Our destination Macau has a lot in common with Hong Kong. Both places have made immense economic achievements despite their relatively small size. In the lead-up to Christmas, retailers across Macau are geared up to present a shopping festival to visitors. There is also a lucky draw with many attractive prizes. This issue also looks at several other interesting travel destinations. London, no doubt, enjoys worldwide popularity among travellers. In Asia, the Chengde Mountain Resort, constructed during the Qing Dynasty, offers a cosy retreat set against stunning mountain landscapes. Relatively cool in summer and warm in winter, the resort is surrounded by mountains on four sides and the Eight Outer Temples.

在 1 2月1日至3 1日期間舉行的「2013澳門購物節」，由17個單

位組成的澳門購物節籌備委員會主辦，澳門特別行

政區旅遊局協辦。今年的主題為「一天購物、一天玩

樂」，籌委會旗下的大小商場及逾千間商戶均會在購

物節期間提供優惠獻禮，旅客只需認明參與商戶舖面

The Shanghai Film Group made this a central goal when it redeveloped its former studios. The result is the Shanghai Film Museum, an interactive experience that celebrates the more than 100 years of Shanghai cinema in 10,000 square metres of exhibition space.

In addition to its collection of interactive installations and about 3,000 historic exhibits – from old props to classic costumes used in film-making – the facility will offer special screenings of restored films from the early days of Shanghai cinema, which began in 1896. As a contemporary museum, the space also celebrates current cinema by taking visitors through fully equipped animation and post-production studios, where they can see and virtually participate in the craft of film-making. Other facilities include DIY workshops, an event space, a 4D cinema, a shop and café.

GONPACHI HAS BEEN a tourist destination as well as a favourite watering hole for Tokyo diners in trendy Nishi-Azabu since it notoriously became known as the Kill Bill restaurant. The cult film wasn’t shot there, contrary to popular belief, but the extravagantly rustic interiors impressed director Quentin Tarantino so much that he recreated it whole as a sound stage for the famous fight scene in Kill Bill. Gonpachi Hong Kong, located in the city’s Causeway Bay district, is designed by Steve Leung channelling Edo-period style through oriental eaves, traditional lanterns and dark woods. The modern izakaya focuses on sake, skewers and its celebrated soba noodles – made daily from buckwheat flour ground with a stone mortar on the premises – which come in generous portions. Sumiyaki dishes such as karubi – succulent short ribs of Japanese beef seasoned with garlic – are all grilled with Binchotan charcoal, which gives it a distinct, smoky flavour. The rest of the items try to shake things up a little, such as its Asian version of bagna cauda, one of the chain’s signature dishes. The fresh garden vegetables, lightly blanched and chilled to keep their crunch, are served with an aromatic dip of Shanghai crab roe and olive oil warmed in a diffuser, and drip with unctuous umami. Sake is the soul of a proper izakaya, and Gonpachi Hong Kong offers 88 different types.

TUCKED AWAY DOWN a small and insignif-icant shopping arcade, between a bank and a small supermarket, the alert ambler can spot one of Macao’s true culinary gems. Riquexó (pronounced “rickshaw”) is one of the very few establishments in Macao that serves genuine home-style cozinha macaísta (Macanese food) – as opposed to the ersatz restaurant versions of Portuguese and Macanese cuisine that most vis-itors to the city – sadly – are allowed to mistake for the genuine article. Riquexó has been around since what seems like ages past; to all outward appearances most of its clientele have too. Riquexó’s dignified, immaculately coiffed proprietress, Mrs Aida de Jesus, is now aged in her nineties, but still presides behind the counter most days.

The unpretentious, cafeteria atmosphere here per-fectly complements the excellent home-style local food; Riquexó is the place to come for minchi faan, the quintessential, very filling home-style Macanese dish of minced meat (usually pork, but sometimes combined with beef as well), well braised with soy sauce, fried diced potatoes and onions and served with a plate of rice and a fried egg. A Vencedora, another popular, long-running Portuguese-Macanese café on Rua do Campo, is the only possible commercial com-petitor in the city for a plate of authentic minchi faan.

