BONNIE BEEZHOLD, PH.D., DID NOT ENDEAR HERSELF TO HER PARENTS WHEN SHE REBUFFED THE FAMILY DINNER TABLE IN HER EARLY TEENS AND BEGAN BUYING HER OWN FOOD.

“My parents were irritated that I would buy some of my own produce and other food with babysitting money because I wasn’t satisfied with the quality of food at home,” she said.

Beezhold’s lifelong interest in food and nutrition led to a career making others aware about diet and health. Today, she teaches undergraduate and graduate courses in Nutrition at Benedictine.

However, teaching is only part of the equation in molding future dietitians and nutritionists.

“I think mentoring students is critical for their optimal development because it connects teachers to students on a level that can inspire them, even change the course of their

lives,” she said. “It can range from a nominal relationship to a close relationship that lasts beyond the program. I work toward the latter.”

What is her best advice to Nutrition students?

“Get a graduate degree or a certification to be competitive (in the job market),” she said.

And be sure to do your own grocery shopping.

Benedictine partners with the Golden Apple Scholars of Illinois program to inspire, develop and support teacher excellence in Illinois.

The program offers scholarships to high school seniors and first- and second-year college

students who demonstrate the promise and drive to be excellent teachers in high-need schools.

It also provides four years of residential summer institutes, which give students on-site classroom experience as well as mentoring from a Golden Apple teacher.

“Not only do you get additional experiences with students, you get experiences with teaching professionals you wouldn’t ordinarily get the chance to meet. The program expands on the education I’m receiving by providing me with

“Nursing is my second career,” said Raz, a critical care nurse at Loyola University

Medical Center and a 2012 graduate of Benedictine University’s RN to BSN program.

“I started out as a pastry chef. But I always heard that the nursing profession is a rewarding career,

so I looked into it.”

After earning an Associate in Nursing at Triton College, Raz enrolled in Benedictine’s RN to BSN program.

“I found the curriculum flow was easy to manage. The faculty interacts and supports the student’s best interests. The evening classes were very convenient and the cost was very affordable,” he said.

Today, Raz cares for some of Loyola’s most critically ill patients. It is a far cry from mixing crème patisserie or baking a dacquoise.

“It was very overwhelming at first, but I quickly fell in love with the fast-paced Intensive Care Unit setting,” he said.

Raz has recently been admitted to the Doctor of Nursing Practice program at the NorthShore University HealthSystem School of Nurse Anesthesia.

“Earning a bachelor’s degree through Benedictine improved my confidence and leadership,” Raz said.

“I feel more empowered to pursue higher learning.”

Benedictine alumni making wise food choices, especially

in growing field of nutrition

All college students love food, but undecided college majors

may want to try loving it a bit more — especially if it leads to a job. The Bureau of Labor Statistics reports that employment of dietitians and nutritionists is expected to grow 16 percent from 2014 to 2024 (much faster than the average for all occupations).

The Nutrition programs at Benedictine University are designed to help meet the demand for

Major offers another entry into world of

sports, health and fitnessAn emphasis on health and physical

fitness in the United States has created a large number of rewarding

careers in collegiate and professional athletics, strength and conditioning,

personal training, and corporate fitness at community organizations like park districts

or the local YMCA.

Benedictine now offers an Exercise and Sports Studies program that provides students with the knowledge, skills and abilities necessary to work

in diverse health and fitness settings, or enter a master’s level program in Clinical Exercise Physiology.

The Exercise and Sports Studies major includes courses in sports administration, sports psychology, sports law, drug use and prevention, the care of injuries, current issues in health, and a wide range of topics related to health and fitness.
