DIRECTIONS FOR ROLLING OUT PIE CRUST SUPPLIES: 3 cups all-purpose flour 1 1/2 cups shortening 6 Tablespoons water, very cold 1 Tablespoon white vinegar 1 egg, beaten Makes 4 single pie crusts or 2 double crusts Preheat the oven to the temperature required for your recipe, usually 350-400 degrees F. Measure flour into a large bowl. Add shortening, broken into small chunks to the flour. Using a pastry cutter or two knives, cut shortening into the flour until the mixture looks like coarse crumbs. Blend the water, vinegar and egg together. Sprinkle wet mixture over dry mixture and blend until the dough is just moist enough to form a ball when lightly pressed together Divide dough into two equal portions, shape each into a flat round disk and wrap in cling film. Roll approximately 2 inches larger than an inverted 9- or 10-inch pie pan to account for shrinkage. Fold the pastry in half or drape around rolling pin; place in the pie pan. Unfold and fit it evenly into the pan. Do not stretch! Trim the overhand to 3/4 inch. Proceed with pie recipe of choice! Place one portion of dough on a lightly floured surface to prevent sticking. The less flour you use, the flakier the dough.