助餐廳歷史悠久，就像許多老顧客一樣飽經歲月洗練。

女東主Aida de Jesus太太雖已年過九十，仍然打扮端莊得體，經常坐在櫃枱後打點一切。

值得品嚐的還有自家製飲品無花果蜜。這款果蜜以

無花果葉浸泡在冰糖中製成，放入冰塊及清水，即成為澳門的特色無花果蜜。炎炎夏日喝一杯，尤其冰涼暢

快。當地超市也有出售這款飲料，但品質當然跟自家製

的相距甚遠。光顧利多餐廳的最佳時間是午飯前，因為

一到下午，許多美食很快會賣光。正宗澳門風味已愈來

愈罕有，要品嚐的話就不可錯過利多自助餐廳。

沿着荷蘭園大馬路一直往南走，會見到一幢古舊的

綠色建築，那裡就是該區碩果僅存的澳門老店之一：

禮記雪糕飲冰專家的所在。這間老店已有超過五十年

歷史，以自家製雪糕吸引了好幾代的顧客。以前冷凍技

術未普及，澳門市民生活也不算富裕，家中很少添置冰

箱，於是一般家庭甚少吃雪糕。夏日能偶爾來一個甜

筒，或是一杯新地，便是一大樂事。禮記的餐牌上各個

充滿異國情調的名字，如棕櫚樹影、彩虹芭菲、加勒比

海風情、西班牙咖啡，以及一直深受各國人士愛戴的香

蕉船等等，在在反映昔日品嚐雪糕的浪漫情懷。

雀仔園市政街市位處東望洋下方，建於1939年，檸檬黃色的大廈設計乾淨利落，是當時的建築特色，至今

仍保存良好。澳門的街市檔攤大多有歐洲食材出售，包

括橄欖和橄欖油、葡式chouriço香腸，以及各種豆莢如鷹嘴豆等，相比起來香港的街市則較少見歐洲食材。

由此可見，許多普遍的葡式食材，亦廣為澳門華人採

用，成為他們烹飪材料的一部分。澳門的農產品街市總

是趣味盎然，這裡的標誌都是用中葡雙語寫成的。

在澳門土生協會不遠處，可以找到市內其中一間最

源遠流長的咖啡室：Estabelecimento de Comidas A Vencedora（坤記餐室）。它於1918年開業，雖然

曾經遷舖，但一直沒有離開水坑尾街。餐室的名菜

bacalhau à Brás以馬介休（鹽醃鱈魚）配馬鈴薯、洋蔥和雞蛋炒成，份外美味。要招徠土生土長的澳門顧客，餐牌上當然少不了澳門名菜minchi faan，而坤記餐室炮製的minchi faan，水準可以媲美利多自助餐廳，兩者在全澳門的餐館中可謂互相輝映。

離聖保羅大街不遠的福華巷上，就是「巴西美食」

（Yes Brasil!）的所在。店舖裝潢樸實，食物水準一流，價錢合理，每日或午市精選頗為實惠，自創業以

來，逐漸成為當地巴西裔人士的聚腳點。一眾舞藝

精湛的森巴舞者不時於下班後，到店內一聚，無論在

舞池內外，同樣活力充沛。這裡也可買到巴西甘蔗酒

The Mercado Municipal (Municipal Market) in Cheoc Chai Un below Guia was built in 1939. The lemon-yellow buildings are a pleasing example of the clean functional lines typical of this period, and are maintained in excellent condition. Stalls at fresh markets in Macao, such as this one, generally stock a range of European food items, such as olive oil, chouriço (Portuguese sausage), olives and various types of pulses, such as chick-peas, that would not be found in predominantly Chinese markets in neighbouring Hong Kong; a telling indication of just how closely many basic Portuguese food items have been assimilated into the wider Macao Chinese diet. Fresh produce markets in Macao are always of interest; signage here, as in other markets elsewhere in the city, is in Chinese and Portuguese.

Not far from the Associação dos Macaenses, one of Macao’s most popular long-established cafés, Estabelec-imento de Comidas A Vencedora has been in business on Rua do Campo – though in different premises – since 1918. A Vencedora’s rib-sticking bacalhau à Brás, salted cod-fish fried up with potatoes, onions and eggs, is especially tasty. And, of course, no café on Earth patronised by true-born Macanese would even be in business without having a version of minchi faan, the Macanese “national dish”, prominent on the menu. A Vencedora’s minchi faan vies with that served at Riquexó, in the north of the city, for the honour of the best in Macao served outside a private home.

On Travessa da Fortuna, just off Rua de São Paulo, Yes Brasil! offers some of the most reasonably priced, tasty food in all of Macao; the lunchtime prato do dia (daily plate or daily special) at this friendly, unpre-tentious place is always excellent value. Since its establishment, Yes Brasil! has gradually become a gathering place for the resident Brazilian community in Macao. It seems to be a popular off-duty spot for the city’s super-athletic samba performers, who burst with vitality both on and off the dance-floor. This is also a good place to stock up on a bottle or two of cachaça, the fiery Brazilian aguardente (cane spirit). This elixir forms an essential component of the legendary caipirinha, Brazil’s wonderfully potent national drink and alcoholic gift to the world: cachaça, ice and fresh lime-based elixir.

On Saturdays – the traditional day to eat this dish in Brazil – feijoada remains, without question, the very best thing to order, and the sheer number of clearly happy people who eat here tells its own story; redolent with fresh, dried and smoked meats, feijão (black beans), shredded cabbage and oranges, fei-joada is best eaten in a large group when very hungry,

on offer. One renowned speciality is home-made balichão, a uniquely Macanese condiment made from salted, fermented prawn spawn, bay leaves, peppercorns, Chinese rice wine and lemons or limes. While sharp-tasting balichão doesn’t please every palate, it remains an essential ingredient in numerous traditional Macanese dishes and blends especially well with pork dishes. The closest possible readily available substitute to Macanese balichão is Malaysian belachan or Indonesian terasi.

