc o n s u m p t i o n o f p o ul t ry p r o d u c t s ( 3 , 1 9 ) . A l t h o u g h a m a j o ro u t b r e a k o f l i s t e r i o s i s r e l a t e d t o meat c o n s u m p t i o n h a s n o tb e e n i d e n t i f i e d , t h e a s s o ci a t i o n o f L i s t e r i a monocytogenesw i t h m e a t , i n c l u d i n g c u r e d a n d f e r m e n t e d p r o d u c t s , i s w e l ld o c u m e n t e d ( 6 , 7 , 2 5 , 2 6 , 3 2 ) . R e c e n t s t u d i e s h a v e shownt h a t L . monocytogenes may s u r v i v e t h e c o m b i n a t i o n o f l o wp H , l o w water a c t i v i t y , s o d i u m c h l o r i d e , a nd s o d i u m n i t r i t ea s s o c i a t e d w i t h t h e f e r m e n t a t i o n a n d d r y i n g o f meat ( 4 , 9 , 1 6 ,1 7 ) .I n h i b i t i o n o f L . monocytogenes b y b a c t e r i o c i n s p r o d u c e db y P e d i o c o c c u s a c i d i l a c t i c i may p r o v i d e a d d e d c o n t r o la g a i n s t t h i s p a t h o g e n i n f e r m e n t e d meat p r o d u c t s .