Another excellent home product available here is xarope de figo (syrup of figs). Made from an infusion of fig leaves and rock sugar, Macanese-style fig syrup is mixed with water and ice and served as a refreshing summer cordial. Some commercially made brands are available in local supermarkets, but nothing com-pares to the home-made variety for quality. Probably the best time to visit Riquexó is at early lunchtime during the week; most of the food will be sold out by early afternoon. Riquexó is not to be missed for an authentic, increasingly rare, Macanese experience.

Further south along Avenida do Conselheiro Fer-reira de Almeida, housed in an old green building – itself one of the few business survivors from the past in this part of town – Gelados Lai Kei Refrescos Sorvetes e Doces is a Macao institution. This wonder-ful relic of years gone by has been serving up delicious home-made ice-creams to generations of satisfied cus-tomers for over five decades. Not so many years ago, in the time before more widespread general affluence and mass availability of refrigeration, ice-cream was not regularly found in many Macao homes – there were no refrigerators – and an ice-cream cone or, better still, an exotically named sundae, was an occa-sionally enjoyed summer treat. Names on the menu indicate the romance and exoticism that enjoying an ice-cream was once seen to offer. Palm Tree Shadow,

and washed down with a few generous caipirinhas. A prominent Avenida da República landmark since 1976, Henri’s Galley, just below the Bela Vista, is one of Macao’s most well-known restaurants. Famed for its African chicken, which has been described in decades of tourist literature as the quintessential Macanese dish – in fact it is a very recent introduc-tion to the local culinary scene – African chicken is the menu speciality here and gets pushed very hard indeed by the staff.

African chicken only came to Macao in the 1960s with soldiers from the then-Portuguese African provinces of Angola and Mozambique, where it was known as Galinha com piri-piri (chicken with piri-piri). Piri-piri is the fiery malagueta pepper-based condiment widely used in southern Africa. According to some sources, African chicken was first cooked in the city in the 1950s at the now-demolished old Pousada de Macau, which stood next to the Palácio do Governo on the Praia Grande. Other accounts dispute this provenance but whatever its origins, over the next three decades African chicken became the perennial tourist-restaurant staple right across the city. This tasty, highly spiced dish is excellent enjoyed outdoors here with a bottle of chilled vinho verde to help it down.

出，表面看來，許多人都認為中國是一個整體，但若深

入了解，就會發現這片大地是由多個民風南轅北轍的省分、族群和文化組成。

鄭禕認為自己雖身為華裔，卻不完全是中國化。她

說︰「我嘗試將中國給我的感覺投放在作品中。我並非

在中國長大，對祖國可謂一無所知。但我是中國人，而

且經常在國內四處走，發現每個地方都各具特色。」

她的陶藝作品曾在英國、德國和美國公開展覽，並成

為多個藝術機構的藏品，包括大英博物館、香港藝術館

及位於北京的中國國家博物館。鄭禕現年50歲，大部分時間在上海及江西景德鎮生活，而景德鎮製作陶瓷的

歷史已有1,700年之久。10月尾，蘇富比為鄭禕在香港舉辦了為期一周的展

售會。鄭禕訪港時笑著解釋「福」系列蝴蝶長袍字源的

語意︰「福」字的發音在中文裡有很多近音字，象徵多重

意思，例如「蝠」字就會讓她想起蝴蝶，還有「服」字及

「福」字等。

她又指出︰「我的作品大多從色彩出發，帶有幽默和

諷刺的意味。我喜歡用文字玩遊戲。」

鄭禕說得一口流利的普通話、客家話、上海話和廣東

話。有見於景德鎮多個世紀均以生產瓷器為主業，她特

別禮聘了景德鎮一位女工匠為她燒製長袍上的陶瓷蝴

蝶。她指出中國陶瓷界共有72項傳統技術，而按照景德鎮的傳統，這些技術分工非常精細，例如混陶工匠便絕

對不會越俎代庖，涉足烤陶工作。

因此，鄭禕的蝴蝶陶藝作品反映了景德鎮多項傳統工

藝的精髓所在，每件作品都結合了多重技巧及元素製作

而成。她指出︰「有一位德國人Lothar Ledderose撰寫了名為《萬物》的著作，我看完後心裡想︰好，我就要用

書中所述的形式製作這件長袍。」

獲鄭禕聘請燒製大量陶瓷蝴蝶的女工匠，曾製作一

隻飾滿蜻蜓、蝴蝶、玫瑰、菊花的小碟子，可是這隻用

上大量工時和人力的碟子，只售15人民幣。鄭禕說︰「那隻碟子價格便宜，其做工粗糙，不很美觀，像洛可可風

格般過分裝飾。」於是她問這位女工匠是否願意為她製

造配上小吊環的陶瓷蝴蝶，用以裝飾她的原型長袍。她

跟工匠說︰「我需要10,000隻蝴蝶。」她的展售會共展出15件作品，售價由7萬港元至70萬

港元不等。當中她最喜歡的是兩套親自製作的茶具，並

特別在石器加上釉陶修飾。鄭禕指出這樣做能為中國

茶添上特別的芳香。她說︰「我近來發現用柴燒陶杯喝普洱茶，是一種至高無上的享受。用這種杯喝茶，茶會

變得更香更好喝。」她所指的雲南普洱茶，屬於顏色深

沉的發酵茶。

鄭禕在全力創作之餘，還要騰出時間管理樂天陶社。

她是陶社的社長，陶社以陶瓷教育及提倡陶藝為宗旨，

在上海、香港、北京及景德鎮均有分社。她還注意到有

好幾位西方藝術家已先後來到景德鎮發展，她盼望這份

中西文化交流能繼續發展，而且進入各種藝術範疇。

她表示︰「中國有很多『硬件』，但沒有『軟件』。景德

鎮的情況卻相反，因此這兒才會吸引音樂家、時裝設計

師和電影巨星前來，他們都喜歡這個地方。」

FROM A DISTANCE, all of the tiny porcelain butterflies clustered on Caroline Cheng’s robe appear to be the same hue, shape and size: a flock of 30,000 identical ornaments, sewn onto a bur-lap backing. Yet, Cheng says a close inspection reveals that each intricately fashioned butterfly is a handmade individual, crafted from 10 parts.

Her Prosperity series of butterfly dresses are sym-bolic of China on many levels, says the British-born artist. “Every single butterfly is different”, says Cheng, “if you look carefully, if you spend the time to look at it.” From a distance, many observers see China as a single entity, Cheng notes, but up close it becomes obvious the land mass is made up of many exhilarat-ingly different provinces, people and cultures.

Cheng sees herself as both from China and not. “I try to incorporate what China means to me, as a person who did not really grow up in China, who would know nothing about China,” she says. “But I am Chinese. I’ve been travelling like mad in China; it’s so different everywhere.”

With exhibitions in Britain, Germany and the United States, Cheng’s ceramics have been collected by insti-tutions including the British Museum, the Hong Kong Museum of Art and the National Museum in Beijing. Now 50 years old, she divides her time between Shang-hai and Jingdezhen, a town in Jiangxi Province with a history of ceramics going back 1,700 years.

Visiting Hong Kong, where Sotheby’s held a week-long selling exhibition of her work in late October, Cheng laughs as she explains the semantic origins of her butterfly robes. In Chinese, fu has a treble meaning, she says: “bat”, which reminded her of butterflies, “clothing” and “prosperity”. “My work is about humour,” says Cheng. “It’s about colour, it’s about satire. I play with words.”

Fluent in Mandarin, Hokkien, Shang-hainese and Cantonese, Cheng commissioned the butterflies for her robe from a craftswoman in Jingdezhen, where ceramic work has been a way of life for centuries. She notes that there are traditionally 72 different skills in the world of Chinese ceramics. Tradition in Jingdezhen dictates that there are no overlaps; a clay pre-parer, for instance, would never cross the line and work as a firing expert.

So Cheng’s butterfly art reflects the traditions of Jingdezhen as well: multiple skills, or multiple ele-ments, combining to form a single piece of work. “There’s a German guy [Lothar Ledderose] who wrote a book called Ten Thousand Things: Module

and Mass Production in Chinese Art, and I read it and thought, well, this is how I’m going to make my dress.”

She commissioned the mass of butterflies from the craftswoman who had made a small plate decorated with a crush

of dragonflies, butterflies, roses and chrysanthemums. The plate was for sale for 15 yuan, a tiny amount for

the labour involved in its production. “But it was cheap and ugly, and rococo,” Cheng says. She asked whether the craftswoman could make butterflies with attached hooks for her prototype garment. “I need about 10,000,” she told her.

The selling exhibition of Cheng’s work will feature a total of 15 pieces, ranging in price from HK$70,000 to HK$700,000. She particularly likes two sets of tea ware she made herself using a porcelain slip, or surface finish, on stoneware and says they add a unique flavour to tea. “I’ve recently discovered that using wood-fired-ash build-up cups to drink puer tea is

one of the most orgasmic things,” she says, referring to the dark, fermented tea from Yunnan Province.

Cheng juggles her time between her art and her position as the Executive Director of Pottery Workshop, a ceramics education and communication centre with branches in Shanghai, Hong Kong, Beijing and Jingdezhen. She has noticed a few West-ern artists arriving in Jingdezhen and she hopes there will be continuing cross-cul-

tural inspiration and understanding in all of the arts.“In China there’s a lot of hardware, no software,” says

Cheng. “But Jingdezhen is all software, no hardware. So it’s very attractive. We’ve seen musicians come, fashion designers, movie stars. They love the place.”

GET YOUR HANDS ON a third of a million pounds worth of the most glamorous global com-modity – gold – at the Bank of England Museum in East London. Cold, shimmering, smooth and deceptively heavy for its size, the 13-kilogram gold bar on display in the Rotunda is valued at about £328,000 – its value changing with the market – and can be handled by visitors. “This is by far the most popular exhibit,” says museum press officer Sebastian Walsh. The gold bar, which gives a satis-fying “ting” when flicked, is housed in one of many exhibitions in the museum that charts the 300-year history of the world’s second-oldest central bank.

housed within the grand building. Admission to the museum, open to the public on weekdays, is free. “The bank has had a presence on this site since 1734,” says Walsh. “What is now the museum was converted after a fire in the late 1980s, prompting the area’s rebuilding.”

Although scheduled to be closed for maintenance between January and March 2014, visitors to London need not despair: last year, the museum released a virtual tour app for both iPhone and Android, allowing visitors to thoroughly explore the famous Threadneedle Street building.

Regal traditions and colonial exploits mean there are a wealth of precious objects and day-trip memo-ries on offer in Britain’s capital. London’s financial district is in a constant state of redevelopment but

The area’s biggest exchanges remain: the London Stock Exchange and the London Metal Exchange, where worldwide deals are made at a frantic pace. The former is no longer open to visitors but the same frenetic energy can be observed during a visit to the Metal Exchange viewing gallery. Entry, at set times, must be booked at least four weeks in advance.

Our next stop ticks off three unmissable London sights in one go: the dazzling Crown Jew-els, which are housed in the Tower of London and guarded by the Yeomen Warders – better known as Beefeaters. The fortress tower has a long history

with money; it has been used as a royal treasury and was the location of the Royal Mint in the 13th century until it moved in 1812. The Crown Jewels

are part of the regalia used for the coronation of kings and queens. The oldest item is a 12th-century

gold Anointing Spoon, which, along with three steel coronation swords, survived

the destruction of royal regalia during the civil war of 1649-50. When the

monarchy was restored in 1660, King Charles II brought back the regalia, and the collection has grown since then. In 1953, Queen Elizabeth II’s corona-tion saw her take to the throne

The collection comprises almost a million coins and medals; the most dazzling and historically important items were picked for room 68, the Citi Money Gallery, which is open all day and offers free tours daily at 2:15pm. Starting in 2000BC and leading to the present, the gallery features 1,200 items. Highlights

include an ornate 1901 Tiffany & Co.-designed cash register and an original Andy Warhol dollar-sign screen print.

Visitors might leave with a magpie desire to acquire something shiny of their own. A short walk from the British Museum is the London Silver Vaults, the world’s largest retail collection of antique silver. London’s subway system isn’t the only underground labyrinth – the vaults are three storeys down and comprise more than 20 shops, each behind vault doors a

foot thick. Starting as The Chancery Lane Safe Deposit in 1876, the vaults housed the

valuables of London’s elite. Shops moved in to secure their stock during World War II and,

Descending the staircase, the distant clatter of metal recalls a restaurant kitchen but that image dissolves before large glass cabinets containing items that range from delicate jewellery to grand cast animals. The strik-ing beauty of the antique objects gives a museum feel but here everything’s for sale. The shops all have their specialities: John Hamilton sells silver service dinner sets, Kalms Antiques centrepiece is a large silver galleon and Crown Silver stocks two silver thrones.

“People usually buy for birthdays, christenings and, of course, silver weddings,” says Steven Linden of Linden & Co., which specialises in giftware. They also sell silverplate antiques that cost from £50 up to

£500, but for collectors’ items, prices can be huge. “Last year, we had a set of spoons dating back to 1550 and 1600. A good early spoon can be worth thousands of pounds,” Linden says.

When considering decorative gifts, high-end chain stores spring to mind, but the vaults’ shops offer a special edge. “The range is huge and most of it is antiques,” Linden explains. “Chain stores don’t have the expertise to buy antiques but we’ve been in this business for decades.” Linden is a third-generation silver-seller whose father moved their shop from Bond Street down to the vaults in 1953.

AS THE FIERCE DESERT sun dips towards the horizon, sucking the heat from the day, three young indigenous men, their faces and bodies streaked with white ochre, start to dance.

Fine red dust is kicked up as they imitate the animals – kangaroos, emus and goannas – that call Australia’s outback home. These dances tell stories of ancestral spirits and how things came to be – but sometimes they’re just for fun, showing off the dancers’ graceful movements and sheer athleticism.

Mesmerised guests sit cross-legged on Ayers Rock Resort’s Town Square lawn, watching the free show – until they become part of it. Many aspects of indigenous culture are divided along gender lines, so performers first coax males from the grass to try one dance, then females try another. Everyone laughs at how awkward they look – these dances aren’t so simple after all.

This performance highlights a seismic shift at Ayers Rock Resort, which is finally showcasing

For years the resort was run like any other, relying on its unbeatable location outside the entrance to Uluru-Kata Tjuta National Park to attract guests. The drawcards of Uluru, the 340-metre high mono-lith formerly known as Ayers Rock, and Kata Tjuta’s 36 awe-inspiring rock domes, also referred to as The Olgas, were enough for many guests but oth-ers were disappointed that the ancient culture so entwined with this country was nowhere in sight at the resort.

That began to change in 2011 when it was bought by the Indigenous Land Corporation – a statutory body that acquires land to help close the gap between indigenous and non-indigenous Australians. It splashed A$30 million (about HK$224 million) on a conference centre and desert-themed overhaul of the five-star Sails in the Desert hotel.

The corporation also introduced indige-nous-themed activities. As well as dancing, guests can try spear and boomerang throwing, listen to bush yarns or play a didgeridoo, which is only for males.

Those wanting an even deeper insight can take SEIT Outback Australia’s bushtucker tour. Indige-nous guide Arthur Freckleton leads guests through seemingly inhospitable country. “In one area there’s food, in another area nothing – that’s the desert,” he says easily, before crouching over a tuft of woollybutt grass and shaking its tiny seeds into a wooden bowl. After grinding them into flour and adding water, the seeds become a surprisingly delicious dough.

He points out the difference between hard acacia, or mulga, trees and soft acacia, which are favoured by witchetty grubs, another prized desert food. “Witchetty grubs never eat mulga – it’s too hard for their teeth,” says Freckleton. Mulga’s tough timber, though, makes excellent digging sticks and spears.

Visitors can also travel through this extraordinary landscape atop a camel. It’s estimated about a mil-lion feral camels populate outback Australia – the unwanted legacy of camel trains that helped open up the country’s arid centre in the late 19th century.

“When it comes to training, camels are just like big dogs,” says cameleer Darryl Field. “Hoosh!” he says and a sitting camel, now with a rider aboard, awkwardly unfolds its legs to stand in readiness for another trip through the dunes.

Watching passing camel trains is a daily ritual in another famous outback destination, Broome. A 2½-hour flight north from Perth, this seaside town is the tourist capital of the Kimberley, a vast region famed for spectacular, jaw-dropping natural beauty.

Australians who live on the east coast are mes-merised by the sunset in the west: it’s a magical sight to see the sun setting over ocean rather than

The best time to visit the Kimberley is during the dry season from May to September. Many activities don’t operate during the summer wet season, when flooding can cut off communities for weeks.

Broome’s fortunes were built on the back of the pearling industry. These days tourism is the multicul-tural town’s main occupation. Visitors enjoy unique attractions such as Sun Pictures, where patrons flop into deckchairs to watch movies under the stars. Whale-watching tours are also popular.

This is also where expedition ships set off along the Kimberley coastline. One of the biggest drawcards is the Horizontal Waterfalls, where extreme tides spec-tacularly force water through a 10-metre-wide passage.

Broome dominates the region’s tourism but the East Kimberley town of Kununurra is an equally worthy destination. It’s the base for scenic flights over the beehive-like sandstone formations of the Bungle Bungles and for boat trips up the crocodile-infested Ord River, which irrigates this food bowl of north-

ern Australia. From Kununurra, it’s also an easy drive to El Questro Homestead, in El Questro

Wilderness Park. Here guests can soak in a bathtub overlooking the Chamberlain

River, or head to the palm tree-fringed Zebedee hot springs, closed off each afternoon for one lucky couple. The Australian outback just doesn’t get better than this. IM

THE KANGXI EMPEROR often expressed his desire to leave Beijing during the baking summer months. As a result, in 1703, he – and an entourage of hundreds – set out on a 230-kilometre journey of several days for a new summer palace. It was a royal ritual that would be undertaken almost every spring for the next 160 years. From the Forbidden City, often torpid and airless in the summer, the impe-rial convoy headed northeast, past the Great Wall and through rolling, arid hills, to cooler Chengde. The Qing Dynasty, of which Kangxi was the second ruler of all China, were Manchus, known for their passion for horses and archery. Consequently, the 49-year-old emperor is believed to have ridden for much of the journey.

While Kangxi found Chengde’s climate far more agreeable than Beijing, he also saw political mileage in it as a symbolic gateway between his ancestral homeland in the north, Manchuria, and Beijing from where the “Great Qing” now ruled a vast nation.

Until then, Chengde had been an insignificant hill station that the Manchus called Jehol, mean-ing hot river, which took its name from the nearby waterway that refused to freeze even in the depths of winter. Craftsmen and indentured labourers arrived in great numbers to do the groundwork for the new Bishu Shanzhuang – literally “Mountain Estate for Escaping the Heat” – and civil servants and eunuchs followed with abacuses and agendas. Even so, it took the rest of the century, and two more emperors, for Chengde Mountain Resort and its adjacent Eight Outer Temples to be completed.

Nonetheless, China was ruled from the resort dur-ing the 18th and 19th centuries when it was too hot in Beijing. The imperial caravan would arrive each year from the capital, soon followed by emissaries and lobbyists from all corners of the Middle Kingdom. On arrival, visitors would find a complex of such grandeur and scale that even the most saddle-sore would be dazzled. The palace fell out of favour in the 1860s, and finally into disuse at the end of the Qing Dynasty, in 1911. It has since been lovingly restored.

These days, reaching Chengde is a little easier, although the snaking train journey from Beijing takes more than four hours. It’s a small city that has grown up over the years alongside the mountain resort. In terms of numbers, Chinese ethnic minorities are strongly represented in the city, including Manchu, Mongol, Tu and Muslim Hui. Some residents here trace their roots back to the nomads that roamed the land when Kangxi was in power. That nomadic

到炎炎夏日，康熙帝便會興起離京避暑的念頭，終

離開夏天悶熱難耐的北京紫禁城，越過萬里長城，攀

過綿延不斷、乾燥的山嶺，來到天氣清涼的承德。清朝

由滿族人統治，康熙是他們入主中原後的第二位君主。滿人以精於騎射聞名，據說當年前往承德的旅程上，已

年屆49的康熙大部分時間也是騎馬的。康熙決定在承德興建夏宮，除了因為承德氣候更怡

人，還看中承德北接清朝發祥地滿洲、南接大清政治中

心北京的有利位置。

在這以前，承德原本只是一個無足輕重的山城，因河

水在嚴冬也不會結冰而被滿人稱為「熱河」。避暑山莊

的建造動用了大量的工匠及役工，還有負責管錢和監工

的朝廷官員和太監，整座宮殿加上毗鄰的「外八廟」，共

耗了近一個世紀、歷經三任君主始竣工。

在18及19世紀，每當北京天氣太熱，清朝君主便會於避暑山莊處理政事。隨著皇室人員從京城來到山莊，各

地特使和說客亦尾隨而至。初次來訪的客人，即使舟車

勞頓後已筋疲力竭，也禁不住驚歎於這座宮殿恢宏輝

煌。避暑山莊在1860年代後開始被冷落，1911年清朝覆亡後更一度荒廢，但現已完成修復，回復昔日光采。

今天，由北京乘坐火車蜿蜒而行，儘管仍要四

個多小時才能到達承德，但比起昔日已方便多了。

這個小城圍繞避暑山莊發展，不少居民為少數族

裔，包括滿、蒙、土、回族，部分人的祖先在康熙在

位時期已在這片土地上逐水草而居，當地菜式亦

反映了遊牧民族的特色以至滿人對狩獵的熱愛，

族裔及文化。以普陀宗乘之廟為例，它仿照達賴喇嘛曾

居住、位於拉薩的布達拉宮而建，雖是藏傳佛教的黃帽

派寺廟，但又不失精緻。於晨光初露之時，山谷薄霧裊

繞之際，這座莊嚴的寺廟尤其美麗。

普寧寺則以西藏南部喇嘛廟桑耶寺為藍本，因主殿

「大乘之閣」供奉了一座重100公噸、高22米的木雕觀音像而被暱稱為「大佛寺」。觀音像面向南方而立，恍若

透過窗櫺遙望早上到避暑山莊放風箏的遊人、來跑步或

耍太極的晨運客。這個昔日只有王公貴冑才可踏足的地

方，現已成為中國最優美的公園之一。

宮殿區只佔整個山莊的小部分，此外還有許多亭台樓

閣、寺廟屋舍配合周遭山光水色而建，可見當年顯赫一

時的皇室氣派。山莊景色多變，有傳統蘇州式庭園、茂

密的小灌木林和波平如鏡的大小湖泊，以至遼闊的大草

原，還有草原後的山巒。

山莊有小徑通往西北的群山，直登峰頂，從其中一座

山上的「南山積雪」亭遠眺，避暑山莊、承德市的景貌，

以至歷史悠久的寺廟盡入眼簾。遙想當年，康熙皇帝想

必也曾於這裡居高臨下，指點中國山河。

heritage – and the Manchus’ love of hunting – can be tasted in the local cuisine that often uses venison, pheasant and wild boar. Successive royal families hosted marathon hunting parties in the resort’s 560 hectares of grounds, which are mostly spread across steep mountain slopes. The area was enclosed by a 10-kilometre-long wall, which meant their prey had little chance of escape.

The temples of Lion Valley, to the north of the pal-ace’s highlands, reiterated the message that Chengde was not merely a part-time capital, but a microcosmic China that welcomed – and was recognisable to – all its people. Putuozongcheng Temple, for example, was built to resemble Potala Palace, the one-time residence of the Dalai Lama in Lhasa. It balanced roles as a Tibetan “Yellow Hat” Buddhist temple and an elaborate set piece and today retains a majesty that is best seen in the early morning when the valley is softened by a light mist.

Puning Temple – the Temple of Universal Peace – was modelled on Samye Gompa, the lamasery in southern Tibet. It is known as the Big Buddha temple because inside its handsome Mahayana Hall is a 100-tonne, 22-metre-tall wooden statue of Guanyin, the Goddess of Mercy. Guanyin looks south – through carved lattice shutters – and she can probably make out the kite-fliers, speed-walkers and tai-chi practi-tioners who use the resort in the early mornings. This sometime place of privilege and power-broking is one of China’s loveliest public parks.

The Front Palace, with its public halls and pri-vate chambers, occupies just a small section of the resort. The landscape beyond that is studded with pagodas, pavilions, temples and lodges, hinting at the one-time glamour and luxury that was afforded the imperial household. The scenery shifts from a traditional Suzhou-style garden through dense copses and round mirror lakes to a sweeping prairie that then reaches into the mountain zone.

Paths lead into the north-west hills and then up to some peaks. The Snow-capped Southern Moun-tain Pavilion affords a wonderful panorama of the resort, the city and the many historic temples. From here you can picture the whole of China, as Kangxi himself surely must have done.

BURGUNDY AND BORDEAUX are two of France’s most famous wine regions, although they share few common characteristics. The climate, the grapes grown, the farming methods used, and the laws governing production are quite different. Nevertheless, at the highest level, both regions produce some of finest examples of their individual styles.

Burgundy is a region in central France, whose countryside is one of rolling hillsides, small vineyard plots and domaines – farming estates. The climate is continental, moderate-to-cool, and the region is famous for its pinot noir and chardonnay.

Red burgundy is made primarily from the pinot noir grape, a delicate and thin-skinned fruit, which needs the mild climate to flourish. It produces light- to medium-bodied wines that, at their best, are capable of significant aging.

Within the region of Burgundy lies the Côte d’Or, which translates as “the golden slope”, split into two main areas of pinot-noir production. The most famous is the Côte de Nuits in the north. Here, the wines tend to be plush – velvety in texture with complex autumnal aromas and rich, dark cherry flavours.

Further south, in the Côte de Beaune, the pinot is lighter. These

wines are more delicate, with fine tannins and higher acidity. They possess a fragrant bouquet as well as bright strawberry and raspberry flavours.

The Côte de Beaune is particularly well known for making great expressions of chardonnay. Otherwise known as white burgundy, these wines tend to be full-bodied with a creamy texture and characteristics of citrus blossom, white peach and green melon.

Further north, isolated above the Côte de Nuits, lies Chablis, the coolest part of Burgundy. This chilly climate, by comparison, produces wines that are lighter in body and very crisp. These chardonnays have aromas of honeysuckle and flavours of green apple and pear, and an oyster-shell minerality.

Domaine William Fevre Chablis is a benchmark producer. Its wine labelled “Chablis” is a blend of chardonnay grapes from across the region and a good representation of the regional style.

Maison Camille Giroud, Vosne-Romanée is a blend of pinot grapes from within the village boundary of Vosne-Romanée – the spiritual home of red burgundy.

Bordeaux, by the south-western coast, is flat with soft undulations and a maritime climate. The Gironde estuary divides main growing areas. On the left bank lies Médoc, Haut-Médoc and Graves, where reds are predominantly

cabernet sauvignon. On the right bank, merlot is the dominant red. Key areas are Saint-Émilion and Pomerol.Cabernet sauvignon is a full-bodied wine with blackcurrant

and blackberry flavours, with notes of bay leaf and tobacco. Strong tannins give it its structure and capacity to age. Merlot is generally softer and more approachable, with a lavender and violet aroma, silky tannins and soft black plum and mulberry flavours.

Bordeaux’s white wines are made from sauvignon blanc and semillon, in a dry and a sweet style. The dry wines have zesty lemon flavours with herbaceous gooseberry overtones. The sweet wines of Sauternes are thick, syrupy and honeyed, with exotic fruit characteristics such as mango and papaya.

Château Grand-Puy-Lacoste produces one of the more classic examples of Bordeaux red wine. This is refined and elegant in a lighter style, and a perfect introduction.

Château Rieussec Sauternes is one of the great estates, producing intensely concentrated white dessert wines. Look for characters of ripe apricot, honey and vanilla.

噴射飛航於中、港、澳及海外旅行社設有100多個銷售點，各碼頭及

香港國際機場亦設有售票處。乘客也可以在網上或通過手機APP 預訂船票。 TurboJET tickets are available in Mainland China, Hong Kong,

Macau and overseas outlets. Ticketing counters are located

within each ferry terminal and at the HKIA. Passengers can also

reserve tickets online or by mobile APP.

訂船票，並在售票處或自助票務機取票。個人儲

值卡持卡人可享有更多折扣優惠、參加積分獎勵

計劃，並獲得優先提前登船服務。兩款儲值卡

的最低儲值額皆為500港元，於各噴射飛航售票

處發售。 Stored Value Cards – both Standard and

Over my career with the company, there were both achievements and regrettable mistakes. Two years ago, the company acquired First Ferry (Macau). There were different challenges brought by the merging of the businesses. Efforts to constantly raise service standards in response to customers’ needs saw the launch of “Premier Jetfoil” which brings five-star service on deck. While I was fortunate to be selected to join the Premier team, I felt the pressure to deliver the high standards of service required. However, we have received letters of praise and appreciation from customers, which has brought huge encouragement and immense work satisfaction to the team.
